1 tablespoon vegetable oil, or as needed

Steps:

  • Mix mashed potatoes, egg, flour, and salt together in a bowl.
  • Heat a thin layer of vegetable oil in a frying pan. Drop large spoonfuls of the potato mixture into the frying pan. Flatten into a patties as you flip; cook until browned on both sides, 6 to 7 minutes per cake. Repeat with remaining potato mixture.

These plump little cakes -- grated potatoes with herbs, plus a red onion crown -- are baked in a muffin tin until crisp on the outside and tender on the inside. They can be served with broiled or grilled meats and are also delicious served with eggs for breakfast or brunch. So make some extras; you'll be glad there are leftovers.

2 tablespoons unsalted butter, room temperature, plus more for tin
Coarse salt and freshly ground pepper
3 teaspoons packed dark-brown sugar
3 teaspoons balsamic vinegar
3 teaspoons red-wine vinegar
1 1/2 teaspoons finely chopped fresh rosemary, plus tops of 6 sprigs
1 small red onion, sliced into six 1/4-inch thick rounds
2 medium Yukon Gold potatoes (about 1 pound), scrubbed
1 large egg yolk, lightly beaten

Steps:

  • Preheat oven to 400 degrees. Generously butter six cups of a large (6-cup capacity) muffin tin. Sprinkle each cup with salt, pepper, and 1/2 teaspoon sugar; drizzle with 1/2 teaspoon each balsamic and red-wine vinegar. Add a rosemary top to each cup; cover with an onion slice. Set aside.
  • Using a mandoline, slice potatoes into matchsticks. In a medium bowl, toss potatoes with chopped rosemary and egg yolk; season with salt and pepper. Divide among cups; dot each with butter.
  • Bake until potatoes are tender and edges are browned, about 30 minutes. Run a thin knife around inside of cups to loosen; invert cakes, and serve.

2 teaspoons minced peeled fresh ginger
3/4 teaspoon salt
1/4 teaspoon ground black pepper
1 large egg
4 teaspoons plus 1 tablespoon oriental sesame oil
3 tablespoons sesame seeds
1 tablespoon canola oil

Steps:

  • Cook potatoes in large saucepan of boiling salted water until tender when pierced with knife, about 40 minutes. Drain. Cool slightly. Peel potatoes. Cut potatoes into large chunks and place in medium bowl. Add 1/2 cup green onions, 1/4 cup cilantro, 2 garlic cloves, 2 teaspoons ginger, 3/4 teaspoon salt, and 1/4 teaspoon pepper; mash potatoes until well blended. Mix in egg. Form potato mixture into eight 2 3/4-inch-diameter patties, each about 3/4 inch thick. Place potato cakes on platter. (Cakes can be prepared 6 hours ahead. Cover with plastic wrap and refrigerate.)
  • Drizzle 1/2 teaspoon oriental sesame oil over both sides of each potato cake. Sprinkle both sides of potato cakes with sesame seeds. Heat canola oil and remaining 1 tablespoon sesame oil in large nonstick skillet over medium-high heat. Working in 2 batches, add potato cakes to skillet and cook until golden brown, about 3 minutes per side.
  • Divide potato cakes among 4 plates. Sprinkle with remaining 2 tablespoons cilantro and serve.

2 lbs russet potatoes, peeled and quartered
1 cup milk
1 cup packed chopped green onion, bottoms and tops
1/2 cup unsalted butter, melted

Steps:

  • Cook potatoes in a large pot of boiling salted water until tender; drain and return to pot.
  • Cook over low heat until any water from potatoes evaporates.
  • Place a kitchen towel across the top of pot, cover pot with lid and remove from heat; let stand 10 minutes.
  • Mash hot potatoes in pot; set aside.
  • Butter large serving bowl.
  • Bring milk to simmer in medium saucepan.
  • Add chopped green onion and simmer 5 minutes.
  • Add milk mixture and half of melted butter to mashed potatoes and mix well; season to taste with salt and pepper.
  • Spoon potatoes into prepared serving bowl; using back of spoon, make a well in center of potatoes.
  • Pour remaining butter into well and serve.

1 tablespoon olive oil
1 clove garlic, minced
½ cup milk
3 tablespoons butter

⅓ cup diced green onions

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Return potatoes to the pot and let sit, uncovered, for about 5 minutes.
  • Meanwhile, heat olive oil in a small saucepan over medium-low heat. Add garlic and saute just until it becomes fragrant, 1 to 2 minutes.

2 1/2 cups Simply Potatoes Traditional Mashed Potatoes
2 egg whites, slightly beaten
4 green onions, thinly sliced
3 tablespoons flour
1 tablespoon vegetable oil

Steps:

  • Prepare mashed potatoes according to package directions. Refrigerate for at least 4 hrs, or overnight before using.
  • In medium bowl combine potatoes, egg white, green onions and flour.
  • Meanwhile, heat oil in large skillet over medium high heat.
  • Drop1/4 cup potato mixture into skillet and press flat with spatula.
  • Cook 3-5 minutes, until golden brown. Flip and cook the other side, 3-5 minutes, until golden brown.
  • Keep warm in 250 F degree oven until all cakes have been made. Serve hot.

My mother often made this recipe and probably grew up with it in the Appalachian area of Tennessee. She usually served it on Monday, making use of leftover mashed potatoes from Sunday dinner. We used to eat this topped with brown gravy.

2 tablespoons butter
2 eggs
1-1/2 cups mashed potatoes
1/4 cups all-purpose flour
1/4 teaspoon salt

Dash hot pepper sauce, optional
1 tablespoon water

Steps:

  • In a large skillet, saute onion in butter until tender. Remove from the heat. In a large bowl, lightly beat one egg. Add the onion, potatoes, flour, salt, pepper and hot pepper sauce if desired. , Shape into four to six patties; place on a greased baking sheet. Lightly beat remaining egg; stir in water. Brush over potato cakes. Bake at 375° for 20-25 minutes or until heated through.

1 1/4 pounds russet potatoes, peeled, cut into 3/4-inch cubes
1/2 cup whole milk
2 tablespoons (1/4 stick) butter
1 15-ounce can butter beans, drained, coarsely mashed
4 green onions, chopped
1 1/2 cups panko (Japanese breadcrumbs) or fresh breadcrumbs
Extra-virgin olive oil (for frying)

Steps:

  • Cook potatoes in large pot of boiling salted water until tender, about 10 minutes. Drain and return to pot; stir over medium heat until dry, about 1 minute. Add milk and butter; mash. Mix in mashed beans and green onions. Season with salt and pepper; cool 15 minutes.
  • Place panko in large bowl. Drop 1/4 cupfuls potato mixture into panko; turn to coat. Coat bottom of 2 large nonstick skillets with oil; heat over medium heat. Divide potato cakes between skillets. Using spatula, flatten each potato cake to 2-inch round. Fry until golden, about 5 minutes per side.
