1 package (9 oz) refrigerated linguine
1 lb uncooked large shrimp, peeled (tail shells removed), deveined
1/4 cup dry white wine or Progresso™ reduced-sodium chicken broth
1/3 cup reduced-fat garlic-and-herbs spreadable cheese (from 4-oz container)
1/2 cup fat-free (skim) milk
3 cloves garlic, finely chopped
1/2 teaspoon salt
4 1/2 teaspoons chopped fresh or 1 1/2 teaspoons dried oregano leaves
Fresh oregano sprigs, if desired

Steps:

  • In 5- to 6-quart Dutch oven, heat 3 quarts water to boiling; add linguine and shrimp. Cook 3 to 4 minutes or until linguine is tender and shrimp are pink. Drain and return to Dutch oven; cover to keep warm.
  • Meanwhile, in large nonstick skillet, heat wine, cheese, milk, garlic and salt to boiling over medium-high heat. Reduce heat; simmer 2 minutes, stirring constantly, or until slightly thickened.
  • Add linguine and shrimp to sauce in skillet; toss to coat. Stir in chopped oregano just before serving. Garnish with oregano sprigs.

4 oz fettuccine pasta
3/4 lb raw shrimp, peeled, deveined and tails removed
1 teaspoon kosher salt
1 teaspoon freshly ground pepper
2 tablespoon flour
1 tablespoon olive oil
1 tablespoon butter
1/2 cup heavy cream
1 1/4 cups low-sodium chicken broth
1/2 teaspoon cajun seasoning

Steps:

  • Cook pasta according to package directions. Season shrimp with salt, pepper, and toss to combine. Sprinkle 1 tablespoon flour over the shrimp, and toss to coat the shrimp. Sprinkle 1 more tablespoon flour and toss to evenly coat the shrimp.
  • Melt butter and olive oil in a large skillet over medium high heat. When hot, add the shrimp in a single layer and cook on each side, flipping once, until golden brown, approximately 2-3 minutes per side. Remove to plate.
  • Pour the chicken broth into the skillet and cook for about 5 minutes, whisking the bottom of the pan to deglaze. Reduce heat to medium and pour in cream, whisking constantly. Cook sauce over medium heat until bubbly and the cream starts to thicken the mixture, about 5 minutes.
  • Taste the sauce and add seasonings as desired (salt, pepper, cajun seasonings, etc.) Add the drained pasta and shrimp to the sauce, and stir to combine.

1 cup milk
1/2 cup shredded Parmesan cheese (2 oz)
2 cloves garlic, minced
2 tablespoons olive oil
1 1/2 lb uncooked peeled deveined large shrimp, tails peeled
1 package (8 oz) sliced fresh mushrooms (3 cups)
4 medium green onions, chopped (1/4 cup)
1/4 to 1/2 teaspoon crushed red pepper flakes
1/2 cup chopped fresh parsley
Salt and pepper to taste, if desired
1/2 cup shredded Parmesan cheese (2 oz), if desired

Steps:

  • In 5- to 6-quart Dutch oven, cook linguine as directed on package. Drain well; return to Dutch oven and cover to keep warm.
  • Meanwhile, in blender, place clam chowder, milk, 1/2 cup Parmesan cheese and the garlic; blend on medium speed until mixture is smooth. Set aside.
  • In 12-inch nonstick skillet or wok, heat oil over medium-high heat until hot. Add shrimp, mushrooms and onions; cook about 5 minutes, stirring frequently, until shrimp turn pink.

2 cloves garlic, minced
1 ¼ pounds shrimp, peeled and deveined
1 splash dry white wine

1 tablespoon grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • While spaghetti is cooking, heat oil in a large skillet over medium heat. Cook garlic until soft, but not brown, about 1 minute. Add shrimp and cook until opaque, about 3 minutes. 2 cloves minced garlic
1/2 cup vodka
1 (14 oz) can crushed tomatoes
1/2 cup heavy cream
1/2 teaspoon or to taste red pepper flakes
1/2 lb bay scallops
1/2 lb peeled, deveined, and cut crosswise into thirds large shrimp
1 lb uncooked linguine

Steps:

  • Heat the oil in a large skillet over medium heat. Add the garlic and cook for 1 minute or until fragrant. Add the vodka and turn the heat up to medium-high; cook until the liquid has reduced by half. Add the tomatoes, cream, pepper flakes and salt and pepper, to taste. Cook, stirring occasionally, until thickened, about 3 to 5 minutes. Add the seafood and cook until just opaque, about 3 minutes.
  • Meanwhile, cook the pasta in a large pot of salted, boiling water over medium heat, according to package directions. Drain and transfer the pasta to a large bowl. Pour in the sauce and toss to combine. Serve immediately.

