PAPPARDELLE WITH MIXED WILD MUSHROOMS

These days there seems to be more and more of a choice of wild mushrooms in the supermarkets. They are not always stored and displayed as I think they should be - I don't like sweaty mushrooms in plastic containers - but I'm sure things will get better. Even as a chef I am surprised to see changerelles and black trumpets popping up throughout the year, as well as the more predictable cremini, shiitake, morel, button and oyster mushrooms. There is a lot of choice.

Number Of Ingredients 10

9 - 11 ounces mushrooms (I would probably buy around 14 ounces of mushrooms, as you have to trim a bit off)
3 tablespoons olive oil
1 clove of garlic, finely chopped
1 - 2 small dried red chillies, pounded or very finely chopped
salt and freshly ground black pepper
juice of 1/2 lemon
1 pound pappardelle
a small handful of grated Parmesan cheese
1 handfully of fresh flat-leaf parsley, roughly chopped
2 ounces unsalted butter

Steps:

  • Brush off any dirt from the mushrooms with a pastry brush or a dish towel. Slice the mushrooms thinly, but tear girolles, chanterelles and blewits in half. Put the olive oil in a very hot frying pan and add the mushrooms. Let them fry fast, tossing once or twice, then add the garlic and chilli with a pinch of salt (it is very important to season mushrooms lightly, as a little really brings out the flavor). Continue to fry fast for 4-5 minutes, tossing regularly. Then turn the heat off and squeeze in the lemon juice. Toss and season to taste.
  • Meanwhile cook the pasta in boiling salted water until al dente. Add to the mushrooms, with the Parmesan, parsley and butter. Toss gently, coating the pasta with the mushrooms and their flavor. Serve, scraping out all of the last bits of mushroom from the pan, and sprinkle with a little extra parsley and Parmesan.

1/4 cup (1/2 stick) butter
4 large garlic cloves, minced
3 shallots, chopped
12 ounces shiitake mushrooms, stemmed, quartered
12 ounces crimini mushrooms, quartered
12 ounces chanterelle or crimini mushrooms, quartered
1 1/4 cups dry white wine
1 1/2 cups whipping cream
2 cups frozen peas
2/3 cup chopped fresh parsley
1 1/4 pounds farfalle (bow-tie pasta)

Steps:

  • Melt butter in large deep skillet over medium-high heat. Add garlic and shallots; sauté 1 minute. Add shiitake and crimini mushrooms and sauté 5 minutes. Add chanterelles; sauté until all mushrooms are tender, about 5 minutes longer. Add wine and boil until reduced by half, about 5 minutes. Add cream and simmer until liquid is reduced to sauce consistency, stirring occasionally, about 5 minutes. Stir in peas and parsley. Remove from heat. Season sauce with salt and pepper. Cover to keep warm.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain, reserving 1 cup pasta cooking liquid. Return pasta to pot.
  • Add mushroom sauce to pasta and toss to coat, moistening with reserved pasta cooking liquid, if necessary.

9 to 11 ounces (250 to 300 grams) wild mixed mushrooms (I would probably buy around 14 ounces (400 grams) mushrooms, as you have to trim a bit off)
3 tablespoons olive oil

A small handful grated Parmesan

  • Brush off any dirt from the mushrooms with a pastry brush or a tea towel. Slice the mushrooms thinly, but tear any larger mushrooms, like girolles, chanterelles. and blewits in half. Put the olive oil in a very hot frying pan, and add the mushrooms. Let them fry fast, tossing once or twice, then add the garlic and chile with a pinch of salt (it is very important to season mushrooms slightly, as it really brings out the flavor). "To celebrate my birthday, my husband took me to Assaggio, one of my favorite restaurants here," writes Christy Wall of Portland, Oregon. "As I always do, I ordered the bow-tie pasta with wild mushrooms, butternut squash, spinach, garlic and olive oil."

