These are wonderful to serve as an appetizer and I have done so many times at my get togethers, everone loves these! to save even more time you can purchase the ready-made small tart shells and the recipe may be doubled if desired.

Number Of Ingredients 9

2 frozen 9-inch pie shells (thawed)
3 slices bacon
1/4 cup chopped green onion
2 eggs
1/2 cup half-and-half cream
1/3 cup grated parmesan cheese
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
1 (9 ounce) package frozen spinach, thawed and well drained (use your hands to squeeze out any extra moisture)

Steps:

  • Set the oven to 375 degrees.
  • On a lightly floured surface, with a 1-1/2-inch biscuit cutter, cut out 12 rounds from the thawed pie crust.
  • Press each of the rounds into the bottom, and up the sides of ungreased mini muffin cups.
  • Repeat with the second pie crust.
  • In a skillet, cook the bacon until brown and very crisp; drain.
  • Add in the onions to the same skillet with the bacon drippings, cook for 5 minutes, or until tender, stirring constantly; drain.
  • Place the onions in a medium bowl.
  • Crumble the bacon into small pieces, and add in with the cooked green onion.
  • Add in the eggs to the bacon and onions; beat well.
  • Stir in the cream, salt, nutmeg and the Parmesan cheese.
  • Add in the squeezed spinach; mix well to combine.
  • Divide the mixture evenly into crust-lined cups.
  • Bake for 20-25 minutes, or until puffed and golden brown.
  • Cool in pan on wire rack for 10 minutes.
  • Loosen quiches from pan with tip of knife.
  • Serve warm or cool.
  • Store in the refrigerator.

SPINACH QUICHE

Made with heavy cream and Gruyère, this rich spinach quiche is classic French.

1 9-inch deep dish frozen pie crust
1 tablespoon butter
½ cup thinly sliced shallots
4 large eggs
1¼ cups heavy cream
Pinch ground nutmeg
¾ teaspoon salt
⅛ teaspoon cayenne pepper
1 cup (4 oz) finely shredded Gruyère, packed
1 10-ounce package frozen chopped spinach, defrosted and wrung free of water

Steps:

  • Preheat the oven to 400°F and set a rack in the middle position. Remove the pie crust from freezer and thaw until just soft enough to easily prick with a fork, about 10 minutes. Prick the bottom and sides all over with a fork (pricking about an inch apart). Bake until fully cooked and lightly golden, 10 to 15 minutes. (Keep an eye on it...if it puffs up while cooking, gently prick it with a fork so it will deflate.) Don't worry if the crust cracks while baking; see my note below on how to fix it before proceeding. Set aside and turn oven down to 325°F.
  • Heat the butter in a small skillet over medium-low heat. Cook the shallots until soft and translucent, about 8 minutes. Do not brown. Set aside to cool.
  • In a medium bowl, whisk together eggs, heavy cream, nutmeg, salt and cayenne pepper.
  • Place the cooked pie crust on a baking sheet (this makes it easy to move in and out of oven). Spread the shallots over the bottom of the cooked crust, then sprinkle the shredded Gruyere over top. Scatter the spinach evenly over cheese, breaking up the clumps as best you can. Pour the egg and cream mixture over top.
  • Bake at 325°F degrees for 50 to 55 minutes until the custard is set and top is lightly golden. Serve hot or warm.
  • Note: I usually defrost the frozen spinach quickly by placing it in a fine mesh strainer and running hot water over it. I then gather the spinach into a ball and squeeze it dry. It takes a few minutes of squeezing and re-squeezing to get all the water out. Be patient...you need the spinach completely dry, otherwise your quiche will be watery.
  • Note: Don't panic if your crust cracks -- you can easily fix it. Make a smooth paste by mixing 1 tablespoon of flour with 1 tablespoon of water. Use your fingers to patch up and fill any cracks, then place the crust back in the oven for a minute or so to set. It should be good as new.
  • Make ahead: This quiche can be made up to a day ahead of time and refrigerated. To reheat: Cover the quiche with aluminum foil and bake in a preheated 300°F oven for 35 to 45 minutes, or until hot in the center.
  • Freezer-Friendly Instructions: The cooked quiche can be frozen for up to 3 months. Remove the quiche from the freezer about 24 hours prior to eating and reheat it, covered with foil, in a 300°F oven until hot in the center.

