- Preheat oven to 325 degrees F. Toss apples with sugar and cinnamon; set aside.

- Preheat the oven to 350 degrees F and grease a 10-inch fluted tube pan.
- In a large skillet over medium heat, cook the sausage until cooked through and browned.
- Add the apples and cook for 3 more minutes until the apples are tender.
- Remove from the heat and stir in the chopped bacon, spices and herbs. Let cool.
- Cut each biscuit in half, shape into balls, and arrange one half of the balls in the prepared pan.

- Put 1/2 cup apple cider and diced apples in a saute pan. Cook over medium heat until cider has been reduced and apples are soft.
- Mash the apples with the back of a spoon. Leave a few chunks of apples.
- Remove from pan and allow apple mixture to cool.
- In a bowl, add ground pork, salt, garlic powder, pepper, sage, red pepper flakes and maple syrup along with apple mixture.
- Mix all ingredients together with your hands. Add remaining apple cider and mix again.
- Cover and refrigerate for at least 30 minutes.
- Form into patties and cook over medium-low heat until cooked through. Keep an eye on the patties so they don't burn. The apple cider and syrup can burn quickly if not watched.

- Coat the inside of a 4-quart slow cooker with cooking spray or line the slow cooker with a disposable liner. In an extra-large bowl stir together granulated sugar, brown sugar, cinnamon, nutmeg, and ginger. Sprinkle 2 tablespoons of the sugar mixture in the bottom of the prepared slow cooker. Set the remaining sugar mixture aside.
- Cut each biscuit into fourths. Add biscuit pieces, apples, and pecans to sugar mixture in the bowl, tossing to coat. Add coated mixture to slow cooker. Sprinkle with any remaining sugar mixture. In a small bowl stir together butter, rum, and vanilla; pour over biscuits.

- Brown sausage in a skillet until cooked; drain.
- In a large bowl, whisk together eggs, milk and vanilla until well blended.
- In another bowl, mix apples, sugar and cinnamon together until well coated.
- In a greased 9 x 13 inch baking dish, place half of the bread cubes followed by half the sausage, half the apples, and and 1 cup of the cheese. Repeat layers with remaining ingredients.
- Pour egg mixture over the layers making sure to evenly coat it all with the egg mixture.
- Place in fridge and refrigerate overnight.
- In the morning, remove the casserole from the fridge and preheat oven to 325 degrees. Bake uncovered for 55-60 minutes or until knife inserted in center comes out clean. Cut into 6-8 pieces and served topped with a drizzle of maple syrup if desired.

- Grease bottom and sides of a 8" or 9" square baking pan.
- Brown the sausages in a medium skillet over moderately high heat, rotating them until browned and cooked through.
- Remove the sausage and discard all but 2 tablespoons of the drippings.
- Add butter and brown sugar to the pan.
- Heat, stirring until sugar is melted.
- Add apples and saute them over moderate heat, turning occasionally, until soft (about 10 min).
- Arrange sausages in rows across the prepared pan.
- Insert the apple slices, round side down, between the sausages, wedging them in tightly.
- Pour over juices from the skillet (the pan can be covered and refrigerated overnight at this point, if desired).
- Bring to room temperature before proceeding.
- Preheat oven to 400°F
- To make cornbread, stir together the flour, cornmeal, brown sugar, baking powder, and salt in a medium bowl.
- Add the egg, melted butter and milk.
- Stir with a wooden spoon until well combined.
- Pour the batter over the sausage and apples, smoothing the top to cover well.
- Bake for 25 minutes or until cake tester inserted in middle comes out clean.
- Remove from oven.
- Immediately invert onto a serving dish.
- Cut into squares and serve.
SAGE, SAUSAGE AND APPLE DRESSING

- Preheat the oven to 325 degrees F.
- Put the stuffing cubes in a large bowl and set aside. Butter a 3-quart casserole dish.
- Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the sausage and break it up with a wooden spoon. Cook until it loses most of its pink color, but not so much that it's dry, about 5 minutes. Add the sausage and pan drippings to the stuffing cubes. Melt the remaining butter in the pan. Add the onion, apple, celery, and 1/2 teaspoon salt. Cook until the vegetables get soft, about 5 minutes. Add the broth and parsley and bring to a boil.
- Pour the vegetable mixture over the stuffing cubes and toss until evenly moistened. Mix in the walnuts and eggs. - Heat oven to 375. Spray 1 1/2 quart casserole dish with cooking spray. Place rolls on cutting board and let stand 10 minutes to thaw.
- In non-stick skillet, heat sausage until brown and drain.
- In medium bowl, beat eggs, milk and syrup until well blended. Cut rolls into 3/4" cubes and place in the bowl with the egg mixture. Stir and coat all pieces. Add sausage and apple to mixture, stir & coat them as well. Pour into your casserole dish.
- Bake 30-40 minutes or until the rolls are puffed. Insert a knife into the center and when it comes out clean, they are done! Let stand 5 minutes before you serve.
- You can also add bacon in place of the sausage for a different taste.

- For the crumble topping: Combine the oats, butter, brown sugar and cinnamon in a small bowl; set aside.

- In a small food processor, puree onion and garlic. Add apple pieces and pulse until apple is broken up into tiny pieces but not pureed. (You can skip this step and just chop everything fine if you don’t mind chunks of onion, garlic, and apple. I prefer is a bit more incorporated.)
- Saute onion/garlic/apple mixture in 1 TBS of fat of choice over medium heat for 5-7 minutes, until it softens and begins to brown a bit. Allow to cool slightly.
- In a large bowl, add maple syrup to ground pork and mix thoroughly. Add the rest of the ingredients, including onion/garlic/mixture and mix well. I use my hands.
- Shape into desired sized patties and either fry up now or freeze for later. If freezing, separate layers with unbleached parchment paper.