½ pound uncooked scallops
3 cups water
2 (3 ounce) packages Oriental flavored ramen noodles

Seafood Pasta with Shrimp and Scallops (and Garlic!) image

A buttery garlic wine sauce pairs with shrimp and scallops in this easy dish. Add some pasta and dinner is served!

1 lb (454 g) scallops, fresh or thawed
Kosher salt
12 oz (340 g) good quality pasta
3 Tbsp extra virgin olive oil
8 large or 12 medium raw shrimp, fresh or frozen (and thawed) peeled, and deveined
3 or 4 cloves minced garlic
chopped Italian, flat leaf parsley
freshly ground black pepper
2 to 3 oz (57 g to 85 g) good quality butter
1/3 cup (80 ml) dry white wine (you can substitute seafood stock or broth if you'd like)
(lemon slices/wedges to serve)

Steps:

  • Soak the scallops for 10 minutes in a brine solution (3 Tbsp Kosher salt in 16 oz water.)
  • Remove after 10 minutes and place on a rack to dry.
  • Next, put a large pot of well salted water on to boil for the pasta. Once the pasta goes in, set a timer for 7 minutes before the pasta will be ready (according to package instructions.)
  • Make sure the scallops are dry. If they are not, pat them dry with a paper towel. When the timer goes off, put a large cast iron pan on high heat and add the extra virgin olive oil.
  • When the pan and oil are very hot, add the scallops and sear them for about 1 1/2 minutes before adding the shrimp, garlic, and parsley.
  • Cook for another 2 minutes, then turn the scallops and shrimp and cook for a further 1 1/2 minutes. Next, add the wine, scraping the bottom of the pan; turn the heat down just to keep it warm.
  • Add the butter and stir to melt. Add some freshly ground black pepper, if desired, then taste the sauce or a piece of seafood and add salt if needed.
  • Drain the pasta, which should be ready, but reserve a cup or so of pasta water. You will only need this pasta water if you want to add some after mixing everything together. Add the pasta directly to the seafood sauce in the pan.
  • Stir gently to incorporate all the ingredients together. Add some of the reserved pasta water, if desired, then top with a twist of lemon in the pan.
  • Serve immediately as this seafood pasta dish is best piping hot. Don't forget some crusty bread to mop up the buttery garlic and wine sauce at the end!

2 tbsp olive oil
250 g (½lb) shrimp / prawns (peeled and deveined)
150 g (5oz) mussel meat ((approximately 500g with shells) )
150 g (5oz) calamari tubes / squid heads
2 tbsp butter
4 garlic cloves (crushed)
½ tsp chilli flakes
½ cup white wine
1-2 tsp lemon juice
1 cup cream
salt and pepper (to taste )
½ cup parsley (finely chopped)
500 g (1lb) pasta (cooked + 1 cup cooking water reserved)

Steps:

  • In a large pan, add a splash of oil and allow to heat up.
  • Season the seafood with salt and pepper then cook in batches until golden brown.
  • The shrimp/prawns should take no more than a minute per side (depending on size) and the calamari and mussels will take only a few minutes to cook. Take care not to overcook the seafood as they will go tough and rubbery. Rather undercook slightly as it will cook a little more while being tossed with the sauce and pasta.
  • Remove the seafood from the pan and set aside.
  • In the same pan, melt the butter and add the garlic and chilli flakes. Cook until fragrant then pour in the lemon juice and wine.
  • Bring to a simmer and allow to reduce by half.
  • Pour in the cream and allow to come to a simmer. Allow to cook for 5 minutes or until the sauce coats the back of a spoon.
  • Add the seafood (and any of its resting juices) and parsley and stir to combine.
  • Toss the sauce with cooked pasta and a splash of the pasta cooking water and toss to coat the pasta. Serve sprinkled with parsley.