4 tablespoons olive oil
2 1/2 pounds butternut squash, peeled, seeded, cut into 3/4-inch pieces (about 5 cups)
1/2 cup water
8 ounces small portobello mushrooms (portobellini), gills scraped, cut into 1/2-inch pieces
8 ounces shiitake mushrooms, stemmed, cut into 1/2-inch pieces
3 large garlic cloves, chopped
1 teaspoon chopped fresh rosemary
1/3 cup dry white wine
1/3 cup whipping cream
1/8 teaspoon ground nutmeg
1 pound farfalle (bow-tie) pasta
1 10-ounce bag spinach leaves
2/3 cup grated Parmesan cheese

Steps:

  • Heat 2 tablespoons olive oil in heavy large nonstick skillet over medium-high heat. Add butternut squash and sauté until beginning to brown, about 6 minutes. Add 1/2 cup water, cover and cook until just tender, stirring occasionally, about 8 minutes. Using slotted spoon, transfer sautéed squash to bowl.
  • Add remaining 2 tablespoons olive oil to same skillet over medium-high heat. Add all mushrooms, garlic and rosemary and sauté until tender, stirring occasionally, about 8 minutes. Add white wine and bring to boil, scraping up browned bits. Remove from heat. Stir in whipping cream and nutmeg.
  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain, reserving 1 cup pasta cooking water. Return pasta to pot. Add squash, mushroom sauce, spinach and Parmesan cheese. Toss over medium heat until spinach wilts, pasta is heated through and sauce coats pasta, adding reserved cooking water by 1/4 cupfuls if pasta is dry. Season with salt and pepper; serve.

1 tablespoon butter
12 ounces mushrooms, presliced exotic
1/2 cup onion, chopped

1/4 teaspoon fresh ground black pepper
1/4 cup dry white wine
2/3 cup whipping cream
1/2 cup parmigiano-reggiano cheese, grated
2 tablespoons fresh parsley, chopped

Steps:

  • Cook pasta according to package directions, omitting salt, drain.
  • In a large nonstick skillet, melt the butter over medium high heat.
  • Add the mushrooms,onion, shallots, garlic, 1 tsp salt, and black pepper.
  • Cook for 12 minutes or until liquid evaporates and mushrooms are tender, stirring occasionally.
  • Add wine, cook 2 more minutes or until liquid evaporates, stirring occasionally.
  • Remove from heat.
  • Add pasta, cream, cheese, and parsley. Toss gently to coat.
  • Stir in remaining salt.

1 ounce dried porcini mushrooms
1/2 cup warm water
1/2 tablespoon extra-virgin olive oil
1/2 cup thinly sliced red onion
1 cup thinly sliced fennel bulb
2 tablespoons heavy cream
Salt and freshly ground black pepper
1/2 pound farfalle (bow-tie pasta)
1 tablespoon finely minced fennel tops
2 tablespoons freshly grated Parmesan cheese

Steps:

  • Place the mushrooms in a bowl, add the water and set aside to soak for 30 minutes. Start bringing a large pot of water to a boil for the pasta.
  • Heat the oil in a large, heavy skillet. Add the onion and fennel and cook over medium-low heat until the vegetables just begin to brown.
  • While the vegetables are cooking, drain the mushrooms, reserving the liquid. Dry the mushrooms on a paper towel, slice them and add them to the pan. When they are heated through, strain and add the mushroom liquid. Cook over high heat for several minutes, until the liquid just moistens the vegetables. Stir in the cream and remove the pan from the heat. Season to taste with salt and pepper.
  • When the water has come to a boil add a generous pinch of salt and the farfalle. Cook the farfalle until it is al dente, about six minutes. Drain it thoroughly, then add it to the pan with the mushrooms and fennel.
  • Cook the farfalle with the vegetables, stirring gently, two to three minutes, until the ingredients are well blended and the cream has thickened and clings to the pasta. Stir in the fennel tops and cheese and serve.

