MOLASSES CRINKLES
We make these every year for Christmas and are always a sure-to-please treat.

Steps:
- Cream the shortening and the brown sugar. Stir in the egg and molasses and mix well.
- Combine the flour, baking soda, salt, cloves, cinnamon, and ginger. Add the flour mixture to the shortening mixture and mix well. Cover and chill dough for at least 2 to 3 hours.
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- Roll dough into balls the size of large walnuts. Roll balls in sugar and place 3 inches apart on the prepared baking sheets. Bake at 350 degrees F (175 degrees C) for 10 to 12 minutes. Let cool for one minute before transferring to a wire rack to continue cooling.

MOLASSES CRINKLES (COOKIES)
My good friend Mardi made these during our Operation Baking Girls 'baking day', to ship overseas to our chosen soldier. These are very tasty, remind me of ginger snaps somewhat. Thin and crispy, perfect for fall and winter baking.

Steps:
- Whisk together flour, baking soda, cinnamon, ginger, allspice, cloves, pepper, and salt in a bowl until combined. Set aside.
- Beat together shortening, butter, and brown sugar in a large bowl with an electric mixer at medium-high speed until pale and fluffy, about 3 minutes in a stand mixer (preferably fitted with a paddle attachment) or 6 minutes with a handheld mixer.
- Add egg and molasses, beating until combined.
- Reduce speed to low, then mix in flour mixture (1 cup at a time, scrape down) until combined.
- Put oven racks in upper and lower thirds of oven and preheat oven to 375 degrees F.
- Roll 1 heaping teaspoon of dough into a 1-inch ball WITH WET HANDS, then dip 1 end of the the ball in granulated sugar.
- Make more cookies in the same manner, arranging them, sugar side up, 2 inches apart on 2 ungreased baking sheets.
- Bake cookies, switching position of sheets halfway through baking, until undersides are golden brown, 10 - 12 minutes total.
- Cool cookies on sheets 1 minute, then remove from baking sheets and transfer to racks to cool completely.

MOLASSES CRINKLES
Super soft, chewy and fresh tasting Molasses cookies. I always prefer to under bake cookies so they're soft but if you prefer a crisper version, just add a few minutes to the baking time

Steps:
- Cream together butter and sugars. Add egg, vanilla and molasses and continue beating until incorporated.
- Stir dry ingredients together in a separate bowl; then add to creamed mixture. Mix together. The dough will be soft; add a little extra flour if you like. Watch the video for tips on this: https://www.youtube.com/watch?v=rM21ykIsqUA.
- Roll the cookie dough into one inch balls. Roll the balls in additional sugar and place on baking sheet. Bake at 375 degrees for 8-10 minutes.
- Let cool on the baking sheet for a couple minutes and remove to wire rack to continue cooling.

Steps:
- Heat oven to 375*.
- Mix brown sugar, shortening, egg, and molasses in a bowl.
- Mix in remaining ingredients except granulated sugar.
- Shape dough by rounded teaspoonfuls into balls, dip in granulated sugar.
- Place balls, sugared sides up, about 3" apart on greased cookie sheet.
- Bake just until set, 10 to 12 mins.
- Immediately remove from cookie sheet.
- Enjoy!

MOLASSES KRACKLE COOKIES
Steps:
- Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
- In a stand mixer fitted with the paddle attachment, cream together the sugar, shortening and butter until light and fluffy. Add the molasses and egg, and mix to combine.
- In a separate bowl, mix together the flour, baking soda, cloves, ginger and salt. With the mixer set to low speed, add the dry ingredients to the sugar mixture, and mix until combined. Chill the dough for 1 hour.
- Use a 2-tablespoon cookie scoop to portion the dough, and then roll the portions into balls. Then roll in the sanding sugar and place on the prepared baking sheet. Bake for 10 to 12 minutes.
MOLASSES CRINKLES
The zing of ginger and the sweetness of molasses combine in perfect proportions in this cookie, sent to us by Jane Booth Vollers of Chester, Connecticut. Her grandmother, Helen Dougherty, made batches and batches of them every holiday season.

- 2. Chill dough. Then roll into large walnut size balls. Dip tops in granulated sugar. Place sugar side up on a lightly greased cookie sheet.
