1/4 cup orange juice
1/4 cup white vinegar
4 garlic cloves, minced
1 teaspoon seasoned salt
1 teaspoon dried oregano
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 pound beef top sirloin steak, cut into 1/4-inch strips
1 medium onion, thinly sliced
1 medium green pepper, thinly sliced
1 medium sweet red pepper, thinly sliced
2 tablespoons canola oil, divided
6 flour tortillas (10 inches)
Optional: Shredded cheddar cheese, picante sauce and sour cream

Steps:

  • In a large bowl, combine the orange juice, vinegar, garlic and seasonings; add the beef. Turn to coat; set aside. In a skillet, saute onion and peppers in 1 tablespoon oil until crisp-tender; remove and set aside., Drain and discard marinade. In the same skillet, cook beef in remaining 1 tablespoon oil until it reaches desired doneness, 2-4 minutes. Return vegetables to pan; heat through. Spoon meat and vegetables onto tortillas. If desired, top with cheese and serve with picante sauce and sour cream.

Skirt steak is the traditional cut used for fajitas. It used to be inexpensive, but now it's not so cheap; oftentimes flank steak costs less. Either will be a good choice.

1 tablespoon cumin seeds, lightly toasted and ground
1 teaspoon chipotle or ancho chile powder
1 teaspoon salt, more to taste
1 1/4 pounds flank or skirt steak
Zest of 1 lime (2 teaspoons)
1/4 cup fresh lime juice
1/4 cup plus 2 tablespoons extra-virgin olive oil
1 tablespoon Worcestershire sauce
4 large garlic cloves, minced
1 large red or yellow onion, halved and sliced
2 red bell peppers (or 1 red and 1 orange or yellow), seeded and sliced 1/4 inch thick
1 green bell pepper, seeded and sliced 1/4 inch thick
1 jalapeño or 2 serrano chiles, minced
1/4 cup chopped cilantro
4 large flour or 8 corn tortillas
1 teaspoon grapeseed or canola oil
1 romaine heart, cut crosswise into 1-inch wide pieces
Salsa fresca, for serving (see recipe)
Queso fresco, for sprinkling

Steps:

  • Combine 2 teaspoons ground cumin, the chile powder and 1 teaspoon salt. With a sharp knife, cut shallow crosshatched incisions across top and bottom surfaces of steak. Rub spice mix all over surface of steak. (It's best to wear gloves as the chile powder is hot.) Place steak in a resealable freezer bag.
  • In a small bowl, whisk together lime juice and zest, 1/4 cup olive oil, the Worcestershire sauce and half the garlic. Reserve 2 tablespoons of the marinade and pour the rest into the bag with steak. Seal and move steak around in bag to coat thoroughly. Place on a sheet pan and refrigerate for at least 4 hours and up to 24 hours. Massage bag periodically to redistribute marinade. Refrigerate reserved marinade if cooking the next day.
  • Heat 2 tablespoons olive oil in a large, heavy skillet over medium-high heat. Add onions and cook, stirring, until they soften and begin to color, 4 to 5 minutes. Stir in bell peppers and chile. Cook, stirring, until peppers begin to soften, about 3 minutes.
  • Lower heat to medium, add remaining garlic and cumin, and salt to taste. Cook, stirring often, until peppers are nicely seared, softened and beginning to caramelize, 5 to 8 minutes.
  • Pour in reserved 2 tablespoons marinade and scrape bottom of pan with a wooden spoon to deglaze. Stir in half the cilantro. Taste and adjust seasoning. Remove from heat but keep warm.
  • Wrap tortillas in foil and warm in a low oven, or wrap in a towel and warm in a steamer or in the microwave.
  • Heat a large cast iron skillet over medium-high heat, or prepare a medium-hot grill. Remove meat from marinade and discard marinade. Pat meat dry with paper towels. If using a skillet, heat remaining 1 tablespoon oil in skillet. (If your skillet is not large enough for the steak, cut it in half and cook in batches.) Cook for 3 to 4 minutes per side. Meat should be medium rare. Remove to a cutting board, cover with foil and let sit for 10 minutes. Cut across the grain into 1/2- to 3/4-inch wide strips.
  • Arrange lettuce on a platter, then place steak next to lettuce. Tip juices from cutting board over meat and sprinkle with remaining cilantro. Serve vegetables on the same platter or separately, along with warm tortillas, salsa and crumbled queso fresco.