4 slices pancetta (Italian bacon)
2 cloves garlic, minced (green part removed)
3 tablespoons unsalted butter
1 tablespoon olive oil
1 ounce dried porcini mushrooms, soaked in hot water for 20 minutes, drained and rinsed
1/4 pound wild mushrooms like crimini, portobello, chanterelle, cleaned of grit
1 pound asparagus
1/4 pound shelled peas
Coarse salt and freshly ground pepper to taste
1 cup heavy cream
1 cup basil leaves, shredded
1 pound farfalle (bow-tie pasta)
Freshly grated Parmesan

Steps:

  • Place pancetta in small frying pan and cook over medium heat until crisp. Drain on paper towels.
  • Soften garlic in two tablespoons butter and the olive oil in a medium-size pan. Coarsely chop porcini and wild mushrooms and add to the pan. Cook for 10 minutes, stirring frequently, over low to medium heat.
  • Meanwhile, cut asparagus into half-inch pieces and blanch. Add with the peas to mushrooms; season to taste.
  • Pour in cream and reduce over high heat until it is thickened. Add basil leaves and toss. Correct seasoning. Crumble pancetta into little pieces and add.
  • Meanwhile, cook farfalle in six quarts boiling salted water until al dente (it will take about 10 to 15 minutes). Drain, place in heated bowl and toss with one tablespoon butter. Add sauce and a little grated cheese and toss. Serve immediately, with more Parmesan passed separately.

1 head garlic
1/4 cup extra virgin olive oil
4 plum tomatoes, quartered
salt & freshly ground black pepper
1/4 cup dried funghi porcini (scant 1/2 ounce)
1/2 cup boiling water
1/2 lb assorted fresh mushrooms, such as chanterelles and stemmed shiitakes
1 large shallot, minced
2 tablespoons dry marsala
1/2 lb farfalle pasta
1 1/2 tablespoons unsalted butter
1/2 cup shaved parmesan cheese
6 basil leaves, finely shredded

Steps:

  • Preheat the oven to 425°. Cut 1 inch off the top of the garlic and set the head on a piece of aluminum foil, cut side up.
  • Pour 1 teaspoon of the olive oil over the cut garlic, wrap it in the foil and roast for about 1 hour or until very tender.
  • Squeeze the roasted garlic from the skins into a small bowl and mash well. Cover with plastic wrap.
  • Meanwhile, on a rimmed baking sheet, toss the tomato wedges with 2 teaspoons of the olive oil and season with salt and pepper.
  • Lay the tomato wedges on their sides and roast for about 30 minutes, or until tender and browned on the bottom. Using a spatula, transfer the tomatoes to a plate.
  • In a small heatproof bowl, cover the porcini with the boiling water and set aside to soften, about 20 minutes.
  • Remove the mushrooms from the liquid and rinse them under running water to remove any grit; reserve the liquid.
  • In a large skillet, heat 2 tablespoons of the olive oil. Add the fresh mushrooms in an even layer, season with salt and pepper and cook over moderately high heat, without stirring, until deep brown on the bottom, about 4 minutes.
  • Stir the mushrooms and continue to cook until tender, about 4 minutes longer. Transfer to a plate.
  • Add the remaining 1 tablespoon of olive oil and the shallot to the skillet and cook over moderate heat until translucent, about 3 minutes. Add the Marsala and simmer until reduced by half.
  • Pour in the reserved mushroom soaking liquid, stopping when you reach the grit at the bottom. Add the porcini and the roasted garlic puree.
  • Cook the farfalle in a large pot of boiling salted water until al dente, about 10 minutes.
  • Meanwhile, rewarm the roasted tomatoes and the mushroom sauce. Add the sautéed fresh mushrooms to the sauce, swirl in 1 tablespoon of the butter and season with salt and pepper.
  • Drain the pasta and toss it with the remaining 1/2 tablespoon of butter. Add the mushroom sauce and toss well.
  • Mound the pasta in 2 shallow bowls and top with the roasted tomato wedges, Parmesan shavings and basil.
