Broiled shrimp mixed with lemon, scallions, fresh herbs, crunchy cucumber, salty feta and olives makes this an elegant pasta salad. Serve it as a hearty side dish or easy main course.

8 ounces orzo pasta (about 2 cups)
1/2 pound large shrimp, peeled and deveined (tails removed), coarsely chopped
1/3 cup plus 1 tablespoon extra-virgin olive oil
1 clove garlic, minced
Freshly ground pepper
Grated zest of 2 lemons, plus 1/4 cup fresh lemon juice
4 scallions, thinly sliced
1/2 cup chopped fresh mint
1/2 cup chopped fresh dill
1 cup diced English cucumber
4 ounces crumbled feta cheese
3 tablespoons halved pitted kalamata olives

Steps:

  • Preheat the broiler. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente (about 2 minutes less than the label directs). Drain and rinse under cool water; shake off the excess. Transfer to a large bowl and set aside, stirring occasionally to prevent clumping, while you make the shrimp.
  • Toss the shrimp on a baking sheet with 1 tablespoon olive oil, the garlic, and salt and pepper to taste; arrange in a single layer. Broil the shrimp, turning once, until opaque and just cooked through, 2 to 3 minutes.
  • Add the shrimp, lemon zest and juice, scallions, mint, dill, cucumber, feta, olives and the remaining 1/3 cup olive oil to the bowl with the pasta; toss. Serve immediately or refrigerate, covered, up to 6 hours. (Bring to room temperature before serving.)

If planning to leave shrimp in marinate, don't add lemon juice. Add just before cooking/grilling.Then I drop orzo pasta in now boiling water. While pasta cooks, I cook the shrimp.In meantime, assemble the rest of salad ingredients: dice cucumber, tomatoes, red onion and feta. Chop herbs - dill and parsley. Whisk the salad dressing in a wide salad bowl, add red onion and let'em marinate. Add all ingredients into salad bowl. Toss gently to coat everything in dressing siting at the bottom of the bowl. 1.5 lbs Shrimp, 15-18 cleaned shrimp
3 tbsp Olive Oil
2 tbsp Zaatar, See Note 1 for homemade recipe
1 tsp Black Pepper, freshly cracked
2 tbsp Lemon, juice
1 tsp Paprika
1/2 tsp Salt, skip if Za'atar has salt.
2 Cup Orzo Pasta, dried orzo pasta
1/4 Cup Olive Oil
1/2 Cup Red Onion, small diced
2 Tomatoes, cored and small diced
1 Cucumber, hothouse, small diced
3-4 Green Onion, scallions, thin sliced
1/2 Bunch Fresh Herbs, parsley and dill, chopped
1/2 Cup Olives, pitted, mixed olives from olive bar or as per your preference
1/2 lbs Feta Cheese, fresh block of feta, small diced
1-2 Lemon, to get 1/4 cup juice, adjust to taste
Salt and Black Pepper, 1/2 tsp each

Steps:

  • Cook Orzo Pasta - Cook orzo pasta according to package directions. Once cooked, drain and set aside. Reserve a cup of pasta water to revive the pasta.
  • Marinate Shrimp - In a bowl, add shrimp, olive oil, lemon juice, salt, paprika, and black pepper. Coat shrimp in oil and spices. Set aside.
  • Make Dressing: In a wide bowl, add remaining lemon juice, olive oil, 1/2 tsp each of salt and black pepper. Whisk to emulsify. Add diced red onion. Mix and set aside.
  • Cook Shrimp - Preheat a grill pan or outdoor grill. Grill shrimp on hot grill until pink from both sides. 2-3 minutes each side. Remove in a bowl and set aside.
  • Assemble Salad - Add in cooked orzo pasta followed by diced cucumber, tomato, olive, marinated red onion, diced feta cheese, cooked shrimp, scallion, chopped parsley and dill. Toss gently to combine everything with dressing. Taste and adjust salt and black pepper.
  • Serve - Refrigerate until ready to serve. Best served chilled or at room temperature.

