SOURDOUGH CINNAMON SWIRL BREAD



Sourdough Cinnamon Swirl Bread image

I love the flavors of orange and cinnamon infused in this special bread. The first time I made this, everybody gobbled it up. This year I'm making them for Christmas morning and maybe adding an orange glaze for an extra fancy treat. Sounds like a plan. ????

Number Of Ingredients 11

1 cup warm water
1 cup sourdough starter (bubbly)
¼ cup olive oil
¼ cup honey
2 teaspoons Celtic Sea Salt
4 cups Bread Flour
¼ cup coconut sugar
1 tablespoon cinnamon
1 large orange (zested)
1 egg
1 tablespoon water

Steps:

  • Using a stand mixer with a bread hook combine water, sourdough starter, olive oil, honey, and salt.
  • Slowly add in flour 1 cup at a time beating until well incorporated and the dough begins to pull away from the bowl and form a ball. Keep mixing for an additional 5 minutes. You can also mix by hand in a large bowl and knead for 7 minutes.
  • Place dough in a greased bowl and cover with plastic wrap and let double in size. This can take 5-8 hours or longer depending on the temperature in your kitchen and how bubbly your starter is. Let it go till it doubles even if it takes longer than 8 hours.
  • Once doubled, place dough on a floured board and cut dough into 3 equal pieces.
  • Using a rolling pin, roll your first piece of dough into a large 15" X 6" rectangle.
  • Whisk together your egg and water to create an egg wash, and in a separate bowl mix together your cinnamon and coconut sugar.
  • Brush your egg wash on the dough using a pastry brush.
  • Sprinkle on cinnamon sugar and orange zest where you applied the egg wash.
  • Roll up your dough from the long angle and pinch the open ends together.
  • Using a pizza cutter or sharp knife, cut the dough down the center (gently) leaving an inch of dough connected at the top.
  • Gently braid your two strands one over top of the other until you get to the end.
  • Pinch together ends to form into a mini wreath.
  • Repeat with the remaining dough pieces. Put onto a greased or parchment-lined baking sheet, leaving a good amount of room in between to allow for rising. Cover loosely with plastic wrap and allow to rise for 1 hour.
  • Preheat oven to 425°F. Gently coat with an egg wash and bake for 20 minutes. Allow to cool for ten minutes before serving.

2 TBS warm water
½ tsp granulated sugar
2 tsp active dry yeast
½ cup milk (2% or whole)
3 TBS granulated sugar
¾ tsp sea salt
1 TBS butter (melted)
1 large egg (lightly beaten)
¼ tsp pure vanilla extract
2 to 2 ½ cups all-purpose flour
¼ cup milk (2% or whole)
¼ cup butter (melted)
1 ¾ cup walnuts
½ cup granulated sugar
¼ tsp sea salt
½ tsp ground cinnamon
1 large egg yolk (lightly beaten)
½ tsp pure vanilla extract

Steps:

