- In a large skillet, saute onions in butter until crisp-tender. Transfer to a 5-qt. slow cooker. Add the broth, Worcestershire sauce and bay leaves., Cover and cook on low for 5-7 hours or until the onions are tender. Discard bay leaves., Ladle soup into ovenproof bowls. Top each with a slice of toast; sprinkle with desired amount of cheese. Place bowls on a baking sheet. Broil for 2-3 minutes or until cheese is lightly golden.

- Heat the olive oil in a large skillet over high heat. Add garlic and cook briefly to release aroma. Add onions, season with salt and cook for about 5 minutes stirring often. Reduce heat to low and cook for about 15 minutes, stirring occasionally until the onions are golden brown.
- Add the thyme, vinegar, and beer. Reduce beer by half and add the beef stock. Bring to a simmer and cook for 10 more minutes.
- Preheat the broiler. Transfer soup to an ovenproof serving dish or individual ovenproof soup bowls. Top with toasted bread slices and sliced Cheddar. Broil until cheese melts and starts to brown slightly. Serve piping hot.
IRISH-STYLE POTATO ONION SOUP
Steps:
- Gather the ingredients.
- Heat a 6- to 8-quart stockpot, add 4 tablespoons of the butter and onions, and cook gently. Do not let the onions brown. Add the peeled and sliced potatoes, milk, and chicken stock . Add 1/4 cup of the chives, celery seeds, and thyme . Cover and cook gently for about an hour.
- In a small saucepan melt remaining 2 tablespoons butter and whisk in the flour. Let the roux bubble for 2 minutes on medium-low heat, stirring constantly. Thicken the stock with the roux, whisking carefully to avoid lumps. Cook for 5 to 10 minutes and then puree together in a food blender .
- Add the cream and gently reheat, but do not boil. Season with salt and pepper . Serve with remaining 1/4 cup chopped fresh chives and the crisply fried bacon as garnishes.

- In a large pot, over medium heat, add the olive oil and onions. Cook until the onions are just cooked through - about 3-5 minutes.
- Stir in the garlic, leeks, cabbage, and kale. Continue to cook until the cabbage begins to wilt. This will take 7-8 minutes.
- Next, add the thyme, salt, and black pepper. Stir into the vegetables.
- Pour in the vegetable broth. Stir to combine. Place a lid on the pot and cook for 15 minutes.
- Add the potatoes and stir to combine. Place the lid back on the pot and cook for 20 minutes or until potatoes are cooked through.
- Once the potatoes are cooked, add in the green onions and the cream. Stir well to combine. Turn off the heat and allow soup to sit for 3-5 minutes.

- Wash leeks well under running water, separating layers with your fingers, as they can be very sandy. Slice and check over again for sand.
- In pot, melt butter over medium heat. Add sliced leeks, onion & garlic; cook 8 minutes. Add sugar and pepper. Reduce heat to low; cook, stirring 25-30 minutes. Add whiskey; cook scraping up browned bits, about 3 more minutes. Add broth and simmer 15 minutes.

- On floured surface, unfold pastry. With 3" shamrock cookie cutter, sharply cut 6 shamrocks. Place on ungreased baking sheet. Beat egg with 1 T. of water and brush over shamrocks. Freeze 20 minutes. Meanwhile, preheat oven to 375; remove shamrocks from freezer and bake 15 minutes. Cool on baking sheet on rack.
- NOTE: If you have no shamrock cookie cutter, use a 1" round sharp cookie cutter. Using firm downward pressure, cut 18 circles from pastry. (Don't twist) Use a knife to cut 6 1-1/2" x 1/4" strips for stems. On ungreased baking sheet, form shamrocks by wetting edges of one circle and attaching one strip for the stem. Lay 2 more circles, edges touching, slightly overlapping first circle. Repeat with remaining circles and stems to form 5 more shamrocks. Brush with egg wash and proceed as directed above.
- To serve, divide hot soup among six 1 cup heated bowls. Sprinkle with finely grated cheddar or any favorite cheese until it melts slightly. Float puff pastry shamrock on top and serve.