One 10-inch pie crust or fresh pastry
2 cups whole milk
1 teaspoon salt
1 teaspoon ground white pepper
1 teaspoon ground nutmeg
8 eggs, whipped
1 cup spinach, thin cut
1/2 cup cooked and chopped bacon
1/2 cup shredded cheese, Monterey Jack or other
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the oven to 350 degrees F (on low fan speed, if using convection). During this time, cover the bottom of the piecrust with aluminum foil and uncooked beans. Place the piecrust in the oven and bake (blind bake) for 10 to 12 minutes to allow the crust to cook. The crust should be light brown on the edges when removing from the oven.
  • During the cooking of the crust, whisk together the milk, salt, pepper, nutmeg and eggs in a bowl. After mixing the eggs, in a second bowl, blend together the spinach, bacon, cheese and parsley. Add half of the egg mixture to coat the ingredients, again mixing well. Next, add the mixture to the cooked crust then finish with the remaining egg mixture. Bake in the oven until the middle of the quiche is set, about 20 minutes.
  • Remove and serve.

1 prepared pie pastry, at room temperature
cooking spray
1 onion, minced
2 cloves garlic, minced
4 ounces white mushrooms, minced
6 ounces fresh spinach
1 cup milk
4 large eggs
1 tablespoon Cajun seasoning
¼ teaspoon salt
4 ounces shredded Mexican cheese blend
4 ounces feta cheese, crumbled

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a pie plate with prepared pie pastry.
  • Spray a large skillet with cooking spray and heat over medium heat. Cook and stir onion and garlic in hot skillet until onion is tender, 4 to 6 minutes.
  • Stir mushrooms into onion mixture; cook and stir until mushrooms reduce in size and soften, 5 to 10 minutes. Add spinach to vegetable mixture; cook and stir until spinach wilts, 2 to 4 minutes. Remove from heat.
  • Beat milk, eggs, Cajun seasoning, and salt together in a bowl.

Made for RSC Contest Numer 11, January 2008. This Spinach Quiche has an extra dimension to it... Wine ! It's a Grown Up sophisticated version that has oodles of flavour with simple ingredients and, allows the hostess to appear to have worked for hours, when in reality, it throws itself together so easily, that it could almost be embarrasing if anyone cottened on. With this recipe and it's French influences you can take your fork, close your eyes and imagine yourself in sunny Provence what ever the weather where you are today.

1/2 cup white wine (Sauvignon Blanc)
4 large shallots (peeled and sliced)
1 1/2 lbs fresh spinach (700grams)
1/2 teaspoon salt
1/2 teaspoon pepper (freshly ground)
2 tablespoons flour
3 cups gouda cheese (shredded)
1/2 cup milk
5 eggs (beaten)
1/4 cup sun-dried tomato (very finely diced)
1/4 cup pine nuts (un-toasted)

Steps:

  • Preheat the oven to 375 F (190 C).
  • Pour the white wine into a very large saucepan, or soup pot. Add the peeled and sliced shallots, salt and pepper, and gently saute until they begin to soften.
  • Add handfuls of the fresh spinach and keep turning it over as it cooks, you want to gently wilt it and have it reduce to about half it's volume, but NOT to be cooked down to mush. This should only take about 2-3 minutes for all of the spinach.
  • Pour all of the spinach/shallot mixture into a large mixing bowl, and let cool a little. (You will have some wine left in the bottom of the pan, and yes, it goes into the mixing bowl too).
  • While the spinach is cooling, beat the five eggs in a seperate bowl.
  • The add the flour to the spinach mixture and mix it in well, then add the Gouda cheese, milk, the finely diced sundried tomatos, and finially the beaten eggs. Mix well.
  • Pour the mixture into a shallow quiche dish approx: 11 inches x 1 1/2 inches deep (27 cm x 4 cm deep) that has been sprayed with a small amount of baking spray.
  • Sprinkle the un-toasted pine nuts on the top of the quiche and bake at 375 F (190 C) for between 45-55 minutes. To test that it is cooked, a wooden skewer should come out clean and the top will be a little puffed up and golden brown.
  • Serve warm and enjoy the sublety of the wine flavours as they compliment the rest of the spinach quiche.

  • Preheat oven to 375°F. Dust 1 side of crust with flour. Transfer to 9-inch-diameter quiche dish or pie pan, floured side down. Press into pan, sealing any cracks. Trim edges. Sprinkle both cheeses over bottom of crust. Top with spinach mixture. Beat eggs, cottage cheese, salt, pepper, nutmeg and dillweed in large bowl to blend. Pour over spinach. Bake until filling is set, about 50 minutes. Cool slightly. Cut into wedges and serve.
