- Preheat oven to 425 degrees with the oven rack in the upper third. Line a baking sheet with parchment paper.
- In a small mixing bowl, combine the dijon mustard, honey and mayonnaise. Set aside.
- Using a meat mallet (or a metal soup ladle), lightly pound the chicken until it is an even thickness. (This will make the chicken cook evenly, and help the sauce and panko topping adhere without falling off.)
- Put the chicken on the parchment lined baking sheet. Season the chicken with salt and pepper, and top with the honey mustard sauce. Then top with enough panko bread crumbs to cover the top of the chicken. Drizzle the panko bread crumbs with olive oil (to help them get brown and crispy in the oven).
- Bake in the oven for about 20 minutes, until the chicken reaches an internal temperature of 165 degrees. If the bread crumbs didn't get golden brown enough, you can turn the oven on broil and let it toast the topping for about 1-2 minutes. Really watch it so the chicken doesn't get burnt!
- Let rest for 2 minutes, then serve warm.
- Also, not necessary, but I often double the honey mustard sauce so I can serve it on the side along with the baked chicken as a dipping sauce. So good!

- Position a rack in the center of the oven and preheat the oven to 350 degrees F.
- Place the garlic, thyme, salt, and pepper in a food processor and pulse until the garlic is finely minced. Add in the panko, lemon zest, olive oil, and butter and continue to pulse a few times until the breadcrumbs are moistened. Pour the breadcrumb mixture onto a large plate. In a shallow bowl, whisk together the mustard, honey and chicken broth.
- Pat the chicken thighs dry with a paper towl. Sprinkle with a little bit of salt and pepper. Dip each piece into the mustard mixture to coat on all side, then place skin-side down only in the crumb mixture, pressing gently to make the crumbs stick. Place the chicken on a sheet pan crumb-side up. Press any remaining crumbs onto the chicken pieces. At this point honey mustard chicken can covered with plastic wrap and refrigerated until ready to bake.
- Bake the chicken for 40 minutes. Raise the oven temperature to 400 degrees F and continue to bake for an additional 10 minutes until the crumbs are browned and the chicken is cooked through. Serve warm.

- Place a 1-gallon resealable plastic bag in a large bowl, open up the bag and roll down the sides. Add the chicken thighs to the bag. Then add the garlic, shallots, vermouth, 1/2 cup olive oil, 1/4 cup of the Dijon, lemon juice, thyme, crushed red pepper and 2 teaspoons salt. Close the bag tightly, squeezing out any excess air. Use your hands (on the outside of the bag) to mix all the ingredients together, making sure to completely coat the chicken in the marinade. Place the bag back in the bowl and refrigerate for 2 hours.
- Preheat the oven to 425 degrees F. Remove the marinated chicken from the refrigerator and allow it to come to room temperature while you roast the vegetables.
- Slice the leeks into 1/2-inch rounds and place in a bowl of water to remove any dirt. Drain and dry with paper towels.
- To a 9-by-12-by-3-inch baking dish, add the cleaned leeks, potatoes, red onions, 1 tablespoon olive oil and a generous sprinkle of salt. Toss together so everything is evenly coated. Roast for 35 minutes, or until the vegetables are tender and browned in spots but the potatoes have not split. Remove from the oven and set aside until the chicken is ready to add to the baking dish.
- While the vegetables are roasting, use to tongs to remove the chicken from the marinade to a baking sheet, making sure to wipe any sliced shallots or garlic back into the marinade. Next, set a large strainer over a large bowl and strain the marinade; reserve the liquid and solids.
- Sprinkle the chicken all over with salt. Heat 1 tablespoon olive oil and 1 tablespoon of the butter in a 12-inch skillet over medium-high heat. Sear the chicken on both sides, 3 minutes per side; work in batches if necessary, adding more oil and butter as needed. Remove the chicken to a clean baking sheet and reserve. Degrease the saute pan, wiping out any dark bits, and then melt 1 tablespoon butter over medium heat. Add all the solids from the marinade; saute until the shallots have just begun to soften, 2 to 3 minutes. Stir in the flour until completely incorporated, and then stir in the reserved marinade liquid and the chicken stock. Bring to a boil and cook for 2 minutes; for food safety reasons, it is important that the mixture comes to a full boil for a couple minutes.
- Pour the sauteed shallot mixture evenly over the roasted vegetables in the baking dish. Place the chicken pieces on top and return to the oven for 10 to 15 minutes, until the chicken is almost cooked through (about 150 degrees F).
- Meanwhile, in a small bowl, mix together the breadcrumbs, tarragon, crushed sea salt and melted butter.
- Remove the chicken from the oven, slather with the remaining 1/4 cup Dijon mustard, and top with the breadcrumb mixture. Return to the oven for an additional 12 minutes, until the chicken has finished cooking and the breadcrumbs have browned on top. Serve immediately.

- In a large skillet or Dutch oven, heat 1 tablespoon coconut oil over medium-high heat. Add the chicken, sprinkle with ¼ teaspoon salt, and saute until golden brown and crispy, about 7 minutes. Flip the chicken and saute until the other side browned, crispy, and the chicken is cooked through, about 5 minutes more.
- Remove the cooked chicken from the pan. Turn heat down to medium, adding 1 tablespoon of coconut oil, and the onions. Sprinkle with ¼ teaspoon salt, and saute, stirring frequently, until the onions are soft and slightly caramelized, about 5 minutes. If the pan starts to dry out or the onions are browning too quickly turn the heat down and add a splash of water to the pan.
- Remove the onions from the pan. Over medium heat, add the asparagus, snap peas, ½ teaspoon salt, and ¼ cup water to the pan. Saute, stirring frequently until the vegetables are crisp-tender, about 3 minutes. You want the veggies to stay green and slightly crunchy, so be careful not to overcook them.
- Add the chicken and onions back to the pan, then stir in the honey and mustard. The chicken and veggies should be well coated in the honey-mustard sauce. If you want the mixture a little saucier, add more water. Taste, adding additional salt and pepper if you like.
- 5. Sprinkle with green onions and serve hot.

