Steps:
- Grate the zest from the lemon, lime, and orange into a large bowl. Squeeze the juice from half of each piece of fruit into the bowl. Whisk in 1 tablespoon barbeque sauce. Stir in ground beef; mix well. Cover and refrigerate for 10 to 30 minutes.
- Preheat an outdoor grill for high heat, and lightly oil the grate.
- Form meat into patties. Grill with lid open, about 3 minutes per side. Brush each burger with one tablespoon barbeque sauce during grilling, coating both sides. Top burgers with pepperjack cheese and cook until cheese is melted and meat is no longer pink in the center, about 1 additional minute.

BEET BURGER WITH CITRUS-CAPER AIOLI

- Heat a skillet over medium heat and add 2 tablespoons of the oil. Add the onions, season with salt and pepper and saute until slightly golden, about 10 minutes. Set aside to cool.
- Add the brown rice, beets, walnuts, yellow raisins, granulated garlic and cooled onions to a food processor and pulse about 10 times, until the mixture is ground similar to ground beef. Transfer to a bowl and add the eggs, 1 teaspoon salt and some pepper. Mix by hand until uniform, then tightly form into 4 patties.
- Heat a nonstick skillet over medium-high heat and add the remaining 2 tablespoons oil. Season both sides of the patties with salt and pepper. Gently add the patties to the oil and sear on each side until crisp and browned, about 10 minutes a side.
- Place the patties on 2 to 3 Bibb lettuce leaves. Dollop a bit of Citrus-Caper Aioli on top and serve.
- Mix the mayonnaise, capers, honey mustard and orange zest and juice in a bowl. Adjust the seasoning if necessary with salt and pepper.
CITRUS GRILLED TURKEY BREAST

- For the turkey and marinade: Combine the pineapple, Worcestershire, cumin, oregano, garlic powder, onion powder, black pepper, orange zest and juice and lime zest and juice in a large bowl. Add the turkey breast, toss to coat and cover tightly with plastic wrap. (Or pour the marinade into a resealable plastic bag with the turkey breast.) Marinate, refrigerated, for 3 to 4 hours.
- For the rub: Combine the salt, oregano, cumin, onion powder, garlic powder and some black pepper in a small bowl.
- Preheat a grill to 350 degrees F.
- Remove the turkey from the marinade and pat dry with paper towels. Rub the turkey all over with the rub, then lightly oil the skin.
- Place the turkey skin-side down on the grill. Cook until the skin begins to lightly char and crisp, about 10 minutes. Flip the turkey, then cover the grill and cook until the turkey registers 165 degrees F, 40 to 45 minutes more. Loosely tent the turkey with foil and let rest for about 10 minutes before slicing.
- For serving: Serve the sliced turkey on buns with the Sweet-and-Sour Pineapple Marmalade and sliced red onion.
- Whisk the orange juice, vinegar, brown sugar and 2 tablespoons water in a medium saucepan over medium-high heat until the sugar dissolves, about 2 minutes. Add the pineapple, red onion and jalapeno. Bring to a low boil, then reduce the heat to a simmer. Cook, stirring occasionally, until the mixture thickens, 15 to 25 minutes. Season with salt and pepper. Let cool.
BARBECUED HAMBURGERS
When I got married, I asked my Aunt Jean for this recipe. It was her creation and she always hamburgers in this way for family picnics in the summer and the occasional church dish dinner. I like them because they have a great taste and are very moist.

- In a large bowl, combine the saltines, milk, salt and pepper. Crumble beef over mixture and mix well. Shape into 12 patties. CITRUS BBQ CHICKEN

- Put the chicken in a large resealable plastic bag.
- Whisk the ketchup, brown sugar, orange zest and juice, lemon zest and juice, garlic, Dijon, Worcestershire sauce, cumin, smoked paprika, 1 teaspoon salt, and a few grinds of black pepper together in a 4-cup liquid measuring cup (or alternatively a medium bowl) until combined.
- Remove 1 cup of the sauce and add the remaining sauce to the resealable plastic bag with the chicken. Seal and toss the bag to evenly coat the chicken. Marinate the chicken in the refrigerator for 1 hour and up to overnight.
- Meanwhile, add the remaining sauce to a small saucepan. Bring the sauce to a boil over medium-high heat. Reduce the heat to low and simmer until the sauce thickens, about 10 minutes. Reserve reduced sauce for glazing and serving.
- Prepare a grill for medium-high heat.
- Remove the chicken from the marinade and allow any excess marinade to drip off. Arrange the chicken skin-side down on the grill, leaving some space between each. Cook until deep grill marks form and releases easily from the grill, about 4 minutes. Flip the chicken skin-side up. Cover the grill and cook until an instant-read thermometer inserted into the thickest part of each thigh reads 165 degrees F, 20 to 25 minutes more.
- Brush the skin side of the chicken with some of the reduced sauce. Flip the chicken pieces and brush the other side of the chicken with the sauce and continue to cook, sauce-side down, for an additional minute. Flip and grill for 1 minute more. Transfer the chicken to a platter and let rest for 5 minutes.
- Serve the chicken with the remainder of the sauce.

HERB-AND-CITRUS TURKEY BURGERS
A well balanced blend of herbs and citrus make for a wonderful variation on the turkey burger. For those like me who love bold flavors, there may be a temptation to increase the herbs. Don't, as it does not improve the burger, rather it takes the seasonings out of balance. Instead you might try replacing the black pepper with some crushed red pepper. My suggested condiments are fresh tomatoes, grilled red onion slices and some Dijon mustard. Based on a recipe from Cooking Light 2000. WW 4pts per burger.

- Slice off the ends of each grapefruit and place the fruit cut side down on a cutting board. Slice off the peel and pith. Working over a bowl, make a cut on either side of each segment to release it from the membrane into the bowl. Squeeze the remaining juice into a saucepan. Add the vinegar and honey and simmer over medium-high heat until syrupy. Add to the grapefruit sections.
- Meanwhile, preheat a grill pan to medium-high. Add the scallions and cook until slightly charred. Cool and thinly slice. Add the scallions and avocado to the grapefruit segments.
- Preheat a grill pan to medium. In a bowl, combine the pork and onion powder; season with salt. Shape into 4 patties. Grill the patties, turning once, until cooked, about 8 minutes.
- Meanwhile, spread the butter on the rolls and grill until toasted. Place a patty on each roll bottom. Top with the grapefruit-avocado salad and the roll tops.