Steps:

  • Brown the steak in oil.
  • Place the steak and drippings into the crock pot.
  • Add lemon juice, garlic, cumin, salt, and chili powder.
  • Mix well.
  • Cover and cook on HIGH for 2 1/2 to 3 hours, or until meat is tender.
  • Add green pepper and onion; cover and cook for 1 hour more.
  • Warm the tortillas.
  • Spoon beef and veggies down the center of the tortillas.

2 teaspoons packed light brown sugar
1 teaspoon ground cumin
1 1/2 teaspoons chili powder
1/2 teaspoon ancho chile powder
1/2 teaspoon garlic powder
Kosher salt
1 1/2 pounds skirt steak
Juice of 3 limes, plus wedges for serving
3 tablespoons extra-virgin olive oil, plus more for the grill
4 bell peppers (red, orange and/or yellow), thinly sliced
2 red onions, thinly sliced
8 to 12 flour tortillas
Shredded cheddar cheese and chopped fresh cilantro, for topping

Steps:

  • Mix the paprika, brown sugar, cumin, chili powder, ancho powder, garlic powder and 1 teaspoon salt in a small bowl.
  • Put the steak in a large resealable plastic bag. Add the juice of 1 lime, 1 tablespoon olive oil and the spice mixture; seal the bag and rub the spices into the meat. Refrigerate 30 minutes to 2 hours.
  • Meanwhile, heat a large cast-iron skillet over medium-high heat. Toss the bell peppers and red onions with the remaining 2 tablespoons olive oil, the juice of the remaining 2 limes and 1 teaspoon salt in a large bowl. The absolute BEST Steak Fajitas you've ever had! This is my take on the tex-mex steak fajitas. Marinated for hours in lime juice, garlic, and cumin -- so good you'll never use another recipe again!

⅓ cup lime juice
¼ cup pineapple juice (no sugar added)
2 tablespoons Worcestershire sauce
3 tablespoons olive oil
1 tablespoon minced garlic
2 teaspoon EACH: ground cumin AND chili powder (or more to taste)
1 teaspoon EACH: kosher salt AND smoked paprika
½ teaspoon EACH: black pepper AND red pepper flakes (or more to taste)
¼ cup chopped cilantro
1 ½ - 2 pounds skirt or flank steak
1 tablespoon oil (high heat)
2 medium white onions, sliced
1 large poblano, ribs and seeds removed then sliced
2-3 bell peppers, thinly sliced (any color you please!)
guacamole, salsa, cilantro leaves, salsa verde, sour cream, black beans, rice, tortillas, cilantro-lime rice, sautéed corn, tomatoes, lettuce, shredded cheese, etc.

Steps:

  • STEAK MARINADE: Combine the ingredients for the marinade in a large shallow bowl. Give it a taste and check for seasonings, adjust to preference. Coat the steak with the marinade and let sit covered in the refrigerator for at least 2-4 hours and ideally overnight. Remove from the refrigerator 30 minute prior to cooking.
  • Set a large cast iron skillet or pan over high heat and let heat up for a couple of minutes. Add the steak to the pan and fry on each side for about 3-5 minutes or longer if you'd like it more done. Feel for desired firmness. The 3 minutes/side will yield a medium rare doneness. If the pan becomes too hot, reduce the heat to medium high. Remove the steak from the pan and allow to rest for several minutes tented with a piece of foil. Slice the meat against the grain into thin slices. I like to do so on an angle so the meat slices are tender and thin.
  • FAJITA VEGGIES: Add the remaining tablespoon of oil to the pan over high heat, add in the onions, poblano, and bell peppers. Let the veggies begin to sizzle and toss as necessary, cook for a total of 2-3 minutes or longer if you prefer them softer, season with a pinch of salt and pepper. [b]If your pan is small, cook the veggies in a few batches so they don't steam.[/b]
  • ASSEMBLY: Serve them in tortillas or on rice bowls topped with your favorite toppings!