1 lb shrimp (cooked)
½ cup chopped celery (I like the heart with the leaves)
1/4 cup chopped red onion
1 lemon (zested and juiced)
½ - 3/4 cup dill mayonnaise (recipe follows)
Salt and pepper to taste
1 egg yolk
2 tbsp white wine vinegar
1/4 cup fresh dill or 1 T dried
¼ t . cayenne pepper
¼ t . kosher salt
1 cup vegetable or canola oil

Steps:

  • Chop shrimp into small chunks (about ½ an inch) and combine in a large bowl with the celery, onion and lemon zest. In a food processor or blender, pulse together the egg yolk, vinegar, dill, cayenne and salt. While the blender is running, slowly pour in the oil until the mayo is thick and creamy. Taste for seasoning. Fold ½ cup of the mayo into the shrimp salad and stir to combine. Add more mayo if desired. Add in the juice of the lemon and a dash of salt and pepper to taste. Serve on a salad, crackers or a crusty loaf of bread and enjoy! Keeps in the fridge for 2-3 days.

1 pint grape tomatoes, halved

1/2 cup olive oil, plus additional for brushing shrimp

  • Preheat oven to 450 degrees.
  • Dry shrimp with paper towels and season with salt and pepper.
  • Add 1 tablespoon olive oil to a large, ovenproof skillet over high heat. Swirl to coat. When shimmering, add shrimp in an even layer.   • In a large pot of boiling salted water, cook the orzo until al dente. Drain and let cool.

  • In a large serving bowl, combine the cooked orzo, tomatoes, cucumbers, red onion, feta, dill, and vinaigrette vinaigrette. Toss fully then season to taste with salt and pepper.
  • In a large sauté pan set over medium-high heat, heat the remaining 1 tablespoon olive oil. Season the shrimp with salt and pepper. Put the shrimp into the skillet and cook, stirring, until they are just cooked through and pink, 2 to 3 minutes. Remove the pan from the heat and season with a squeeze of lemon juice from the reserved lemon half. Mix the shrimp into the salad and season to taste with salt and pepper once more before serving. 2 sticks unsalted butter, slightly softened

1 teaspoon grated lemon zest
1/4 cup fresh lemon juice

2 cloves garlic, finely chopped

1 pound orzo pasta, cooked al dente, drained

1 large yellow pepper, finely diced

  • Place lemon juice in a small non-reactive saucepan and reduce to 3 tablespoons. Place the butter in a medium bowl, add the lemon syrup and dill, then season with salt and pepper to taste. Mix well and scrape into a ramekin. Refrigerate for 1 hour.
  • Whisk together the zest, juice, oil, dill, and garlic, then season with salt and pepper, to taste. Mix the pasta, cheese, peppers, olives, and scallions together in a bowl. Pour the vinaigrette over and mix to combine. Add the oregano and season with salt and pepper, to taste.
  • Preheat grill to high. Toss the shrimp in some olive oil and season with salt and pepper to taste. Thread 5 shrimp on a skewer, bending the shrimp so that the skewer passes through it twice. Grill, turning once for 4 to 5 minutes. Remove the shrimp from the grill to a large platter and brush generously with Lemon-Dill Butter. Garnish with fresh dill.

This salad recipe has all the flavors of a horiatiki (Greek peasant) salad combined with orzo pasta, sauteed shrimp and tossed with latholemono dressing.

¾ cup uncooked orzo
16-20 peeled and deveined shrimp ((fresh or frozen))
1¼ cup chopped tomatoes
1¼ cup chopped cucumber
1 cup diced green onion
1 tbsp olive oil
1 15 oz can chickpeas
2 tbsp fresh dill
½ cup feta cheese
Latholemono vinegarette

Steps:

  • Start by thawing the shrimp (if using frozen).
  • Cook orzo according to package.
  • Meanwhile, chop all of the vegetables and set aside.
  • Make the latholemono vinegarette by adding all ingredients to a small food processor and blend until all ingredients are incorporated.
  • Once the shrimp are thawed, peel and devein them.
  • Heat a saute pan over high heat and add in the olive oil and the prepared shrimp. Cook for about 1-2 minutes on each side or until shrimp is fully cooked.
  • In a large bowl combine orzo, chopped vegetables, chickpeas, and shrimp. Top with dill, vinaigrette and feta cheese and toss to combine.