  • In a small bowl, stir 1/2 tsp sugar, and yeast into warm water. Set aside until foamy (about 5 minutes)
  • In a medium saucepan, heat the milk to just below boiling (about 180°F), stirring occasionally. Allow to cool slightly, until it is about 110°F.
  • Once cooled, whisk in the melted butter, 3 TBS sugar and salt to the milk until combined. Add egg, vanilla and yeast mixture and stir to combine.
  • Add flour into the bowl of a standing mixer fitted with a dough hook.
  • Pour wet ingredients into the flour and mix the dough with the dough hook until it forms a smooth, elastic ball of dough. (You can also mix and knead by hand).
  • If necessary, add up to 2 TBS more flour until dough is smooth and no longer sticky.
  • Turn dough out onto a lightly floured surface and form into a ball.
  • Place dough in a lightly oiled bowl and cover with a warm, damp tea towel and let the dough rise for 1.5 hours in a warm place, or until doubled in size.
  • While the dough is rising, put the milk and butter into the container of a blender or food processor and blend/process until the mixture is warm.
  • Add Walnuts, sugar, salt, and cinnamon and pulse a few times until the ingredients are combined and walnuts are crushed into smaller pieces.
  • Add egg yolk and vanilla and pulse to combine.
  • Allow mixture to stand at room temperature until dough is ready.
  • Line a 9x5" loaf pan with parchment paper and grease with butter. Set aside.
  • After the dough has doubled in size, remove it from the bowl and place on a well-floured surface.
  • Roll the dough into a rectangle about 18" x 7" in size. Be sure dough is thin but not so thin that you can see through it (about ¼" thick).
  • Spread the filling evenly on the dough, leaving about 1/2" at the edges bare. (If your filling has become too thick to spread, add warm milk ½ TBS at a time until it just reaches spreading consistency).
  • Staring at the edge of your rectangle, roll the dough tightly together making a jelly roll (see picture). Be sure to apply pressure and keep rolling tightly until it resembles a rope.
  • Gently stretch out the "rope" and lift it into your prepared loaf pan, making an "S" shape as you put it in. (To do this, fold the dough into thirds in your pan (see pictures)).
  • Cover the pan with a damp towel and let it sit in a warm place for at least 15 minutes while you preheat your oven to 350 degrees F.
  • Bake for 15 minutes at 350 degrees.
  • After 15 minutes turn down the oven to 300 degrees F and bake for an additional 45 minutes (about 1 hour total), or until done (will sound hollow when hit with a wooden spoon). Check your bread after about 30 minutes and cover with aluminum foil if it is getting too brown.
  • Remove bread from the oven. Cool for 20-30 minutes on a wire rack before removing from pan.
  • Cool completely before cutting and serving!

4 cups flour
2 cups granulated sugar
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon nutmeg

2 cups buttermilk (or use just under 2 cups of milk and a couple teaspoons of lemon juice)
2 eggs
1 banana, mashed
1 teaspoon vanilla (optional)
1/4 cup vegetable oil
1 large apple, chopped
1/2 cup granulated sugar
1 tablespoon cinnamon
1 cup powdered sugar
2 tablespoons milk

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, combine flour, sugar, baking soda, salt, nutmeg, and cinnamon. Blend together until well combined. Add chopped apple, and mix until apple is evenly distributed and covered with flour.
  • In a medium bowl, combine buttermilk, eggs, banana, vanilla, and oil. Mix well, and slowly incorporate into dry ingredients. Gently fold together just until combined.
  • In a small bowl, (like how I'm downsizing each time? ;) haha) combine 1/2 cup granulated sugar and 1 tablespoon cinnamon. Mix well.
  • In a greased loaf pan (9x3x5), pour 1/4 of the batter, repeat with a second loaf pan. Sprinkle half of the cinnamon swirl mixture over batter; repeat. Cover both pans with remaining batter and swirl a butter knife through to make the marbled appearance.
  • Bake for an hour to an hour and 5 minutes, or until golden brown and a toothpick inserted near the center comes out nearly clean. (A little gooey is okay, but if loaves start getting too dark before they're fully baked, cover with aluminum foil).
  • For the glaze, mix together milk and powdered sugar and drizzle over cooled bread.

1 (1/4 ounce) package dry yeast
1/4 cup water
2 cups scalded milk
1/2 cup sugar
1/2 cup butter
2 teaspoons salt
2 eggs (slightly beaten)
7 1/2-8 cups flour
3/4 cup sugar
1 1/2 tablespoons cinnamon
soft butter

Steps:

  • In a small bowl soften and proof the yeast in the warm water.
  • In a saucepan combine the milk, sugar, butter, and salt; cool to lukewarm.
  • Add 3 cups flour and mix well.
  • Stir in the yeast and eggs; beat well.
  • Add enough of the remaining flour to make a soft dough.
  • Turn out on lightly floured surface and knead 100 times.
  • Place in lightly grease bowl; cover with cloth or plastic wrap and let rise till double (about 1 1/2 to 2 hours).
  • Punch down and divide dough in half; cover and let rest for 10 minutes.
  • Roll each half into a 15x7 rectangle, about 1/2" thick.

