- Combine the half-and-half, ¼ cup of the sugar, vanilla, salt, and zest in a saucepan. Bring to a simmer and stir until the sugar is dissolved. Remove from heat.
- Meanwhile, beat the egg yolks and remaining ¼ cup of sugar in a bowl until pale and frothy. Very slowly, add the warm half-and-half mixture to the egg mixture, whisking constantly.
- Once everything is incorporated, return the mixture to the saucepan and cook over medium-low heat, stirring CONSTANTLY, until the custard is thickened enough to coat the back of a spoon. This will take anywhere between 5-10 minutes. Don’t rush it – you don’t want to cook this too quickly or at too high a heat or you’ll scramble the eggs.
- Remove the custard from the heat and pour it through a fine-mesh strainer into a large bowl. If using the food coloring to amp up the orange hue, stir in a drop or two now. This is totally optional.

- Crush the Oreos in a food processor until fine and crumbly. Melt 7 tablespoons of butter. Add the melted butter to the crushed Oreos and stir to combine. Press the mixture into a 9×13 pan. Place the pan in the refrigerator or freezer to set the crust.
- Take the ice cream out of the freezer so it starts to soften. (I do NOT recommend over softening the ice cream in the microwave because in my experience, it did not refreeze as well.) In a medium saucepan, melt 8 tablespoons butter, chocolate chips, evaporated milk, and powdered sugar. Stir continuously until the mixture boils. Let the mixture boil for 8 minutes, stirring continuously. Remove from heat and let cool slightly.
- Pour the fudge sauce over the crust. Allow to rest for a few minutes so the fudge sauce continues to cool. Scoop the softened ice cream over the crust and spread or press gently to create an even top layer. It’s a little messy – that’s ok. It doesn’t have to be perfectly smooth. Freeze again for a few hours or until solid. When you’re ready to serve, let the pan sit out for 10 minutes so it softens. This makes it easier to cut and eat.

- For the Cake Heat the oven to 350F. Grease a 9”x13” metal cake pan (Don’t use glass, because you want the cake to have straight sides) Line the bottom of the pan with parchment, and spray lightly. Set aside. Combine cake mix and the rest of the cake ingredients in a large bowl. With a hand mixer, mix on low speed for about 30 seconds. Scrape the bowl. Mix on medium speed for 2 minutes, scraping bowl as necessary. Pour into the prepared pan and smooth the batter. Bake for 22-25 minutes or until cake springs back when pressed lightly and the cake starts to shrink away from the sides of the pan. Remove to a rack to cool for 10 minutes.
- To Make the Fudge Sauce Combine all ingredients except vanilla in a heavy-bottomed saucepan. Heat on medium heat, stirring constantly until all the chocolate has melted. Stir in the vanilla after you have removed the pan from the stove. This way the vanilla will not evaporate. Keep warm (or reheat) for serving. Makes a generous 2 cups of sauce.
- To Assemble Level the top of the cake if necessary with a knife. You want the cake pieces to have the same thickness so it looks uniform when served. Carefully slice the cake in half horizontally. Leave the halves in place. Each half should be about 3/4 inch thick. Cut the cake in half, short-wise. You will end up with 4 rectangles of cake, each about 9” x 6”. Set half the cake aside (for another use or to repeat the assembly process depending on how much hot fudge cake you want) Spread 2 long, overlapping sheets of plastic wrap on the counter. Place the bottom rectangle of cake on the wrap. Peel off the cardboard from around the ice cream.

- NOTE: 8-inch springform pans are best for this recipe so that you can easily remove the cake once it’s been assembled. If you do not have a springform pan, line your pan with clear wrap before adding your parchment paper and cake board. You can use the clear warp to lift your cake out of the pan once it’s assembled and frozen. You want to make your cake layers in the same pan you’ll use for layering the ice cream and cake together so that they cake layers fit in the final pan you use for layering.
- 1. Once the cake has cooled, make the ice cream. Combine cream cheese, sugar, milk and vanilla together in the bowl of a stand mixer, or with a hand mixer. Mix until completely combined.
- 1. Line the sides of an 8-inch springform pan with parchment paper. The parchment paper should stick up above the top edge of the pan, since the cake will probably be a little taller than your pan. If you want, put a cardboard cake circle in the bottom of the pan.