IRISH COLCANNON SOUP
Inspired by the Irish dish colcannon, this soup is hearty, comforting and delicious. Featuring leeks, cabbage and potatoes, it's filling enough for a meal!

- Prepare the leeks: Cut the root end from the leek and discard. Cut off the dark green tops and reserve to use for another purpose. With the remaining white and light green piece, cut down the leek lengthwise, into two parts. With each part, slice into thin slices. Place into a fine-mesh strainer and using your fingers, separate the leek slices into individual pieces, then rinse well with cold water. Set aside to drain until needed. You will need one or two leeks, depending on their size.
- Prepare the cabbage: Cut cabbage into quarters and remove the core. With each quarter, slice into thin slices, and then in half again if necessary, into thin slices no longer than 2 inches long. Remove any tough pieces. You will only need about 1/2 a head of cabbage. Set aside until needed.
- In a large pot, over medium heat, cook the bacon until crisp, about 5 minutes. Remove bacon to a paper-towel lined bowl, leaving the rendered fat in the pot and the heat on under the pot.
- Add the onions, leeks and cabbage to the pot and cook, stirring regularly, over medium heat until the vegetables are tender, about 10 minutes. Add the garlic and cook, stirring, an additional 30 seconds or so. Stir in the flour and cook, stirring, for 1 minute.
- Add the chicken broth and potatoes and bring mixture to a boil over medium-high heat. Reduce heat to medium-low and simmer until the potatoes are tender, about 15 minutes. If soup seems like it doesn't have enough liquid, add a bit more chicken broth.
- When potatoes are tender, remove pot from heat and stir in heavy cream. Taste, season with salt and pepper, as needed. Spoon soup into bowls and garnish with bacon and green onion.

- Place a large saucepan over medium heat and add the butter and olive oil.
- Once the butter has melted add the onions and cook until completely caramelized and golden brown, stirring from time to time for about 1 hour. Also, add a bit of water or Guinness to deglaze the pan as needed to prevent burning.
- Next, add the garlic, brown sugar, and thyme. Cook until fragrant, about a minute.
- Add the butter, let it melt, sprinkle and mix in the flour and let it cook for 2-4 minutes.
- Add the beer and deglaze the pan.

- This is my Irish version of French onion soup. I decided to adapt the recipe when I moved back to Ireland and use what was available to me: cheese from Gubbeen and cider from Con Trass’s apple farm. A roaring fire and a glass of red wine on a winter’s night doesn’t ask for anything more. 1. Melt the butter in a heavy-bottomed saucepan, add the onions and season very well. Sauté them gently, turning them around in the butter, until they start to soften (about 5 minutes). Cover with a lid and sweat the onions until they are very soft and starting to caramelise. This can take up to 50 minutes. You might need to add a splash of water every so often and turn the onions over in the buttery juices.
- 2. Take the lid off and turn the heat up to medium so the juices can evaporate and the onions caramelise.
- 3. When the onions are dark add the cider, stock and thyme and bring to the boil. Simmer for 10 minutes. Note: The soup can be made to this stage, cooled and stored until needed. Bring back to the boil and finish off as below.
- 4. Ladle the soup into bowls, put a slice of toast on top of each bowl of soup. Lay the slices of cheese on top and heat under the grill until golden and bubbling.

- Melt 1 stick of butter (1/2 cup) in a large heavy pot on medium-low heat. Once the butter has melted, pile on the onions, a sprinkle of pepper and 2 bay leaves then stirred. Cover the pot and cook the buttery onions for 20 minutes, stirring occasionally.
- After 20 minutes, give the onions a quick stir and placed the pot in the oven for one hour. Place the cover on top but leave it open a bit so the onions brown nicely.
- Stir the onions half way through cooking. If you want your onions to be even darker after 1 hour, just give them a stir and continue cooking for a bit. You can also place them on the stove to saute for another 10-15 minutes.
