A very simple stir-fry dish. The reason for using only soya sauce for stir-frying cabbage is that it brings out the natural sweetness in the cabbage itself.

1 tablespoon vegetable oil
2 cloves garlic, minced
1 pound shredded cabbage
1 tablespoon soy sauce
1 tablespoon Chinese cooking wine (Shaoxing wine)

Steps:

  • Heat the vegetable oil in a wok or large skillet over medium heat. Stir in the garlic, and cook for a few seconds until it begins to brown. Stir in the cabbage until it is coated in oil; cover the wok, and cook for 1 minute. Pour in the soy sauce, and cook and stir for another minute. Increase the heat to high, and stir in the Chinese cooking wine. Cook and stir until the cabbage is tender, about 2 minutes more.

1/2 large cabbage
2 tablespoons vegetable oil
3 cm ginger, peeled and cut inti fine matchsticks
2 garlic cloves, chopped
1 red chile, deseeded and finely sliced
1 1/2 tablespoons dark soy sauce
1 tablespoon balsamic vinegar

Steps:

  • Remove out leaves of cabbage. Cut in half and take out inner core. Slice quarters into 1 cm shreds.
  • Place wok on high heat. Add oil, swirl around.
  • Add ginger, garlic and chilli quickly stirring for few seconds.
  • Add cabbage. Stir-fry briskly for 3-4 minutes.
  • Add soy suace and balsamic and stir-fry few seconds longer.
  • Serve immediately.

1 pound skinless boneless chicken breast halves
1 egg white
2 teaspoons soy sauce
2 teaspoons plus 1 tablespoon Shaoxing wine (Chinese rice wine) or dry Sherry
1 1/2 teaspoons cornstarch
1/4 teaspoon ground white pepper
3 teaspoons Asian sesame oil, divided
1 (6 1/2-ounce) can preserved snow cabbage, well drained
1 teaspoon sugar
2 tablespoons peanut oil or vegetable oil, divided
1 medium-size red bell pepper, cut into matchstick-size strips
1 medium-size green bell pepper, cut into matchstick-size strips
1/4 teaspoon salt

Steps:

  • Cut boneless chicken breast crosswise into 1/4-inch-thick slices, then stack slices and cut into matchstick-size strips. Whisk egg white in small bowl until foamy; transfer 1 tablespoon to medium bowl (reserve remaining egg white for another use). Add chicken to bowl with egg white. Add soy sauce, 2 teaspoons rice wine, cornstarch, and white pepper; toss to coat. Mix in 2 teaspoons sesame oil. Let stand 15 minutes.
  • Mix preserved snow cabbage and sugar in small bowl. Heat 14-inch-diameter flat-bottomed wok or heavy 12-inch-diameter skillet over high heat until drop of water added to wok evaporates on contact. Add 1 tablespoon peanut oil and swirl to coat wok. Add sliced chicken breast, spreading evenly. Cook without stirring 30 seconds, then stir-fry until sliced chicken is no longer pink, about 2 minutes. Transfer chicken slices to plate. Add remaining 1 tablespoon peanut oil to wok, then add red and green bell peppers and stir-fry until beginning to soften, about 2 minutes. Stir in snow cabbage mixture and salt. Return chicken to wok; add remaining 1 tablespoon rice wine and stir-fry until chicken is just cooked through, about 1 minute. Remove pan from heat. Stir in remaining 1 teaspoon Asian sesame oil into stir-fry and serve.

1 teaspoon sesame oil
1/4-1/2 teaspoon red pepper flakes
1 teaspoon sesame seeds
1 teaspoon fresh ginger (1 teaspoon grated)
3 garlic cloves (1 tablespoon)
8 cups shredded cabbage
1/2 red bell pepper, rough chopped
4 scallions, sliced
1 tablespoon brown sugar
1 tablespoon soy sauce
1/2 teaspoon hoisin sauce (to taste)
1 scallion, sliced thin
sesame seeds, toasted

Steps:

  • In a large hot pan or wok add oils to coat bottom.
  • Add pepper flakes, sesame seeds, ginger and garlic stir to coat and mis together.
  • Add cabbage cook 5 minutes over medium high heat stirring all the while.
  • The cabbage will release water so no need to add liquids.
  • Add bell pepper and scallions cover and cook for 5 minutes on medium heat.
  • Sprinkle with brown sugar and stir in soy sauce cook for 4 more minutes or till your desired tenderness.
  • Place on a serving platter sprinkle with hoisin sauce, scallions, and sesame seeds.
