1 pound dried split peas
1 ham hock
3 tablespoons unsalted butter
1 cup finely chopped yellow onions
1/2 cup finely chopped celery
1/2 cup finely chopped carrots
2 teaspoons minced garlic
1 pound Smithfield ham, chopped
1 teaspoon salt
3/4 teaspoon freshly ground black pepper
1/4 teaspoon crushed red pepper flakes
8 cups water
1 bay leaf
2 teaspoons fresh thyme
Parmesan Truffled Potato Chips, recipe follows
2 pounds red bliss potatoes, scrubbed well and patted dry, skins left on
4 cups vegetable oil, for frying
1/4 cup grated Parmesan
1 tablespoon truffle oil
1 teaspoon salt
1 teaspoon freshly ground black pepper

Steps:

  • Place the peas in a large pot or bowl, cover with water by 2 inches and soak 8 hours or overnight. Drain the peas and set aside.
  • Score the ham hock. Place in a pot, cover with water and bring to a boil. Reduce heat and let simmer for 1 hour. Drain and set aside.
  • In a large pot, melt the butter over medium-high heat. Add the onions and cook, stirring, for 2 minutes. Add the celery and carrots and cook, stirring, until just soft, about 3 minutes. Add the garlic and cook, stirring, for 30 seconds.
  • Add the ham hock and ham and cook, stirring, until beginning to brown. Add the drained peas, salt, pepper, and pepper flakes, and cook, stirring for 2 minutes. Add 8 cups of water, the bay leaf and thyme, and cook, stirring occasionally, until the peas are tender, about 1 hour. (Add more water as needed, if the soup becomes too thick or dry.)
  • Remove the bay leaf and discard. Adjust the seasoning, to taste, and serve immediately with Parmesan Truffled Chips on top.
  • Using a mandolin or very sharp, heavy knife, slice the potatoes into rounds as thin as possible, and place in a large bowl of water to prevent discoloration.
  • Heat the oil in a large, heavy pot to between 340 and 350 degrees F.
  • Pat the potatoes completely dry. Add to the oil in batches and cook until golden brown, stirring with a long handled spoon to turn and cook evenly, about 2 minutes. Drain on paper towels and place in a large bowl. Toss with the cheese, truffle oil, salt, and pepper. Serve immediately.

1 c split peas, picked through and rinsed
1 small onion, diced
1 medium carrot, chopped
1 stalk(s) celery, chopped
1 Tbsp crumbled bacon bits (the real kind)
1 1/2 c chicken stock or water
1 sprig(s) fresh thyme (or 1/2 tsp. dried)
1 bay leaf
1 medium potato, diced
4 oz ham, diced (or smoked pork chop- if there's a bone, cut off the meat and put the bone in the soup while it simmers)
1/2 c half and half (or evaporated milk) optional
salt and pepper, to taste

Steps:

  • 1. Spray your pan with Pam® or similar.Add the onion, carrots, and celery to the pan and cook for 3 to 4 minutes until the onion is soft but not brown. Add the bacon crumbles to the pan with the water.
  • 2. Add the peas to the pan with the thyme, bay leaves, potato, and ham or pork bone if you have one and bring to a boil. Lower the heat, cover, and simmer for 1 hour. (Check to see if more water needs to be added.)
  • 3. Remove the thyme, bay leaves and bone. Process the soup with an immersion blender or food processor until desired texture. Return the mixture to the pot, add half and half, if using, and the diced ham/smoked pork. Reheat gently. Season with salt and black pepper. Ladle into soup bowls and serve.

1 large chopped yellow onion
10 galric cloves
10 sprigs fresh thyme
2 sprigs fresh rosemary
1 bay leaf
2 pounds pork tenderloin
4 cups olive oil
sea salt and pepper to taste
1 tablespoon unsalted butter
1 peeled small diced yellow onion
4 peeled and medium diced carrots
4 stalks medium diced celery
4 finely minced cloves of garlic
3/4 cup chardonnay wine
2 cups peas
2 cups split peas
8 cups chicken stock
2 medium diced russet potatoes
sea salt and pepper to taste
optional crème fraiche for garnish

Steps:

  • Pork: Preheat the oven to 300°.
  • Add the onions, garlic, thyme, rosemary, and bay leaf to a medium size sauce pot.
  • Next, each pork tenderloin in half and season well on all sides with salt and pepper, and add it to the pot with the vegetables and herbs.
  • Add in oil and make sure the pork is submerged.
  • Cook in the oven for 4 hours.
  • Remove from the oven and add each pork tenderloin to a large frying pan over medium-high heat until golden brown on each side, about 2-3 minutes per side.
  • Shred the pork using 2 forks. Note: Strain the confit fat and keep it in the refrigerator for up to 1 month for other confit recipes.
  • Soup: With about 2 hours left in the cooking process of the pork confit, add the butter to a large pot over medium heat along with the onions, carrots, celery, and garlic, and sweat for about 10 minutes or until the vegetables are slightly rendered.
  • Add in the peas, split peas, and chicken stock and simmer over low heat for about 90 minutes or until the peas have broken down and the soup is thick.
  • With about 20 minutes left in the cooking process, add the potatoes to the soup and cook until tender.
  • Finish by seasoning with salt and pepper and add the shredded pork. Note: I only used half of the amount of shredded pork confit but you can absolutely use it all. It is delicious to eat by itself or serve as its own meal.
  • Pour some into a bowl and add on optional crème Fraiche garnish and serve.