1/2 lb medium shrimp, shelled and deveined
3/4 cup orzo pasta, uncooked
1/3 cup feta, crumbled
1 medium tomatoes, chopped
3 scallions, sliced
1/2 cup flat leaf parsley, finely chopped
1 cup baby greens, washed and rinsed
1/2 garlic clove, chopped
2 tablespoons fresh lemon juice
1/4 cup fresh flat leaf parsley
2 teaspoons oregano leaves, minced
fresh ground pepper
1/4 cup olive oil

Steps:

  • in a bowl, whisk together garlic, lemon juice, olive oil, oregano and salt and pepper to taste. add shrimp to marinade, stirring to coat well.
  • marinate shrimp, covered and chilled, 1 hour. prepare grill pan.
  • meanwhile, cook orzo according to package instrucktions. transfer to a large bowl and let cool.
  • for the dressing, combine all six ingeredients in a blender until emulified.
  • when orzo is cool, stir in feta, tomato, scallions, and parsley leaves. add dressing to taste and toss well. season with salt and pepper.

6 ounces orzo pasta (rice-shaped pasta)
1 pound shrimp (peeled, deveined, and tails removed)
1/4 cup olive oil
1 1/2 lemons (juiced)
Freshly ground black pepper
1/4 small red onion (finely chopped)
½ cup minced scallions (white and green parts)
1/2 cup chopped fresh dill
1/2 cucumber (seeded, and chopped)
1 Roma tomato (seeded and chopped)
4 ounces feta cheese

Steps:

  • Boil the pasta and cook the shrimp. Fill a large pot with water, add 1 tablespoons of salt and bring to a boil. Add the orzo and simmer for 8 minutes, stirring occasionally until just shy of al dente. Add the shrimp to the pot with the orzo and continue to cook until the shrimp are opaque, about 1 to 2 minutes. Strain and transfer the shrimp-orzo mixture to a large bowl.
  • Dress and toss. Pour the olive oil over the hot pasta. Next add the lemon juice (just use your hands to catch the seeds, and squeeze directly over top). Season with 1 teaspoon salt and ½ teaspoon pepper. Toss to combine.
  • Add the fresh ingredients and serve. Add the red onion, scallions, dill, cucumber, tomato, and feta. Stir gently and season to taste. As the pasta sits, the flavors will develop and you may need more salt. Serve at room temperature. Store leftovers in the refrigerator for up to 3 days.

3/4 pound orzo
1/2 cup fresh lemon juice
1/2 cup olive oil
2 tsp. salt
1 tsp. pepper
1 cucumber, chopped
1 cup chopped fresh dill
1 cup fresh parsley, chopped
2.5 cups crumbled feta cheese (or 3/4 pound block of feta, diced)

Steps:

  • Cook orzo as directed on package.
  • Roast shrimp on a sheet pan (spread on pan, drizzle with oil and sprinkle with salt and pepper) at 400 for about 5 minutes; allow to cool.
  • Whisk together lemon, olive oil, salt, and pepper; mix in with warm orzo. Add roasted shrimp, cucumber, dill, parsley, and feta; serve at room temperature as-is or atop some arugula.

Steps:

  • Bring lightly salted water to boil (we add a little olive oil to the water as well).
  • Add orzo and cook as directed, normally 9 to 10 minutes for al dente.
  • While boiling roast pine nuts in pan until golden brown and fragrant. Remove and set aside.
  • Once orzo is done, drain and place back in pot.
  • Add all other ingredients in with orzo, mix well.

16 large shrimp, peeled and deveined (about 1 lb.)
1 cup orzo pasta
2 ounces feta cheese, crumbled
3/4 cup finely diced red bell pepper
1/3 cup pitted kalamata olive, quartered
2 tablespoons thinly sliced scallions, including tender green parts
1 1/2 tablespoons finely chopped fresh oregano
4 metal skewers (or bamboo skewers soaked in water for at least 30 minutes)

Steps:

  • Make the vinaigrette: in a bowl, whisk together the lemon zest, lemon juice, olive oil, dill, garlic, salt, and pepper.
  • Place the shrimp in a medium bowl; pour ¼ cup vinaigrette over the shrimp; toss to coat well.