1 teaspoon fine sea salt (or 2 teaspoons kosher salt (such as Diamond Crystal))
1/4 teaspoon black pepper
2 tablespoons chili powder
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon red pepper flakes
3 large bell peppers (cut into thin strips (or 1 lb. frozen sliced bell peppers))
1 large onion (thinly sliced (8 oz))
2 lb. top sirloin steak (cut into thin strips )
2 tablespoons avocado oil
1 tablespoon cornstarch

Steps:

  • In a small bowl, mix together the seasoning ingredients. You can mix them in two separate bowls - half will season the veggies and the second half will season the meat.
  • Heat the oil in a large, deep skillet over medium-high heat, about 2 minutes. Add the bell peppers, the onions, and half the spices. Cook, stirring often, until just tender, about 5 minutes. Remove the vegetables to a plate.
  • Add the steak slices and the remaining spices to the same skillet. Stir-fry just until no longer raw, 3-4 minutes. The beef doesn't need to be fully cooked at this point. It will finish cooking when you add back the vegetables.
  • Return the vegetables to the skillet. Stir-fry everything together until heated through, 1-2 more minutes.
  • At this point, if you have a lot of liquids in the skillet and you'd like to thicken them, you can reduce the heat to medium and stir in a cornstarch slurry (1 tablespoon cornstarch mixed with 1 1/2 tablespoons cold water). Keep cooking until the liquids thicken, about 1 more minute. But this is purely optional.

2 tablespoons olive oil
1 tablespoon lime juice
1 garlic clove, finely minced

  • Cut onions in half lengthwise and slice into strips, cut your peppers into strips.
  • In large non stick skillet over medium high heat, heat remaining tablespoons of olive oil.
  • Add onions & peppers stirring for 3-4 minutes, until softened; transfer to a bowl and set aside.
  • Add beef to skillet, cook, stirring for 3-4 minutes or until they lose their red color.
  • Return onions and peppers to skillet; stir for about one minute.
  • To serve, spoon a portion of the beef mixture down the centre of each tortilla, top with your desired toppings , fold bottom of tortilla up over filling, fold the sides in, overlapping.

1 Package Fajita Seasoning, divided
1-1/2 tsp garlic salt
1-1/2 tsp pepper
Juice of one lime

Steps:

  • In a small bowl, stir together cumin, chili powder, onion powder, salt, and red pepper flakes. Set aside.
  • Heat a large skillet over high heat. Add in 2 tablespoons of olive oil, let heat for a minute, and then add in your sliced bell peppers, onion, and mushrooms. Saute until the vegetables are tender crisp (7-10 minutes).
  • During the last two minutes of cooking add in half of your seasoning mix and the minced garlic. Cook an additional 1 to 2 minutes. Remove the vegetables from the pan and transfer to a serving dish, but keep the skillet hot.
  • Return the skillet to high heat. Add the thinly sliced flank steak to the hot skillet and sprinkle in the remainder of the seasoning mixture, and worcestershire sauce.   • When the meat is cooked, add the vegetables back in. Drizzle in lime juice and toss together.

1 recipe Cassava Flour Tortillas
1/2 cup coconut aminos
1/2 cup lime juice

Steps:

  • Make the cassava flour tortillas. These can be made ahead of time and frozen, then reheated when ready to use.
  • Add all marinade ingredients to a bowl and stir. Pour the marinade into a ziploc bag (or shallow, covered dish) and add the steak. Marinade for at least 4 hours.
  • Heat a grill to medium high heat. Add the steak and cook for 4 minutes each side. Let the steak rest on a cutting board for several minutes before cutting.
  • While the steak is resting, heat the oil in a skillet (this is the one I use) on medium-high heat. Add the bell pepper slices and cook, stirring frequently for 4-5 minutes. Add the onion slices and cook for another 2-3 minutes.
  • Slice the steak into long, diagonal strips.
  • Assemble the fajitas by adding steak, grilled vegetables, slices of avocado, fresh cilantro and crumbled goat cheese to a tortilla.

2 large onions (1 Costco)

  • Preheat oven to 475 degrees F and line 2 rimmed baking sheets (half sheets) with silicone baking mats or unbleached parchment paper.
  • Cut steak against the grain into thin slices. Look at your flank steak, see how the lines are running? Cut across them, not parallel. With sirloin steak it is easy because of its elongated shape - cut across, not lengthwise.
  • Also cut onions and bell pepper into thin strips.
  • Transfer meat and vegetables into 2 separate piles on one sheet pan.
  • Meat: squeeze lime juice, drizzle with olive oil and sprinkle with taco seasoning, garlic powder, salt and pepper.
  • Vegetables: drizzle with olive oil and season with taco seasoning, salt and pepper.
  • Toss each pile to season separately. Then mix meat and veggies together and transfer half of steak fajitas on second sheet. Spread in a single layer.
  • Bake for 20 minutes. To check for doneness, just taste a piece of steak.
  • Broil until browned, about 5 minutes under 550 F (high) broiler.
  • Season meat only just with a pinch of pink, coarse or regular salt. I underseason fajitas during cooking on purpose because a small sprinkle of salt at the end is everything. Good finishing salt is pink salt or coarse sea salt. Delicious!
  • We serve steak fajitas in whole wheat tortillas with sliced avocado, torn pieces of cilantro and a squeeze of lime juice. You can use corn tortillas or white flour tortillas (less nutritious). You can top fajitas with jarred salsa, sour cream, guacamole or pico de gallo. And refried beans on a side.