Soft, buttery and perfectly scented with cinnamon sugar, this cinnamon swirl bread is the perfect easy baking project and just delicious.

½ cup warm milk
½ cup warm water
1 tbsp sugar
10 g (2 tsp) instant yeast
1 egg
3-4 cups flour
1 tsp salt
1/3 cup softened butter
1 tbsp cinnamon
1/3 cup sugar
1 egg (beaten (for egg wash) )
1 tbsp melted butter

Steps:

  • In the bowl of a stand mixer, combine the warm milk, warm water, sugar and yeast. The milk and water should be comfortably warm, not hot. Allow to stand for 5 minutes.
  • Beat in the egg then add the flour, starting with 3 cups, and the salt. Knead in the flour then add the butter, one tablespoon at a time, kneading in well before adding more.
  • If the dough is very soft and sticky, add the remaining flour and allow to knead at medium speed for 3 minutes. The dough should be soft, slightly tacky and smooth.
  • Transfer to a large bowl and cover well with plastic then place in the fridge for up to 18-24 hours.
  • Remove the dough from the fridge two hours before baking. Tip the dough out onto a very lightly floured surface.
  • Roll into a rectangle as wide as your loaf pan (the one I used was 22x12cm (9x5in)) and approximately 1cm thick.
  • Mix together the sugar and cinnamon then sprinkle over the dough.
  • Roll the dough up into a tight roll then transfer to a greased and lined loaf pan.
  • Cover loosely with a damp tea towel and allow to proof for 30 minutes while you preheat the oven to 180°C/350°F.
  • Brush the loaf with beaten egg then place in the oven and allow to bake for 30-40 minutes until golden brown and risen.
  • To know if the bread is fully cooked, tap it on the bottom and if it sounds hollow, it's done.
  • Once removed from the oven, brush with melted butter (for a soft crust) and allow to cool for at least 30 minutes before slicing and serving.

1/2 cup salted butter (at room temperature)
1 cup white sugar
3 large eggs (at room temperature)
2 tsp vanilla (or vanilla bean paste)
1 1/2 cups all purpose flour
1/4 tsp salt
1/4 tsp baking soda
1/4 tsp baking powder
1/3 cup full-fat sour cream (at room temperature)
3 Tbsp brown sugar
1 Tbsp cinnamon
1 Tbsp milk
2 Tbsp brown sugar
1/4 tsp cinnamon

Steps:

  • Preheat oven to 325F (not fan assisted) and grease an 8 x 4-inch or 4 x 10-inch loaf pan. Set aside.
  • In a large bowl with an electric mixer or the bowl of a stand mixer with the paddle attachment, beat together the butter and sugar until light and fluffy, about 3 minutes. Beat in the eggs, one a time, beating well after each addition and scraping down the sides of the bowl as needed. Beat in the vanilla.
  • In a medium bowl, whisk together the flour, salt, baking soda and baking powder. Add 1/2 of the dry mixture to the butter mixture, then the sour cream, then the rest of the flour mixture, mixing just until combined.
  • Remove 1 cup of the batter to a medium bowl. Add the cinnamon swirl ingredients to it - the brown sugar, cinnamon and milk and stir to combine.
  • Spoon a thin layer of the plain batter into the bottom of your prepared loaf pan. Using a spoon, drop alternating spoonfuls of the plain and the cinnamon batter into the pan. Top with the remaining plain batter and smooth the top. Using a long skewer or knife, run through the batter in the pan a few times (either lengthwise or from side to side). Just about 3 lengthwise or 4-5 side to side should do it).
  • Make topping by combining the brown sugar and cinnamon in a small bowl. Sprinkle over the top of the loaf.
  • Bake loaf in the preheated oven for 55-65 minutes, or until a knife inserted in the centre of the loaf comes out clean. (4x10 pan will cook more quickly, 55-60 minutes, while an 8x4 will take a bit longer, closer to 65 or a few minutes more).
  • Allow loaf to cool in the pan about 10 minutes, then run a knife around the outside and remove to a cooling rack to cool.

