Every summer(and winter too) my co-worker ask for me to bring this in for a snack. A friend of mine once took it to the local Farmers Market as a way of selling her produce. One man offered to buy the whole gallon container just to take home!

SALSA VERDE: GREEN TOMATILLO SALSA
Steps:
- Whether you choose the verdant, slushy, herby freshness of the all-raw tomatillo salsa or the oil-colored, voluptuous, sweet-sour richness of the roasted version, tomatillos are about brightening tang. The buzz of the fresh hot green chile adds thrill, all of which adds up to a condiment most of us simply don't want to live without.
- For the All-Raw version: Roughly chop the tomatillos and the chiles. In a blender or food processor, combine the tomatillos, chiles, cilantro and 1/4 cup water. Process to a coarse puree, then scrape into a serving dish. Rinse the onion under cold water, then shake to remove excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.
- For the Roasted version:
- Preheat a broiler.
- Roast the tomatillos and chiles on a baking sheet 4 inches below a very hot broiler until darkly roasted, even blackened in spots, about 5 minutes. Flip them over and roast the other side, 4 to 5 minutes more will give you splotchy-black and blistered tomatillos and chiles. In a blender or food processor, combine the tomatillos and chiles, including all the delicious juice that has run onto the baking sheet. Add the cilantro and 1/4 cup water, blend to a coarse puree, and scrape into a serving dish. Rinse the onion under cold water, then shake to remove the excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.

Steps:
- Pour boiling water over the tomatoes and remove them after 30 seconds. Peel them with a sharp knife and cut into quarters, scoop out the seeds with a thumbnail.
- You are left with skinless, seedless, delectably sweet tomato flesh. This can be left in quarters (for a chunky, salady version) or more finely chopped (if you are tending towards the salsa). Either way, toss with the remaining ingredients and it is ready to serve.

FRESH TOMATILLO SALSA VERDE RECIPE
If you like your salsa hot and sharp, you will enjoy this recipe for a fresh tomatillo salsa verde (green sauce). It is a very easy to make uncooked salsa. The uncooked tomatillos are quite acidic and when you add 4 serrano chiles, seeds and all, your salsa is gonna pack some punch. The flavor stands up well to grilled beef. We love this salsa with carne asada. It's also a great salsa for grilled chicken.

- Wash and chop the tomatoes into small cubes. Place the tomatoes face up while chopping to prevent the pieces from getting squished. Make sure to fine chop the tomatoes.
- Add chopped tomatoes into a large mixing bowl. Now, add rest of the ingredients and mix nicely. Taste and adjust the seasoning accordingly.
- Alternatively, place all ingredients including tomatoes in a food processor and pulse until just chunky. But make sure not to make a fine paste of ingredients. A good salsa has a rustic texture to it.
