SLOW COOKER PINEAPPLE CHICKEN
Everyone's takeout favorite made right in the crockpot! The chicken is SO TENDER and JUICY bursting with so much flavor!

Steps:
- Season chicken with salt and pepper, to taste. Melt butter in a large skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side; drain excess fat and set chicken aside. In a large bowl, combine pineapple juice, chicken broth, brown sugar, soy sauce, honey, vinegar, Sriracha, garlic and ginger. Place chicken thighs into a 6-qt slow cooker. Stir in pineapple juice mixture. Top with pineapple chunks, crushed pineapple and reserved juices. Cover and cook on low heat for 5-6 hours or high for 2-3 hours, basting every few hours. In a small bowl, whisk together 1/4 cup water and cornstarch. Stir in cornstarch mixture, bell pepper and onion into the slow cooker. Cover and cook on high heat for an additional 30-60 minutes, or until sauce is thickened. Serve chicken immediately, garnished with sesame seeds and parsley, if desired.
HONEY PINEAPPLE CHICKEN DRUMMETTES CROCK POT

- 1. rinse and drain drumettes. mince garlic and cut pineapple into 1 inch cubes.
- 2. combine the salt, pepper, honey, soy sauce, pineapple, vegetable oil and garlic in a bowl and mix well.
- 3. place drumettes in slow cooker and pour sauce over the wings. cook covered on low for 6-7 hours.
TERIYAKI DRUMETTES
Because it's boiled, this teriyaki turns into a great caramelized sauce that can be drizzled across the chicken and steamed white rice for a nice side dish. This can be made with any kind of meat - drumettes make a great party item. Recipe doubles nicely.

Steps:
- Combine sugar, soy sauce, and water in an 8-quart pot; stir until sugar is dissolved. Turn heat to medium-high; add ginger, garlic, cinnamon, and black pepper and stir.
- Bring mixture to a boil and add chicken drumettes. Once mixture begins to boil again, reduce heat to medium-low, and partially cover pot with a lid tilted to allow steam to escape. Simmer until chicken is no longer pink in the center and teriyaki sauce is thickened, at least 1 hour.

In a small bowl, combine the remaining ingredients; pour over chicken. , Cover and cook on low for 3-4 hours or until meat is tender. Strain cooking liquid, reserving pineapple. Serve pineapple with the chicken. Freeze option: Cool chicken mixture. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet until a thermometer inserted in chicken reads 165°, stirring occasionally and adding a little water if necessary.

POLYNESIAN HONEY-PINEAPPLE CHICKEN
I have submitted this recipe as it was originally written however I prepare it slightly different. The original recipe calls for the marinade that the chicken was in to be used as the basting sauce but I am not comfortable with that. I double the marinade & after it has cooled I use 3/4 of the sauce to marinate the meat & reserve 1/4 of the marinade to use as the basting sauce while cooking. This marinade also works on pork. Prep times does not include marinating.

- For marinade, in sauce pan combine pineapple juice, honey, worcestershire sauce, garlic, ginger& salt.
- Bring to a boil, reduce heat.
- Simmer uncovered, stirring occasionally, about 15 minutes or until marinade mixture is reduced 1/4 (approx.).
- Cool to room temperature.
- Place chicken pieces in a plastic bag or shallow dish.
- Pour in marinade& marinate chicken at least 6 hours or up to 24 hours.
- Drain chicken pieces, reserving marinade.
- Cook chicken on covered medium heat grill (indirect heat) for 40 to 45 minutes or until chicken is tender& no longer pink, brushing occasionally with reserved marinade for the first 30 minutes.