1 lb or 500g Fresh Mussels in shells
1 lb or 500g cooked shrimp
small glass white wine
1 shallot, finely chopped
2 cloves crushed garlic
8 oz or 225g Cream Cheese, room temperature
salt and pepper to taste
4-5 Mushrooms, sliced
1/2 Zucchini, sliced into bite-sized pieces
8 oz or 250g Pasta such as Tagliatelle. I used Paglia E Feino which is a mixture of yellow and green for a nice color
1 lemon, cut into wedges

Steps:

  • Prepare the mussels as follows.. *This is important!
  • Sort through mussels, tapping any that are open lightly on a surface to see if they close shut. Discard the ones that remain open, or any that are damaged (they have perished and are not safe to eat). Pull off the beard, and scrape any barnacles off using the back of a knife then rinse.
  • In a deep pan (I use a wok), add a drop of olive oil and lightly fry the shallot, garlic, mushrooms and zucchini until tender.
  • In a separate pan, cook the pasta according to the package instructions and set aside.
  • Add the mussels to the deep pan and combine with the shallots etc.
  • Add the white wine and turn the heat down to low. Place the lid on the pan and allow to simmer for 2 minutes.
  • At this point, sort through any mussels in the pan which are closed. Throw those away as they will be no good.
  • Add the shrimp and the cooked pasta. Turn the heat up and stir everything together so it's all well combined. Add the cream cheese, and take 2 utensils, and move everything around in the pan so it's all coated. The cream cheese will turn to a liquid when mixed with the white wine and the heat, so everything should become creamy. Season with salt and pepper and serve with a wedge of lemon

1 tablespoon oil
1 medium onion, diced
2 garlic cloves, minced
½ pound raw shrimp, peeled and deveined
½ pound mussels, cleaned and debearded
½ pound scallops
1 cup heavy cream
1/2 cup chicken broth or dry white wine
1 teaspoon chili flakes, or less, to taste
1 cup grated parmesan cheese, plus more for serving
¼ cup minced parsley, plus more for serving

Steps:

  • Rinse the mussels and remove the beards if necessary, discarding any that remain open even after tapping on them.
  • Clean the shrimp.
  • Dice the onion and mince the garlic and parsley.
  • Cook the pasta according to the package instructions. Drain and set aside, adding a touch of olive oil to help prevent it from sticking together.
  • Bring a large pan to medium heat. Add 2 tablespoons of butter and 1 tablespoon of oil. Add the onion and garlic and sauté for 3 minutes, until onion turns translucent.
  • Add the shrimp and scallops and sauté for 4 minutes, turning the shrimp and scallops over once, until the shrimp have turned pink.
  • Add the broth and heavy cream, bring to a light boil, and lower the heat to simmer. Let the sauce cook until the cream reduces slightly, about 2 minutes.
  • Add the mussels, cover with a lid, and let them cook in the sauce for 5 minutes.
  • Stir all the ingredients to coat them in sauce. Discard any mussels that haven't fully opened.
  • Add the parmesan cheese, chili flakes, minced fresh parsley, and salt and pepper. Add the drained pasta. Stir gently to mix everything together.

8 oz (225g) linguine pasta
1 tablespoon olive oil
1 pound (450g) raw shrimp (buy frozen, peeled, and deveined shrimp)
½ teaspoon salt
¼ teaspoon ground black pepper
1 tablespoon Old bay seasoning (optional - or smoked paprika or cajun)
1 tablespoon butter
1 clove garlic (minced)
½ cup heavy cream ((double cream in the UK))
½ cup parmesan (grated)
¼ cup fresh parsley (chopped)

Steps:

  • In a medium-sized saucepan, boil water and salt it. Add your pasta, and cook according to the package instructions until al dente. When the pasta is cooked, reserve 1 cup of the pasta water and drain the pasta.
  • In a skillet over medium heat, melt the butter, and add olive oil. Cook the shrimp for a minute, then season with salt, pepper, and Old Bay Seasoning or paprika if using.
  • Continue to cook the shrimp until it's pink. Do this in batches if you're worried that you may overcook the shrimp. Remove the shrimp onto a plate and set aside.
  • In the same pan, melt butter and add garlic, cook for 30 seconds or until it's fragrant. Add the heavy cream, and with the spatula deglaze the pan.
  • Add parmesan, let it melt then loosen the sauce with reserved pasta water and allow to simmer for a minute. Taste the sauce and see if more salt and pepper is needed.
  • Toss the pasta with the sauce until it's well coated. Add the shrimp back in to reheat it gently, garnish with freshly chopped parsley and serve.