8 flour tortillas , plus all the side dishes, to serve
150ml pot soured cream (optional)
juice 6 limes
2 tbsp olive oil
4 garlic cloves , crushed

2 tsp freshly ground black pepper
small bunch coriander , finely chopped

Steps:

  • Mix all the marinade ingredients in a bowl. Lay the steaks in a shallow dish or tray, then pour over the marinade. Turn to coat the steaks all over in the mix, then allow to stand for at least 1 hr, or cover and chill for up to 24 hrs.

  • Carefully remove hot pan from oven. Transfer vegetable mixture to pan and arrange in a single layer; reserve bowl. Broil until beginning to brown and soften, about 5 minutes.

1 ½ pounds flank steak or skirt steak
2 medium limes (zest and juice (about 1 ½ teaspoons zest and ¼ cup juice))
4 tablespoons extra-virgin olive oil (divided)
1 tablespoon Worcestershire sauce
1/2 tablespoon honey
2 cloves garlic (minced (about 2 teaspoons))
2 red bell peppers (seeded and cut into 1/4-inch strips)
1 green bell pepper (seeded and cut into 1/4-inch strips)
1 large yellow onion (halved and cut into 1/4-inch strips)
Flour or corn tortillas

Steps:

  • In a small bowl, place 2 teaspoons cumin, 1 teaspoon chili powder, 1 teaspoon chipotle chile powder, coriander, and 1 teaspoon salt. Zest the 2 limes directly into a bowl, then stir to combine.
  • Place the steak on a cutting board. With a sharp knife, carefully make shallow, diagonal cuts across the top of the steak. Repeat, making diagonals in the opposite direction to create a crosshatch pattern. Repeat on the bottom side of the steak.
  • Rub the spice mix all over both sides of the steak, then place in a sturdy ziptop bag.
  • In the same bowl you used for the spices (no need to rinse in between), whisk together the lime juice, 2 tablespoons olive oil, Worcestershire, and honey.
  • Pour into the bag with the steak, seal, then turn the bag to coat the steak evenly. Place on a plate or sheet pan and let rest at room temperature for at least 30 minutes or up to 1 hour, or refrigerate for up to 1 day. Turn the bag periodically to redistribute the marinade. If refrigerating the steak, let it come to room temperature prior to cooking.
  • When ready to prepare the beef fajitas, remove the steak from the marinade, shaking off any excess. Pat very dry to ensure you get a nice sear.
  • To warm the tortillas, wrap them in foil and place in a 300 degrees F oven while you cook the steak and vegetables.
  • Heat 1 tablespoon of the oil in a large cast-iron skillet or similar large, sturdy skillet over medium-high heat. (If your skillet is not large enough to cook the entire piece of steak, cut slice it in half and cook it in batches; you also can cook the steak on an outdoor grill instead.) Cook the steak for 4 to 6 minutes per side, until the meat reaches 140 degrees F on an instant read thermometer. Remove to a cutting board, cover, and let rest for 10 minutes (the steak's temperature will continue to rise as it rests; DO NOT skip resting or it will taste dry). Slice across the grain into thin (1/2- to 3/4-inch) strips.
  • Add the remaining 1 tablespoon oil to the skillet. Add peppers and onions. Sauté, stirring often, until they soften and the onions begin to turn golden, about 8 minutes.
  • Reduce the heat to medium. Add the remaining 1/2 teaspoon cumin, 1/2 teaspoon chili powder, and 1/2 teaspoon salt. Continue to cook until the vegetables completely soften and are starting to caramelize, about 6 to 8 minutes more.
  • Stir in the garlic and let cook 30 seconds, just until fragrant. Remove the pan from the heat.
  • To serve, arrange the meat slices on a big platter and drizzle any juices that have collected on the cutting board over the top. Place the vegetables beside the meat. Serve piled inside the warm tortillas, with toppings of choice.