1 cup (2 sticks) unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
4 ripe bananas, mashed (about 1-1/2 cups)
3 tablespoons unsalted butter, melted
3 tablespoons granulated sugar
3 tablespoons dark brown sugar
2 tablespoons ground cinnamon
6 thin slices of banana, for garnishing

Steps:

  • Preheat oven to 350°F. Lightly grease and flour a 9×5-inch loaf pan and set aside.
  • In a large bowl, melt the butter and let cool slightly. Whisk in the sugar then the eggs and vanilla. Stir in the flour and baking soda. Fold in the mashed bananas until just combined.
  • In a small bowl, use a fork to stir together the cinnamon sugar swirl ingredients until thick and well combined. If your swirl is too thick to swirl, add an additional tablespoon of melted butter until it is thin enough to swirl. Note: if it's too thin, it will just spread and not hold its swirl as the loaf bakes.
  • Spread 1/4 of the batter evenly into the bottom of the prepared pan. Dollop 1/4 of the cinnamon sugar mixture over the batter in the pan and then make a nice thick swirl through the batter with a table knife or bottom of a wooden spoon. Place 1/3 of the remaining batter evenly over the first layer and swirl with 1/3 of the remaining cinnamon sugar mixture. Place 1/2 of the remaining batter evenly over the second layer and swirl with 1/2 of the remaining cinnamon sugar mixture. Spread the remaining batter evenly over the top and dollop with the remaining cinnamon sugar mixture. Make large swirls throughout the entire loaf. Place six thin banana slices down the middle of the batter.
  • Place loaf pan on a baking sheet and bake for 60-70 minutes or until golden brown and a toothpick inserted in the center comes out clean. Let the bread cool in the pan for at least 30 minutes before removing to a wire rack to cool completely.

  • Preheat oven to 200C. Place 250g of strong bread flour into a large bowl. Carefully add the salt, dried yeast, sunflower oil and warm water. Mix well with a fork.
  • When the mixture gets sticky, take it out and place it on a clean surface. Sprinkle a tsp of flour on the surface so the mixture won't stick to it. Start rolling it out whilst still mixing it. When the mixture is no longer sticky, leave it for 15 minutes on a warm, damp surface to prove.
  • After 15 minutes, take the dough and place it again on a surface with sprinked flour. Start rolling around the mixture again untill it's no longer sticky.
  • To plait the bread, simply roll it into three equal shaped balls. Then roll these out untill long and thin. Equally brush the olive oil over the bread dough Bind three ends together and start plaiting them. Bind the three ends together again at the end. Leave on a warm, damp surface to prove for 15 miutes.
  • Place the bread in the pre-heated oven and bake for 12-15 minutes. You will know the bread is cooked by seeing it's a golden colour and by poking your finger in the bottom of the bread. remove the bread from oven unless it needs more time to cook.
  • Leave for 5 minutes on a dry surface to cool down, then enjoy. The bread should serve 5 or more people.

This is a super quick batter bread that is wonderfully moist and yummy!

⅓ cup white sugar
2 teaspoons ground cinnamon
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
1 cup white sugar
1 egg, beaten
1 cup milk
⅓ cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan. In a small bowl, mix together 1/3 cup sugar and 2 teaspoons cinnamon; set aside.
  • In large bowl combine flour, baking powder, salt and remaining 1 cup sugar. Combine egg, milk, and oil; add to flour mixture. Stir until just moistened.
  • Pour half of the batter into pan. Sprinkle with half the reserved cinnamon/sugar mixture. Repeat with remaining batter and cinnamon/sugar mixture. Draw a knife through batter to marble.
  • Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into center of the loaf comes out clean. Let cool in pan for 10 minutes before removing to a wire rack to cool completely. Wrap in foil and let sit overnight before slicing.