- In a large, shallow dish, combine the honey, mustard, garlic, oil and salt to taste (not too much salt if serving with bacon as the bacon will add a salty flavour when served). Coat chicken evenly in the sauce. Set aside.
- Heat a nonstick pan (or skillet) over medium heat. Fry bacon until crispy; transfer to a plate. To the same pan, sear chicken fillets on each side in the oil left over from the bacon until just beginning to brown (about 3 minutes per side -- not completely cooked through as we will finish them in the sauce).
- Add any remaining honey mustard sauce into the pan along with the cream and milk. Bring to a simmer while stirring occasionally to mix the favours through the sauce (about 3 minutes), until the chicken is cooked through. Transfer the chicken to a warm plate.

- Preheat oven to 350F. Move rack to middle position.
- Season chicken with salt and pepper. Heat the oil in a large skillet.
- When the oil is hot, add the chicken to the skillet skin-down. Cook for 8-10 minutes then flip it and cook it for an additional 4 minutes. Remove chicken from pan and set aside.

- Place the chicken in a bowl. Add the buttermilk, salt, pepper and garlic salt. Mix together, cover and place in the fridge to marinade for at least 1 hour (up to over night)
- Preheat the oven to a low heat (to keep cooked chicken warm). Heat a large pan of vegetable oil (or preheat your deep fat fryer) until hot (you can test by dropping a small cube of bread in there, if it rises immediately to the top and starts to bubble rapidly, it's hot enough). You'll need at least 1 litre (4 cups) of oil - but make sure your pan is no more than one third full.
- Mix together the crispy coating ingredients in a small bowl. Take the chicken out of the fridge. Lift a piece from the buttermilk and allow the excess to drip off. Dredge the chicken in the crispy coating mixture - ensuring it's fully covered. Place on a tray and repeat until all of the chicken is coated.
- Once the oil is hot enough, add in 5 or 6 of the chicken tenders. You can add more or less depending on the size of your pan, just be sure not to overcrowd the chicken. Cook for 3-5 minutes until golden brown and cooked in the middle. You can check this by cutting open a piece of chicken, if it's no longer pink in the middle, it's cooked.
- Place on a tray in the oven to keep warm whilst you cook the rest of the chicken.
- Make the coleslaw by using a mandoline to julienne the cabbage and carrot (or you can slice thinly by hand). Place in a bowl with the mayonnaise, mustard, honey, lemon juice and black pepper. Stir together, then cover and refrigerate until needed.
- Now it's time to assemble. First, arrange the chicken tenders into four piles and place the gouda on top. Grill or place into a hot oven for a couple of minutes until just melted.
- Place the bottom of the brioche buns on four plates. Top with the lettuce leaves, followed by the cheesy chicken pieces.
- Spoon on the coleslaw, then sprinkle on the red onion slices and jalapeno slices. Place tops of the buns on top and serve.

- Cut the chicken breast into strips, quite thinly, add some rock salt, black pepper and the flour to a bowl - coat the chicken. Set aside.
- Finely slice the ginger, cut the chilli into thin strips and remove the seeds.
- Get a wok and heat your Rapeseed/ Sunflower oil. You'll want a good amount to deep fry the chicken.
- Meanwhile, juice the lemon into a cup or bowl, add the chilli dipping sauce, soy sauce, water and cornflower and stir together. Leave to one side for now.
- Fry the chicken in batches for a few minutes in the hot oil until golden brown and remove to drain on paper towels. Repeat until all the chicken is looking ace!
- Discard all but about a tablespoon of the oil from the wok and gently fry the ginger and sliced chilli for a minute or so.
- Add the honey to the wok and stir whilst it is bubbling away for another minute. Then add the lemon juice, dipping sauce, soy sauce, water and cornflower. Keep stirring and bring to the boil, the sauce will thicken.
- Add the chicken to the wok to heat through for a few minutes, toss in the sauce to coat.
- Slice the spring onions into fancy diagonals and throw in the wok for the last minute - serve with rice. Boooooom!!

- Preheat oven to 425F. Pour melted butter in the bottom of a large baking sheet and set aside.
- In a shallow bowl, combine 1 teaspoon salt, 1/2 teaspoon pepper, and flour. Dredge chicken in flour mixture, shaking off excess.

CRISPY HONEY MUSTARD CHICKEN

- At least 6-8 hours before cooking, mix together beer, kosher salt, and honey until well combined. In a large enough dish, put in chicken breasts and beer brine making sure chicken is completely covered and submerged.
- When ready to start cooking, preheat oven to 375º F and put panko bread crumbs, salt, and pepper in a dish you can use for dredging.
- In a small bowl, mix together Dijon mustard and honey until well incorporated.
- Take chicken out of brine and pat dry with paper towels.
- Using a brush spread on the honey mustard mixture on the bottoms of the chicken breasts and place those mustard side down into the bread crumb mixture making sure to evenly coat all surface area.
- Brush the other side with honey mustard mixture and turn over into the bread crumb mixtures making sure to evenly coast all surface areas.
- Once both chicken breasts are completely coated put in a roasting pan with a rack, place in the oven, and cook for 1 hour or until internal temperature is 160º F.
- Pull out of oven and let sit for 5-10 minutes while the juices redistribute throughout the meat.
