- Cut avocado in half and remove pit. Lay avocado halves on their sides and carefully cut lengthwise into 2 thick slices each. Hollow out middles with a paring knife.
- In a large, nonstick skillet over medium-low heat, melt 1 tablespoon butter. Place avocado slices into skillet and crack an egg into the center. Season with salt and pepper.
- Cover skillet and cook until egg is cooked to your desired doneness, about 5 minutes for a just runny egg. Sprinkle cheese on top of each slice, cover with lid again and cook until the cheese is melted, a minute more.
- Repeat with remaining ingredients. Garnish with bacon and green onions.

- Cut avocado in half and scoop out flesh as one big piece. Lay the avocado half on its side (the hole should be on its side) and cut in 3-4 large pieces, keeping the shape of the hole in each slice.
- Cut a hole in the center of each slice of bread big enough to fit an avocado slice. Melt 2 tablespoons of butter in a large nonstick skillet over medium heat. Add 2 slices of bread to the skillet and toast on each side, about 2 minutes per side. Place avocado slices inside each slice of bread in skillet. Crack an egg into the center of each circle. Season with salt and pepper. Cover skillet and cook until the egg is cooked to your desired doneness, about 3-5 minutes. Sprinkle cheese on top of each slice, cover with lid again and cook until the cheese is melted. Repeat with remaining ingredients. Garnish with chives.

- With a biscuit cutter or the rim of a glass, press a hole in the center of the slice of bread.
- Heat a skillet over medium-low heat and melt in the butter. When the butter is all spread out, place the slice of bread in the skillet and crack the egg straight into the center of the hole.
- Cook until the egg sets a bit on the bottom, 30 to 45 seconds. Sprinkle the egg with salt and pepper. After about a minute, flip it over with a spatula and salt and pepper the other side.
- Move the toast around in the skillet, soaking up all of the glorious butter. Let it cook until the yolk feels soft. Here's the key: golden brown toast, white (not browned/burned) whites, soft unbroken yolk. Perfect.

- Cut a larger opening into the center of each bagel half using a cookie cutter or small glass.
- Add 2 tbsp butter to a skillet, heat over medium-high. Once melted, place the bagel halves in the pan, cut side down. Cook till browned, about 2-3 minutes.Flip bagel halves and arrange sliced avocado on each, but not overtop of the hole. Pour one egg into each opening, season with salt and pepper, and cover 2 of the 4 bagel halves with a cheese slice (you can break up the cheese slice to avoid covering the egg completely). I saw a picture of this and can't wait for my avocado trees to produce this year. This may become a regular breakfast. Here in Florida the avocados are large and buttery. One avocado will yield 2 thick slices. If you use the Haas grenades, you, likely will need 2 avocados.

- Heat a non-stick skillet to medium low heat.
- Lightly spray with oil.
- Slice an avocado with the skin ON lengthwise, forming 1 or 2 thick slice in the middle.
- You will have some leftover avocado pieces - so, Make some bonus guacamole if you want! Guacamole for Breakfast? Why NOT?.
- Remove the seed and use a small cookie cutter to make a hole in the center of your thick slice big enough for your egg.
- Place the avocado slice in the pan. Crack your egg into the center of the hole.
- Cover and cook for a minute or two, until the egg is as you like it.
- Season with salt and pepper and serve.
- Alternatively you can leave the skin on the avocado and place the egg(s) in the hole and bake at 350°F This takes much longer, about 30+ minutes. However, if you were feeding a crowd would be easier.
