These quick and easy microwave potatoes come out perfectly fluffy and tender every time!

1-4 medium russet potatoes
Salt and pepper; butter, Greek yogurt or sour cream; shredded cheese, blue cheese, or feta or goat cheese; crumbled bacon; chopped chives or fresh herbs; hot sauce or sriracha; avocado or guac; salsa or pico de gallo; paprika or other seasonings, etc.

Steps:

  • Scrub the potatoes. Poke each potato 5-6 times with a fork - I do it a few times on each side. Place potatoes directly onto the microwave plate.
  • Microwave on high. The time depends on the number of potatoes and the size of your potatoes. For 1 medium-sized potato, start with 5-6 minutes. For 2 medium-sized potatoes, start with 10-11 minutes microwave time. For 4 potatoes, start with 15-16 minutes in the microwave. When the time is up, get a towel or oven mitt and gently squeeze the sides of the potato. If it gives without resistance and starts to open up, it's ready. If it still seems a bit firm, return to the microwave for another minute at a time until tender.

1 russet potato, washed and scrubbed
1 tablespoon oil
salt, to taste
2 slices bacon
¼ cup shredded cheddar cheese
sour cream, to serve
fresh chive, to serve

Steps:

  • Poke holes in the potato with a fork, then rub with oil and salt.
  • Place the bacon slices on the same plate as the potato, microwave for 7-9 minutes until the bacon is crispy and the potato is tender. Make sure the bacon does not burn.
  • Crumble the bacon after it's cooled down.
  • Slice the potato in half, then use a fork to fluff up the insides.
  • Sprinkle the cheese on top, then microwave for another 30 seconds.
  • Top with sour cream, the crushed bacon bits, and the chives.
  • Enjoy!

1 large russet potato
1 tablespoon butter or margarine
3 tablespoons shredded Cheddar cheese
salt and pepper to taste
3 teaspoons sour cream

Steps:

  • Scrub the potato, and prick several time with the tines of a fork. Place on a plate.
  • Cook on full power in the microwave for 5 minutes. Turn over, and continue to cook for 5 more minutes. When the potato is soft, remove from the microwave, and cut in half lengthwise. Season with salt and pepper, and mash up the inside a little using a fork. Top the open sides with butter and 2 tablespoons of cheese. Return to the microwave, and cook for about 1 minute to melt the cheese.
  • Top with remaining cheese and sour cream, and serve.

3 medium potatoes
2 cups cheddar cheese
6 tablespoons butter
milk

Steps:

  • Peel and thinly slice potatoes.
  • Coat bottom of 2 quart microwave dish with 3 tablespoons of butter.
  • Layer 1/2 of potatoes, 1 cup cheese and 3 tablespoons of butter.
  • Add next layer 1/2 potatoes and top with 1 cup cheese.
  • Salt and pepper to taste.
  • Add a thin layer of milk in bottom of dish, about 1/4".
  • Cover dish with plastic wrap.
  • Microwave on high for 10 minutes.
  • Let sit 5 minutes before serving.

Kosher salt and freshly ground black pepper
1 tablespoon unsalted butter

Steps:

  • Poke the potato 4 to 5 times on each side with a fork. Wet a clean sheet of paper towel with water and wring out any excess moisture. Wrap the damp paper towel around the potato and place on a microwave-safe plate. Microwave on high for 5 minutes. Remove the paper towel and flip the potato over.
  • Drizzle the potato with olive oil and sprinkle with salt and pepper. Microwave on high, uncovered, 3 minutes more (see Cook's Note). Use a fork to test for doneness. If the potato is not done, cook in 1-minute intervals until the fork can easily pierce the flesh. Serve with the butter and more salt and pepper.
