MEATLOAF RECIPE WITH OATMEAL
This old-fashioned meatloaf with oatmeal is a simple, easy dinner that comes together with just 10 minutes of prep!

Steps:
- Preheat oven to 350°F. Gently combine all ingredients except ketchup in a large bowl. Transfer to a greased loaf pan.
- Bake (uncovered) for about 60 minutes, or until meatloaf reaches an internal temperature of 160°F and juices run clear. Tilt the pan to drain off the grease; spread ketchup on top, and return to the oven for 10 more minutes.
- Let stand 5 minutes before slicing.

This is my mother's recipe. My kids love it. My husband even makes sandwiches out of the leftovers--if there is any.

Steps:
- Preheat oven to 350°F.
- In a large bowl, combine ground beef, bell pepper, Lipton soup mix, egg, garlic salt, pepper, crackers, 1/2 cup ketchup and water.
- Put into a baking pan.
- Bake at 350°F for 1 hour.
- Drain excess fat occasionally during baking.
- During the last 10 minutes of baking time, add the remaining ketchup (add more if you like).

PECAN LOAF

Steps:
- Mix onion, bell pepper, oats, pecans, brown rice, salt, and water.
- Add a little water, not too much, to make a paste consistency.
- Form into a loaf or put in loaf pan.
- Spread 4 tablespoons ketchup on top.
- Bake at 300 degrees Fahrenheit for 1 hour.

- To make the glaze: Mix together 1/3 cup soup, ketchup, brown sugar and 1 1/2 tsp mustard until smooth. Set aside.
- Preheat the oven to 350°F. Line a standard baking sheet with aluminum foil and spray with cooking spray.
- In a stove top pan, saute the diced onions and peppers in a few drizzles of olive oil until softened and translucent around 3 minutes. Season with salt and black pepper to your taste, then set aside to cool slightly.
- While vegetables cook, in a medium mixing bowl, mix together beef, Panko, 3/4 cup soup, buttermilk, eggs, mustard, Worcestershire, barbecue seasoning and pepper. Add cooked peppers and onions. Mix well.