2 tablespoons (1/4 stick) butter
1 large onion, chopped
1 cup chopped celery
1 cup chopped peeled carrots
1 1/2 pounds smoked pork hocks
2 teaspoons dried leaf marjoram
1 1/2 cups green split peas
8 cups water

Steps:

  • Melt butter in heavy large pot or Dutch oven over medium-high heat. Add onion, celery and carrots. Sauté until vegetables begin to soften, about 8 minutes. Add pork and marjoram; stir 1 minute. Add peas, then water, and bring to boil. Reduce heat to medium-low. Partially cover pot; simmer soup until pork and vegetables are tender peas are falling apart, stirring often, about 1 hour and 10 minutes.
  • Transfer hocks to bowl. Puree 5 cups soup in batches in blender. Return to pot. Cut pork off bones. Dice pork; return pork to soup. Season with salt and pepper. (Can be made 1 day ahead. Refrigerate until cold, then cover. Rewarm before serving.)

10 cups water
2 pig's feet, split
1/2 cup chopped onion
1 cup chopped celery
1/2 cup chopped carrot
1 medium potato, peeled, chopped
1 bay leaf

1/4 teaspoon crumbled dried thyme
1 dash cayenne pepper
2 tablespoons butter
2 tablespoons flour
2 slices thick white bread
2 tablespoons butter or 2 tablespoons margarine

Steps:

  • Rinse peas; pick over. Place in bowl; cover with water. Soak overnight. Drain any remaining liquid from peas; add water to make 10 cups of liquid. Combine peas and liquid in Dutch oven.
  • Rinse pig's feet under running water; add to peas. Bring to boil. Skim any foam. Reduce heat to low; cook 1 1/2 to 2 hours. Remove pigs' feet. Add vegetables and seasonings; cook 1 hour more. When pigs' feet have cooled, remove skin and bones; chop meat. Puree soup in electric blender or pass through a sieve. Add chopped meat.
  • Melt butter in small saucepan. Add flour; cook until bubbly. Add small amount of soup to flour mixture, stirring well. Pour back into soup kettle. Stir well; cook 5 minutes.
  • Next make croutons. Remove crusts from bread; cut into 1/2 inch cubes. Melt butter in heavy skillet; fry bread cubes over moderate heat until golden. Drain; serve sprinkled on soup. Makes 6 to 8 servings.

A variation of pea soup is part of many cultures. In the 18th and 19th centuries, split pea soup played a prominent role in the British and Irish diets. Sailors loved eating peas, because they were inexpensive and stored easily in dried form. Both are still true today, which means peas remain a great staple food in modern times.

2 cups green split peas
8 cups low-sodium vegetable broth or water
2 cups cauliflower, chopped
2 carrots, diced
1 onion, diced
1 tablespoon cumin
1 tablespoon coriander
1 tablespoon garlic granules
½ teaspoon curry
½ teaspoon garam masala

Steps:

  • In a large soup pot with a lid, bring the split peas and the vegetable broth or water to a boil. Then reduce heat to medium-low and continue to simmer for 1 hour, stirring occasionally.
  • In a sauté pan, sweat* the cauliflower, carrots, and onions until the cauliflower starts to brown and the onions become translucent, stirring frequently. If the veggies start to stick to the bottom of the pan, add a little water as needed. Then add the spices and cook for a couple more minutes, stirring frequently. Pour the veggies into the split peas.
  • Let the soup simmer for 30 minutes, or until it reaches your desired consistency. The longer the soup cooks, the more the split peas break down and the creamier the soup becomes. If it gets too thick, you can add more water or vegetable broth. Note: Sweating is a mix of sautéing and steaming. The idea is that the veggies "sweat" (release some of their natural water), creating enough moisture to soften and steam them in their own juices without adding any liquid. To sweat cut veggies, place them in a dry sauté pan over medium heat. Stir frequently until the desired consistency is reached, covering the pan when not stirring. If the veggies start to stick to the bottom of the pan, add a little water or vegetable broth. You can also turn down the heat.

1 pound dry split peas
8 ounces diced bacon
1 cup onion, chopped
2 chopped celery ribs
2 quarts water
2 medium potatoes, peeled, diced
Kosher salt, to taste
1/4 teaspoon coarsely ground pepper
3 chicken or beef bouillon cubes (or equivalent base or granules)
1 bay leaf
1 cup half-and-half
Freshly ground black pepper, to taste

Steps:

  • Rinse split peas in cold water, pick over and discard any discolored peas or small stones. Set aside.
  • In a Dutch oven or 6-quart pan over medium heat, cook bacon until crisp .
  • Remove bacon with a slotted spoon to paper towels to drain. Refrigerate until later, for garnish.
  • In the bacon drippings over medium heat, cook the onion and celery until tender and lightly browned, about 12 to 15 minutes.
  • Add the split peas, water, potatoes, salt, pepper, bouillon, and bay leaf.
  • Bring to a boil over high heat, then reduce heat to low.
  • Cover and let simmer for 45 minutes, or until peas are soft. Stir occasionally.
  • Discard bay leaf.
  • Carefully purée the hot pea soup in batches , filling the blender no more than 1/3 to 1/2 full each time. Make sure cover is secure when blending the hot mixture.
  • Pour blended mixture into a bowl while blending subsequent batches.
  • Return the mixture to the Dutch oven and stir in the half-and-half.
  • Cook over medium heat until hot, but do not boil.
  • Taste and season with salt and pepper.
  • Sprinkle the reserved bacon on top of the soup just before serving.

Place ham bone in a 4-qt. slow cooker. Add peas, celery, carrot and onion. Combine water, beer and mustard; pour over vegetables. Cook, covered, on high 5-6 hours or until peas are tender. Remove ham bone from soup. Cool slightly, trim away fat and remove meat from bone; discard fat and bone. Cut meat into bite-sized pieces; return to slow cooker.