1 green bell pepper
1 red bell pepper
1 onion, medium
3 tbs vegetable oil
2 tbs lime juice
1 tbs Worcestershire sauce

Steps:

  • In a large bowl or ziptop bag, add 2tbs vegetable oil, Worcestershire sauce, lime juice and whisk well. Then add the dry ingredients: chili powder, cumin, smoked paprika, oregano, salt and pepper. Mix well to create marinade for steak. Set aside.
  • Slice flank or skirt steak in half lengthwise, then against the grain into thin strips of about 1/4 inch thick. Add to marinade and cover bowl or seal bag. Marinate overnight for best results.
  • Slice bell peppers and onions into thick slices. Set aside in a bowl and toss with remaining 1 tablespoon of vegetable oil.
  • Preheat air fryer for 5 min at 380°(F). When ready, add vegetables to basket or tray and air fry at 380°(F) for 8 minutes on air fry setting. When the 8 minutes are up, add the marinated steak and mix very well. Be sure the pieces of steak aren't stuck together. Get the vegetables well coated with marinade. Air fry for an additional 5-7 minutes at 380°(F).
  • Serve immediately on warm tortillas. Juices from bottom of pan or drip tray can be added for additional flavor and juiciness.

3 multi-colored bell peppers, cut into thick strips
1 large yellow onion, sliced

8 small flour tortillas, warm

Steps:

  • Stir together the sugar, chili powder, cumin, garlic powder, paprika, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a small mixing bowl to make the dry rub for the steak.
  • Put the steak on a parchment-lined baking sheet. Rub both sides generously with the spice rub. Allow the steak to come up to room temperature for about 30 minutes. Meanwhile, prepare the vegetables.
  • Place a grill pan over medium-high heat and allow the pan to heat for 5 minutes.
  • Put the bell peppers and onions in a large mixing bowl. Drizzle with the olive oil. Sprinkle generously with salt and pepper. Spread the vegetables out over the hot grill pan. Cook, tossing occasionally, until caramelized and softened, 8 to 10 minutes. Put the grilled vegetables on a serving platter and tent with aluminum foil to keep warm.
  • To cook the steak, brush the hot grill pan with the vegetable oil. Place the steak on the grill and cook for 3 minutes. Flip the steak over and cook for another 3 minutes. Transfer the steak to a cutting board and allow it to rest for at least 5 minutes.
  • Slice the steak into thin strips, against the grain of the meat. Layer the steak over the warm vegetables and sprinkle with the cilantro leaves. Serve with shredded iceberg lettuce, sour cream and warm tortillas.

2 pounds skirt steak or flank steak, thinly sliced across the grain
2 bell peppers, red and green, sliced
½ red onion, sliced
8-10 flour or corn tortillas
¼ cup olive oil
¼ cup soy sauce
2 tablespoons apple cider vinegar
1 jalapeño diced
½ red onion
Juice of 1 lime
Juice of 1 orange
1 tablespoons minced garlic
1 teaspoon ground cumin
1 teaspoon onion powder
1 teaspoon oregano
½ bunch cilantro
1 teaspoon pepper
1 teaspoon salt
Sour cream
Guacamole
Pico de gallo

Steps:

  • Skirt steak usually comes in a long strip. Cut the steak into 2-3 pieces to allow them to fit better in the pan.
  • Add the olive oil, soy sauce, apple cider vinegar, jalapeno, red onion, lime juice, orange juice, garlic, cumin, onion powder, oregano, cilantro and salt and pepper in a mixing bowl and stir well. Add the skirt steak and mix with your hand. Refrigerate and marinate for 2-4 hours. The longer the better - you can even do overnight! Alternatively, you can use a large Ziplock bag.
  • Before searing the steak, dry it with paper towel - keep the marinade.
  • Heat a large cast iron over medium-high heat for 3 minutes. Once hot, add a bit olive oil. Sauté the onions until soft, about 4 minutes. Add the bell peppers and keep stirring until soft, about 5 minutes. Place the onions and peppers on a separate plate.
  • Raise to high heat and in the same cast iron, add the steak and press down firmly on the surface. Sear for 2 minutes on each side. Reduce heat and add ½ cup of the marinade and cook for 2-4 minutes longer. You want an internal temperature of 130 F. Work in two to three batches if needed.
  • Transfer the steak to a cutting board and let it rest for 10 minutes before slicing.
  • Meanwhile warm up the tortillas. If you have a gas stovetop, I like to place the tortillas directly on the burner and warm them there so give them a nice char.
  • Slice the steak into ½ inch slices.
  • Assemble the fajitas: Place the steak and vegetables on each tortilla. Top with guacamole, pico, and/or sour cream.

