INSTANT POT® CRANBERRY BEAN SOUP
Cranberry beans provide a rich and creamy broth in this hearty soup with pancetta and pasta. Garnish with fresh parsley and/or Pecorino Romano cheese if desired.

- Fill a large pot with lightly salted water and bring to a rolling boil. Stir in tubettini and return to a boil. Cook uncovered, stirring occasionally, until tender yet firm to the bite, about 9 minutes. Drain and set aside.
- Meanwhile, turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add pancetta and cook until fat has been rendered, about 5 minutes. Add onion, carrots, and celery; saute, stirring frequently, until translucent, about 4 minutes. Add garlic and cook for 1 minute.
- Pour 1/4 cup chicken broth into the pressure cooker and bring to a boil while scraping the browned bits of food off the bottom with a wooden spoon. Add remaining chicken broth, cranberry beans, diced tomatoes with juice, bay leaves, salt, and pepper.
- Close and lock the lid of the pressure cooker and close the valve. Select Manual pressure according to manufacturer's instructions; set timer for 45 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Unlock and remove the lid.
- Transfer 2 cups of soup, with as many beans as possible, to a mini food processor; blend until smooth. Place back into the pot and stir. Ladle soup into bowls, add the reserved pasta, and serve.

This is a soup I made for my special kids. Many had never had any fresh vegetables so every meal was chucked full of good vitamins.Canned fava beans and chicken base instead of ham base is delicious.

Steps:
- In large stockpot, add soaked beans and baking soda, cook on low for 1 1/2 - 3 hours. Add water to always make two quarts.
- Make sure the beans are soft.
- Or cook canned beans with juice in large stockpot in two quarts water and delete baking soda.
- Add chopped carrots, celery, margarine, cilantro, bay leaves and ham or chicken base.
- Cook for twenty minutes on low heat.Make sure it simmers for a full 20 minutes.
- Add dashes of chili pepper, tomato juice or tomato sauce,sugar and optional pepper if desired. Stir until blended.
- Cook for 10 more minutes.
- Ladle in bowls with a spoonful of cheddar cheese on top.
- Serve with crackers.
- Note: Altitude and humidy effect the cooking of beans, so check and when they are soft they are usually done. Cooking time for this recipe is for dry beans. Canned beans cuts the time to one-third.

The Iroquois Indians cultivated and used the Three Sisters (corn, squash and beans) in their diet. This is a recipe passed down by our relatives. You may use regular corn instead of hominy, but hominy is more traditional.

- Place the hominy, green beans, squash, and potatoes into a pot, and pour in water and chicken bouillon. Bring to a boil, then reduce heat to low, and simmer until vegetables are soft, about 10 minutes. Blend flour into the butter, then stir into the soup. Increase heat to medium, and cook for 5 more minutes, or until soup thickens. Season with pepper, and serve.

RED BEAN SOUP
This came from a Cajun Cookbook that my friend had loaned to me. The prep. time does not include soaking the beans overnight.

Steps:
- Put the beans in a saucepan, cover with fresh water and bring to a boil.
- Boil for 10 minutes and drain.
- Set aside.
- Melt the butter in a dutch oven or very large saucepan and cook the onion, garlic, celery and carrot, covered, until softened.
- Add the beans, ham, ham bone, water, worcestershire sauce, parsley, thyme, bay leaves, lemon juice, pepper flakes, and salt and pepper to taste.
- Bring to a boil and simmer 2 hours or until beans are very soft.
- Discard the ham bone.
- Scoop out the chunks of ham and reserve.
- Press the soup through a fine sieve and return it to the saucepan.
- Discard the solids in the sieve.
- Cut the chunks of ham into small dice and add to the soup.
- Reheat, and taste and adjust the seasonings.
- Serve hot, sprinkled with a little parsley.
