1-1/2 cups uncooked elbow macaroni
5 tablespoons butter, divided
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups whole milk
1 cup shredded cheddar cheese
2 ounces cubed Velveeta
2 tablespoons dry bread crumbs

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a saucepan, melt 4 tablespoons butter over medium heat. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Add the cheeses, stirring until cheese is melted. Drain macaroni., Transfer macaroni to a greased 1-1/2-qt. baking dish. Pour cheese sauce over macaroni; mix well. Melt the remaining butter; add the bread crumbs. Sprinkle over top. Bake, uncovered, at 375° for 30 minutes or until heated through and topping is golden brown.

1/2 cup KRAFT Shredded Mozzarella Cheese
1/4 cup KRAFT Shredded Colby & Monterey Jack Cheeses
1/4 cup KRAFT Shredded Cheddar Cheese
1 egg
1/4 cup KRAFT Real Mayo
1/3 cup milk

Steps:

  • Heat oven to 375°F.
  • Prepare Dinner as directed on package. Meanwhile, combine shredded cheeses; set aside. Whisk egg, mayo and milk in separate bowl until blended.
  • Layer half each of the Dinner and cheese mixture in 1-1/2-qt. casserole sprayed with cooking spray. Repeat layers; top with mayo mixture.

1 ounce butter
3/4 ounce flour
3/4 cup milk
1 1/4 pounds cheese, an equal mix of extra sharp white cheddar, Manchego, and Havarti
Salt and freshly ground black pepper
2 pounds macaroni, cooked according to package directions
4 ounces grated Parmesan
2 ounces bread crumbs

Steps:

  • Preheat oven to 400 degrees F.
  • In a small saucepan over medium heat, melt butter and then stir in flour; cook for 1 minute or until lightly golden. Slowly add the milk to the flour mixture, stirring until thickened, and then stir in the 3 cheeses until fully melted. Season with salt and pepper, to taste. Add cooked macaroni and stir to coat evenly. Transfer to a shallow baking dish. Bake for about 45 minutes, until brown and crisp on top.
  • Remove from oven and preheat the broiler. Sprinkle Parmesan and bread crumbs over top. Return to the oven and broil until cheese is bubbly.

This is a macaroni and cheese I first made 3 years ago when I was in California. When I got back to Texas I made it for my mom. This is now her favorite baked macaroni and cheese. She begs me to make it when I come to visit.

2 tablespoons butter
¼ cup finely chopped onion
2 tablespoons all-purpose flour
2 cups milk
¾ teaspoon salt
½ teaspoon dry mustard
¼ teaspoon ground black pepper
1 (8 ounce) package elbow macaroni
2 cups shredded sharp Cheddar cheese
1 (8 ounce) package processed American cheese, cut into strips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a medium saucepan over medium heat. Saute onion for 2 minutes. Stir in flour and cook 1 minute, stirring constantly. Stir in milk, salt, mustard and pepper; cook, stirring frequently, until mixture boils and thickens.
  • Meanwhile, bring a pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
  • To the milk mixture add the Cheddar and American cheeses; stir until cheese melts. Combine macaroni and cheese sauce in a 2 quart baking dish; mix well.
  • Bake in preheated oven for 30 minutes, or until hot and bubbly. Let cool 10 minutes before serving.

1 1/2 pound Kraft Sharp or Mild Cheddar Cheese, divided
1 Tbsp butter
2 cups 1%, 2% or whole milk, more or less
1/3 cup Wondra Flour, more or less
Diced Italian tomatoes (optional)
1 box elbow macaroni
1 cup Italian bread crumbs, more or less(optional)

Steps:

  • Preheat the oven to 350 degrees F. Precut 1 lb. of cheese into cubes, and the remainder of the cheese shred or slice thinly and set aside. Place the butter in saucepan and let it melt. Add the cubes of cheese and milk. You may need to add more milk, depending on the consistency of the sauce and how you like your sauce-(thick or thin). Sift over low to medium heat and add the Wondra flour a little at a time until the sauce thickens. Remove from heat once you reach the desired consistency of your sauce. Drain the diced Italian tomatoes and add to the cheese sauce.
  • Bring water to boil in large pot and add box of macaroni and cook for desired amount of time as specified on the box. Strain the macaroni and place in a large mixing bowl. Add the sauce and mix/blend together.
  • Pour half of the mixer in the baking dish, add half or all* of the cheese (that you set aside earlier) to cover the macaroni and cheese, and pour the rest of the macaroni and cheese mixture on. *You may either place the rest of the cheese that you set aside if you did not use in the middle layer or you may sprinkle on the bread crumbs to make a light topping over the macaroni and cheese.
  • Place in the oven for 30 minutes to 45 minutes to heat thoroughly and serve. Refrigerate the leftovers.

4 tablespoons butter
4 tablespoons flour
1 teaspoon salt
1/4 teaspoon black pepper
2 cups milk
1 cup American cheese, cut into small pieces

Steps:

  • Melt butter, add flour, salt, and pepper, wisk until smooth.
  • Add milk slowly, whisking to blend.
  • Cook until thick and smooth, add cheese and stir until melted.

Many are good, but it was hard to find mom's recipe that I absolutely loved. Through lots of experimentation I think I've finally got it right, if not better....simple and simply delicious.

1 (16 ounce) package elbow macaroni, whole grain or regular
1/2 cup real butter
3 cups 2% low-fat milk
1/4 cup Wondra Flour
4 ounces cream cheese
8 ounces sour cream
1 teaspoon black pepper
10 -12 ounces Velveeta cheese, cut into small cubes
Tabasco sauce

Steps:

  • Prepare macaroni as per pkg. instructions.
  • Melt butter on medium high heat, add Wondra flour, whisk until well blended. Add cream cheese and whisk until creamy, add milk, sour cream and bring to slow boil, add 10-12 oz Velveeta. Stir until all cheese has melted. Add a few drops of Tabasco sauce, to give it a little kick.
  • Add to macaroni and whaala! Perfect mac n cheese you'll love. If you'd like to bake this version, simply place in baking dish, add thin slices of Velveeta or American to top and bake at 375 degree oven until cheese is scorched and bubbly. (About 30 min.).
  • You can add fresh or frozen peas, chunks of ham, sliced cooked brats, brocoli, or anything else your little heart desires to this version of mac n' cheese.

2 eggs
1 1/2 cups whole milk

Steps:

  • Boil macaroni until tender.
  • Put half of macaroni in a 9 x 12 inch baking dish, cover with slices of cheese, add rest of macaroni, cover top of dish with cheese. Mix eggs and milk completely. Pour over mac and cheese. This holds mac and cheese together.

2 (7 1/4 ounce) boxes kraft macaroni & cheese dinner mix, not prepared
1 lb lean ground beef
1 onion, chopped
3 garlic cloves, minced
1 (15 ounce) can tomato sauce
1 (14 1/2 ounce) can diced tomatoes, undrained (I like the petit cut)
1 tablespoon mild chili powder (optional)
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons butter
1/4 cup grated cheddar cheese, to garnish (optional)

Steps:

  • Cook macaroni in boiling salted water until tender; drain.
  • Mix cooked macaroni with butter, stirring well.
  • While macaroni is cooking, cook ground beef, garlic and onion in a large skillet until beef is browned and cooked through.
  • Drain any accumulated fat.
  • Add chili powder, salt, pepper, tomato sauce, diced tomatoes (with their juice), mixing well.
  • Bring meat mixture to a boil, then reduce heat, cover and simmer for 10-15 minutes or until macaroni is done.
  • Mix meat mixture with cooked buttered macaroni (do NOT add any additional milk as package suggests).
  • Sprinkle contents of cheese packets into pasta and stir until blended.
  • Serve garnished with grated cheddar, if desired.