For the Steak Fajita Marinade:
1/2 cup (120ml) soy sauce
1/2 cup (120ml) lime juice, from 6 to 8 limes
1/2 cup (120ml) canola oil
1/4 cup (55g) packed brown sugar
1 tablespoon chili powder (see note)
3 medium cloves garlic, finely minced (about 1 tablespoon)
2 teaspoons ground cumin seed
2 teaspoons freshly ground black pepper
2 pounds (900g) trimmed skirt steak (about 1 whole steak; see note), cut crosswise into 5- to 6-inch pieces
For the Fajitas:
1 large red bell pepper, stemmed, seeded, and cut into 1/2-inch-wide strips
1 large yellow bell pepper, stemmed, seeded, and cut into 1/2-inch-wide strips
1 large green bell pepper, stemmed, seeded, and cut into 1/2-inch-wide strips
1 white or yellow onion, cut into 1/2-inch slices

Steps:

  • For the Fajita Marinade: Combine soy sauce, lime juice, canola oil, brown sugar, chili powder, garlic, cumin, and black pepper in a medium bowl and whisk to combine. Transfer 1/2 cup (120ml) marinade to a large bowl and set aside.
  • For the Steak: Place steaks in a gallon-sized zipper-lock bag and add remaining marinade. Seal bag, squeezing out as much air as possible. Massage bag until meat is fully coated in marinade. Lay flat in the refrigerator, turning every couple of hours, for at least 3 hours and up to 10.
  • For the Fajitas: While steak marinates, toss peppers and onion in bowl with reserved 1/2 cup marinade. Refrigerate until ready to use.
  • When ready to cook, remove steaks from marinade, wipe off excess, and transfer to a large plate. Light one chimney full of charcoal. When all charcoal is lit and covered with gray ash, pour out and arrange coals on one side of charcoal grate. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Clean and oil grilling grate .
  • Place a large cast iron skillet over cooler side of grill. Transfer steaks to hot side of grill. Cover and cook for 1 minute. Flip steaks, cover, and cook for another minute. Continue cooking in this manner, flipping and covering, until steaks are well charred and an instant-read thermometer inserted into their center registers 115 to 120°F (46 to 49°C) for medium-rare or 125 to 130°F (52 to 54°C) for medium. Transfer steaks to a large plate, tent with foil, and allow to rest for 10 to 15 minutes.
  • Meanwhile, transfer cast iron skillet to hot side of grill and allow to preheat for 2 minutes. Add pepper and onion mix and cook, stirring occasionally, until vegetables are softened and beginning to char in spots, about 10 minutes. When vegetables are cooked, transfer steaks to a cutting board and pour any accumulated juices from plate into skillet with vegetables. Toss to coat.
  • Transfer vegetables to a warm serving platter. Thinly slice meat against the grain and transfer to platter with vegetables. Serve immediately with hot tortillas, guacamole, pico de gallo, and other condiments as desired.

400g tin red kidney beans, drained and rinsed
200g/7oz cherry tomatoes, halved

Steps:

  • Season the beef with pepper. Heat half a tablespoon of the oil in large, non-stick frying pan and stir-fry the beef for 1½ minutes, or until lightly browned but not quite cooked through. Tip onto a plate, set aside and return the pan to the heat.

Reserve 2 tablespoons of marinade in a small bowl. Add steak to bag and seal tightly. Marinate in the refrigerator at least 4 hours or overnight, turning and massaging marinade into meat occasionally.
  • Heat 1 tablespoon of the oil in a large cast-iron skillet over medium-high. Add bell peppers, onions, and, if desired, jalapeño; cook, stirring often, until slightly softened and caramelized, about 5 minutes. Sprinkle with remaining 1/2 teaspoon salt. Add reserved marinade, and cook, stirring to scrape any loose brown bits from the bottom. Transfer bell pepper mixture to a platter, and cover with aluminum foil to keep warm. Wipe any extra juice from bottom of skillet, and return to medium-high.
  • Remove steak from marinade, allowing any excess marinade to drip off; discard marinade. Heat remaining 1 tablespoon oil in skillet over medium-high. Add steak; cook to desired degree of doneness, or 4 minutes per side for medium-rare. Transfer to a cutting board, and let stand, tented with aluminum foil for 5 minutes.
  • Slice steak, across the grain in 1/2-inch slices, and place on platter with vegetables; sprinkle with cilantro. Serve with tortillas, pico de gallo, and sour cream.
