Steps:
- Slice the top and bottom from each apple and discard. Slice the apples into 1/2-inch circles. Use a biscuit cutter or small melon baller to cut a hole in the center of each to make a "donut."
- Put the chocolate-hazelnut spread and peanut butter in separate pastry bags (or put in separate ziptop bags and snip off a corner).
- Top the apple rings with either the chocolate-hazelnut spread, peanut butter or yogurt. (Pipe the chocolate-hazelnut spread or peanut butter, then spread carefully with a knife or offset spatula; spread the yogurt with a spoon.) Garnish each with a variety of the toppings.
APPLEJACK DONUTS
When I was little, my Dad would do my Mom a favor and run to the local bakery and pick up donuts and pastries for the kids so she wouldn't have to deal with breakfast; did he ever think about the sugar rush? Never mind; the teachers had to deal with that! The bakery he went to served donuts they called applejacks, and I always loved them way more than the chocolate covered cream filled yeast donuts! They also served superb bear claws and apple fritters! This is as close as I can come to their "applejack" recipe. They were always still warm when we got them from Daddy's truck into our stomachs! Yummy breakfast treats for weekends or vacations!

Steps:
- Beat the shortening and brown sugar at medium speed of an electric mixer until blended.
- Add the applesauce and egg; beat well.
- Combine the flour, baking soda, salt, nutmeg and cinnamon.
- Add to the shortening mixture. Beat well.
- Roll the dough to 1/2 inch thickness on a lightly floured surface.
- Cut the dough with a floured 2-1/2 inch doughnut cutter.
- Pour the oil to a depth of 2 inches in a large Dutch oven.
- Heat oil to 375 degrees Fahrenheit.
- Drop in 3 to 4 doughnuts at a time.
- Cook 1-1/2 minutes on each side.
- Drain on paper towels.
- Combine 1/2 cup sugar and 2 teaspoons of cinnamon.
- Roll the doughnuts in cinnamon-sugar mixture.
- Cool on wire racks.

Steps:
- Mix the soft cheese with the honey and set aside. Peel the apples, then slice each through the core into five or six rings, about 1cm thick. Use an apple corer or small round biscuit cutter to stamp out a circle from the middle of each slice, removing the core and creating 'doughnut' shapes. Pat the slices dry using kitchen paper - they should be as dry as possible to help the toppings stick.
- Spread some nut butter over the slices, if using, then top with the sweetened soft cheese. Decorate with the sprinkles and serve.

- Preheat oven to 350ºF.
- Mix flour, sugar, baking soda, salt and 1tbsp matcha powder together and whisk to combine.
- In a separate bowl, mix oil, yogurt, 1/2 cup milk, egg and vanilla together and whisk to combine.
- Mix dry ingredients into wet.
- Transfer batter to a greased donut pan. Bake 8-12 minutes (larger donut pans may need more time).
- Mix together remaining matcha powder and milk with powdered sugar and adjust consistency using powdered sugar or milk until it's smooth and thin.
- While the donuts are still warm, dip them into the glaze and transfer to a baking rack to cool and allow the glaze to set.
- Enjoy!
