AUTHENTIC CINCINNATI CHILI
This was handed down to me by Mom, a Cincinnati native. Skimming the fat makes this a healthier version than most, and gives it the right consistency. I like mine 4-way, with spaghetti, raw chopped onions, grated mild cheddar, and oyster crackers!

Steps:
- Place the ground beef in a large pan, cover with about 1 quart of cold water, and bring to a boil, stirring and breaking up the beef with a fork to a fine texture. Slowly boil until the meat is thoroughly cooked, about 30 minutes, then remove from heat and refrigerate in the pan overnight.
- The next day, skim the solid fat from the top of the pan, and discard the fat. Place the beef mixture over medium heat, and stir in the onions, tomato sauce, vinegar, Worcestershire sauce, garlic, chocolate, chili powder, salt, cumin, cinnamon, cayenne pepper, cloves, allspice berries, and bay leaf. Bring to a boil, reduce heat to a simmer, and cook, stirring occasionally, for 3 hours. Add water if necessary to prevent the chili from burning.

- Spread cream cheese on bottom of casserole dish.
- Sprinkle diced onions (optional).
- Pour Skyline chili over onions (opt.) and cream cheese.
- Cover with cheddar cheese.
- Conventional oven: Heat at 350 degrees until cheese is bubbling but not brown, about 10 minutes.
- Microwave oven: Heat on high for 2 minutes or until cheese is melted.
- Serve warm with Corn chips or Fritos corn chips.

- Preheat oven to 350°F In small saucepan over moderate heat, warm chili. Spread cream cheese evenly on bottom of 9- x 13-inch glass casserole dish. Spread chili on top of cream cheese. Sprinkle with diced onions, then shredded cheese. Bake until cheese is completely melted, 10 to 15 minutes. If desired, add additional onions, lettuce, tomatoes, and sour cream. Serve with chips. Cook's note: This dip can also be cooked in the microwave. Prepare dip in 9- x 13-inch microwave-safe dish then microwave on high until cheese is melted, about 2 minutes. Let stand 5 to 10 minutes before serving.
CINCINNATI SUPER-BOWL DIP
Cincinnati Chili is available in stores or online. The top brands are Skyline, Gold Star and Dixie. Dixie is the superior choice as far as I'm concerned, ("Cincinnati chili for the Southern palate," is their slogan). Use the type with no beans unless you like dip with beans in it. There are also a couple of clone brands (store brands) of Cincinnati chili now available. Also, if you want to make your own, here's a recipe that you'll love: Recipe #133250. I invented this dip recipe and it's really caught on in my neighborhood. Serve it with torn-off chunks of baguette bread or, with nacho or tortilla chips. You can even use this stuff as a unique hot dog topping for something different! Enjoy!

- In a large skillet or Dutch oven, whisk together water and tomato paste over medium-high heat.
- Add the raw ground beef to the mixture by breaking it apart and crumbling it with your fingers.
- Add in all of the other ingredients, and stir to combine. Bring it to a boil and reduce the heat to a low simmer, cover the pot and let simmer for 2 hours, stirring occasionally.
- Remove the chili from the stove, and cool. Transfer the covered pot to the refrigerator, and chill overnight.
- The next day, skim the grease from the top of the chili, before warming it to serve.

- Skyline Chili Dip. This might be the most iconic Cincinnati food appetizer ever. Nearly every Super Bowl party has some version of this dish. It’s easy to make.
- Loaded Skyline Dip. Speaking of making this dish your own, that’s what Karen at Soup Addict did with her Loaded Skyline Dip recipe. While most people serve their dip with regular tortillas, Karen went a step further and used Frito’s Scoops.
- Meatballs with Montgomery Inn Sauce. Montgomery Inn is a Cincinnati tradition like no other. Presidents and celebrities make special stops to get a taste of Montgomery Inn.

- Heat the chili in a small sauce pot over medium heat until steam escapes when you take a spoonful and hold it up. Drain off as much grease as possible. Set aside to cool a bit while you prepare the rest of the ingredients. (If using frozen, cooking according to package directions, then drain off any grease that rises to the surface. Set aside to cool.)

- Heat your broiler on low setting with the rack in the upper third of the oven. Line a large sheet pan with parchment paper and spread the tortilla chips evenly on top of the paper.
- In a large non-stick skillet over medium-high heat, brown the ground sirloin and onion. Add all the seasonings, tomato sauce, worcestershire sauce and hot sauce. Stir well to combine and simmer for 8 - 10 minutes.
- Top the corn chips with the Cincinnati-style beef chili. Top with the kidney beans. Sprinkle the shredded cheese evenly over the top.