2 cups uncooked pasta ( I used fusilli)
1/2 lb raw shrimp (peeled and deveined)
1/2 lb scallops
2 tbsp olive oil
2 garlic cloves (minced)
4 oz Philadelphia cream cheese
salt and pepper
chopped parsley and lemon to garnish

Steps:

  • Cook pasta according to the package instructions. Drain (reserving 1/2 cup of water) and set aside.
  • Add olive oil to a large, non-stick skillet and cook the shrimp and scallops for about 4-5 minutes on high heat. While the juice still remains in the pan, add garlic and cream cheese and then reduce the heat to medium low. Cook for 3-4 minutes and add the reserved water from the noodles to help thin out the sauce. Stir and cook for 2 minutes until the sauce looks smooth.
  • Add the pasta to the seafood and stir everything well. Garnish with chopped parsley and lemon wedges.

500 g (1lb) pasta
500 g (1lb) shrimp / prawns (peeled and deveined )
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1 tsp chilli flakes
2 tsp oregano
2 tbsp Cajun seasoning
2 tbsp butter
2 tsp crushed fresh garlic
1 cup white wine (I used Sauvignon Blanc)
1 cup heavy cream
1-2 tsp fresh lemon juice
salt and pepper (to taste)

Steps:

  • Place a large pot of salted water over medium heat. Bring to the boil then season generously with salt.
  • Once boiling, add the pasta and cook according to package instructions until al dente. Reserve 1 cup of water then drain and set aside.
  • Place the peeled and deveined shrimp in a large bowl then add the olive oil, crushed garlic, half of the seasonings and a generous pinch of salt.
  • Stir to coat the shrimp in the spices.
  • Heat a large skillet or pan over medium-high heat. Sear the shrimp for a minute per side until they are golden brown and just cooked.
  • Remove and set aside.
  • In the same pan, melt the butter and add the garlic. Cook for 30 seconds then add the remaining spices.
  • Cook for another 30 seconds then pour in the white wine. Allow the pan to deglaze and the wine to reduce by half.
  • Pour in the cream and season with salt and pepper. Allow the cream to simmer for 5 minutes or until the sauce coats the back of a spoon.
  • Taste and adjust seasoning if necessary.
  • Add the shrimp back to the pan with a squeeze of fresh lemon. Allow the shrimp to heat through.
  • Toss the creamy sauce and shrimp with cooked pasta of your choice and a splash of the reserved pasta water and serve scattered with fresh parsley and oregano (optional).

This deceptively simple seafood pasta recipe takes only minutes to prepare but with the delicious, easy cream sauce and perfectly-seared scallops and shrimp, it'll become a new favourite.

1 tbsp olive oil
1/2 lb scallops (patted dry)
1/2 lb shrimp (peeled and deveined)
1/2 tsp kosher salt
1 tbsp butter
1 clove garlic (minced)
1 cup heavy cream
2 oz parmigiano reggiano (grated (about 1/2 cup packed) (sub grana padano or pecorino romano))
4 oz mozzarella (grated (about 1/2 cup packed))
8 oz angel hair pasta or spaghettini
1 tbsp minced fresh parsley or chives (optional)

Steps:

  • Start a pot of salted water to a boil.
  • Heat a dutch oven over medium high heat for several minutes. Heat oil until it shimmers then pat dry shrimp and scallops and sprinkle with salt. Use long tongs to carefully arrange in a single layer on the hot pan. Let cook undisturbed until well browned on the underside, flipping only when they release easily, about 3 minutes. Flip and cook about a minute more, until just opaque. Transfer to a plate.
  • Meanwhile, cook pasta according to package directions (about 4 minutes for these types).
  • Add butter and garlic to the same dutch oven (without cleaning it) and cook about 30 seconds, until garlic is softened. Whisk in cream and bring to a simmer. Turn off heat and whisk in cheeses until smooth. Add pasta to the sauce and toss to combine. Stir shrimp and scallops into the sauce or top servings individually to show off the gorgeous sear. Serve sprinkled with parsley or chives if desired.
