Steps:
- Grind toasted, crumbled nori sheets in a spice mill to a fine powder. Add toasted sesame seeds, finely grated zest of tangerines or lemons, kosher salt, toasted Sichuan peppercorns, ground ginger, paprika, toasted white or black poppy seeds, and cayenne pepper; pulse to a uniform spice blend but not to a powder. DO AHEAD: Can be made 3 days ahead. Store airtight at room temperature.
GOMASIO (JAPANESE SESAME SEED CONDIMENT)
A condiment used in Japan much as you and I would use salt. I like this sprinkled on salad, sauteed greens, scrambled egg; but my favorite way is stirring some into my brown rice hot cereal! I use a Japanese suribachi to grind the seed mixture, but you can use a standard pestle and mortar or blender.

- NOTE: To save money, buy the sesame seeds either at the Asian market or in the bulk bins at your grocery store. The seaweed is optional. I always add it but omit it if you wish.
- In 10" clean, dry castiron skillet on medium heat lightly toast the salt and seaweed strip. The salt will turn a subtle greyish color.
- At this point, you can remove the kombu strip, cool slightly, then break up into small pieces. Return the seaweed pieces to the pan.
- Add the sesame seeds and toast about another 6-8 minutes or unti the seeds are light golden. Stir constantly while the seeds toast and watch carefully. If the seeds burn, you have to start over. Reduce heat if necessary.
- Remove pan from heat and allow seed mixture to cool.
- Grind the seeds in batches to the consistency of coarse cornmeal. Specifically this means that about 3/4 of the seeds will be ground and the remaining either partially ground or whole.
- Store in airtight container but DO NOT refrigerate. Use up within a month.

- Miso (Soybean paste) amanda/Flickr. One of the basic Japanese seasonings, Miso is made from soybeans, salt and koji. Koji is a type of fermented rice, but it also sometimes made from barley, beans or wheat.
- Shoyu (Soy sauce) Craig Kohtz/Flickr. Most commonly used seasoning, you will see soy sauce on tables in almost all the restaurants in Japan.
- Su (Rice vinegar) kattebelletje/Flickr. In Japan, the rice vinegar has a higher acidity and flavor. There are two types of rice vinegar dressings – nihaizu (adding either soy sauce or salt) and sanbaizu (adding soy sauce and sugar).
- Mirin (Sweet rice wine) Marta Miranda/Flickr. Mirin is used for sweet vegetable stew such as Nikujaga (potato stew with beef) and Teriyaki sauce. If you are not in Japan and it is difficult to find mirin, you can just add sugar and mild rice wine in place of it.
- Nikiri (Sweet soysauce) Kirk K/Flickr. A lightly sweetened soy sauce used for glazing fish. www.secretsofsushi.com.
- Ryorishu (Rice Wine – Sake) Wally Gobetz/Flickr. Sake is often used for cooking too. Ryorishu is not tasty as a sake but it is mild and gives stew dishes flavour.
- Dashishoyu / Tsuyu (Fish-flavoured soysauce) Toshihiro Gamo/Flickr. This sauce can be used for various Japanese noodle dish such as Soba, Somen and Udon.
- Karashi. Karashi is Japanese hot yellow mustard, hotter than even English mustard. To make it no vinegar is added, so there is no sour aftertaste. You add water to make a paste.
- Wasabi. 克年 三沢/Flickr. Wasabi is a root vegetable known in English as Japanese horseradish. It is most famous in the grated form of a green paste used as condiment for sashimi (raw seafood) and sushi.
