It's the season of cookies, but that doesn't mean you need hours of effort. Discover how to make snickerdoodles using Betty Crocker™ sugar cookie mix for a cookie treat that brightens any dessert tray. Once you mix up the dough (super easy), roll the dough balls in cinnamon and sugar. If you'd like to make sure your Christmas snickerdoodles are decorated for the season, use Betty Crocker™ red and green decorating icings.

1 pouch (17.5 oz) Betty Crocker™ sugar cookie mix
Butter and egg called for on cookie mix pouch for drop cookies
3 tablespoons sugar
1 1/2 teaspoons ground cinnamon
Betty Crocker™ red and green decorating icings, if desired

Steps:

  • Heat oven to 375°F. In large bowl, mix cookie mix, softened butter and egg with spoon until soft dough forms.
  • Shape dough into 36 (1 1/4-inch) balls. In small bowl, mix sugar and cinnamon. Roll balls in sugar-cinnamon mixture. On ungreased cookie sheets, place balls 2 inches apart. Discard any remaining sugar-cinnamon mixture after rolling balls.
  • Bake 7 to 9 minutes or until edges are set. Cool 1 minute. Remove from cookie sheets to cooling rack. Cool completely, about 30 minutes. Decorate as desired using icings. Store cookies covered in airtight container. If decorating with icings, once icings are set, store cookies loosely covered in a single layer.

1 pouch (1 lb 1.5 oz) Betty Crocker™ snickerdoodle cookie mix
Butter, water and egg called for on cookie mix pouch
4 oz cream cheese, softened
14 oz vanilla-flavored candy coating (almond bark)

Steps:

  • Heat oven to 375°F. Set aside 1 tablespoon cinnamon sugar mixture from packet. Make drop cookies as directed on pouch. Cool completely, at least 15 minutes.
  • In food processor, process half of the cookies to fine crumbs. Remove and set aside; continue to process remaining cookies to fine crumbs. Mix all of cookie crumb mixture in food processor. Add cream cheese. Process until well combined and mixture can be pressed into a ball, 1 to 2 minutes. Shape cookie mixture into 42 (1 1/4-inch) balls; place on cookie sheet lined with waxed paper. Refrigerate 15 minutes.
  • In medium bowl, microwave candy coating uncovered on High 60 to 90 seconds or until it can be stirred smooth.
  • Remove half of the cookie balls from refrigerator. Using 2 forks, dip and roll chilled cookie balls, one at a time, in coating. Return to lined cookie sheet; immediately sprinkle top with reserved cinnamon sugar. If coating has cooled too much, reheat. Repeat with second half of cookie balls. Store covered in refrigerator.

2 3/4 cups Gold Medal™ all-purpose flour
1 1/2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons ground cinnamon
1 cup butter, softened
1 1/3 cups granulated sugar
2 eggs
1/4 cup green sanding sugar
1/4 cup red sanding sugar

Steps:

  • Heat oven to 400°F. Line cookie sheets with cooking parchment paper.
  • In medium bowl, mix flour, cream of tartar, baking soda, salt and 1 teaspoon of the cinnamon; set aside. In large bowl, beat butter and granulated sugar with electric mixer on medium speed until light and fluffy. Beat in eggs. On low speed, beat in flour mixture until blended.
  • In small bowl, mix green sanding sugar and 1/2 teaspoon cinnamon. In another small bowl, mix red sanding sugar and remaining 1/2 teaspoon cinnamon. Shape dough into 1 1/4-inch balls. Roll half of the balls in green sugar mixture; roll remaining balls in red sugar mixture. On cookie sheets, place balls 2 inches apart.
  • Bake 12 to 14 minutes or until set. Cool 2 minutes; remove from cookie sheets to cooling racks.

Steps:

  • Preheat oven to 400°F.
  • Mix 11/2 cups sugar, margarine, cream cheese and eggs in a bowl. Stir in flour, cream of tartar, baking soda and salt.
  • Cover and refrigerate dough for one hour.

1 pkg betty crocker® supermoist® white cake mix
1/2 c butter or margarine, melted (add a little at a time)
1 egg
2 Tbsp sugar (i use a little more)
1 tsp ground cinnamon (i use a little more)

Steps:

  • 1. Heat oven to 350°F (325°F for dark or nonstick cookie sheets). Mix cake mix, butter and egg in large bowl with spoon until dough forms (some dry mix will remain). TIP: be sure to add butter a little at a time so dough doesn't get too sticky to handle.
  • 2. Shape dough into 1-inch balls. Mix sugar and cinnamon in small bowl. Roll balls in cinnamon-sugar mixture. Place about 2 inches apart on ungreased cookie sheet. TIP: for Super Snickerdoodles, shape dough into 1 1/2-inch balls and place them 3 inches apart on the cookie sheet; bake 12 to 14 minutes. You'll get about 26 large cookies (regular size yields about 30, even smaller you get about 36).

I found this recipe on the Betty Crocker website and decided to give it a go for a church bake sale. They were AWESOME! They dough consists of three ingredients and they cinnamon sugar coating is just two. They come together easily and make enough to feed a crowd. I hope you like them as much as we did!
