TABBOULI / TABOULI / TABBOULEH SALAD (PARSLEY SALAD)

Tabbouli / Tabouli / Tabbouleh Salad (Parsley Salad) image

A Lebanese friend showed me how to make this back in 1996. It's my mother-in-laws favourite salad and I normally make it on request specially for her. I prefer flat leaf fresh parsley (also known as Italian Parsley) as it's better texture but curly leaf is alright. I normally buy the parsley and spring onions from the supper market prepacked bunches so if your measurements are slightly more or less it's alright, it doesn't have to be exact. The bourghul also soaks a lot of the moisture and I like Tabbouli to be moist not dried that's why there is a lot of lemons and olive oil. Like everything we cook it's all about the palate and who we are cooking for so if you choose to put less oil and lemons then it's ok. Salt and black pepper to taste, so feel free to add less but not to much. The secret to good Tabbouli is that everything should be finely chopped. Enjoy

HOW TO MAKE TABOULI

How to Make Tabouli image

Tabouli is a popular Middle Eastern dish. Its main ingredients are parsley and bulgur (a boiled and dried form of wheat). Tabouli can be served with hummus, on pita sandwiches, or as a dip. Tabouli can be easily be made at home in about 30...

Categories     Middle Eastern Cuisine

Number Of Ingredients 10

1/4 cup bulgur wheat
4 cups parsley (about 3 - 4 bunches parsley), finely chopped
1/2 cup mint, finely chopped
6 spring onions, finely sliced (these are also known as scallions in North American cuisine)
3/4 - 1 cup strained lemon juice
1/2 cup olive oil
Garlic, crushed (optional)
4 tomatoes, firm and ripe, diced
1 teaspoon salt (optional)
1 teaspoon black pepper

Steps:

  • Wash the parsley. Run the parsley and under running water to remove any dirt or pesticides. Lightly shake the parsley to remove excess water. Set the parsley aside.
  • Soak the bulgur in water for approximately 20 minutes. Add the bulgur and one cup of boiling water to a small mixing bowl. Cover the bowl with a dish towel and let the bulgur soak until it is tender. This should take about 20 minutes.
  • Chop the vegetables. While your bulgur is soaking, prepare the vegetables by washing and chopping them. Finely chop the parsley, mint, and spring onions. Dice the tomatoes. Set these ingredients aside. Other vegetables, such as broccoli or cucumbers can be used as a substitute or addition to the common tabouli vegetables. Add one cup of additional vegetables to modify the traditional tabouli recipe.
  • Drain the water from the bulgur. Using a strainer, drain the water from the bulgur. Press firmly on the bulgur with a paper towel to remove any excess water. Cooked quinoa can be substituted for bulgur to make the dish gluten-free.

4 firm Roma tomatoes, very finely chopped

3-4 tbsp Early Harvest extra virgin olive oil

This fresh and healthy salad uses mostly herbs with a little bulgur wheat

Provided by Good Food team

Categories     Side dish

Time 30m

Number Of Ingredients 7

50g bulgur wheat
50g flat-leaf parsley, chopped
50g mint, chopped
200g ripe tomatoes, deseeded and diced
3 spring onions, finely sliced
juice 1 lemon
3 tbsp olive oil

Steps:

  • Rinse the bulgur wheat in a sieve until the water runs clear. Drain well, then transfer to a bowl. Pour over 200ml boiling water, cover with cling film and leave to soak for 30 mins or so while you prepare the rest of the ingredients.
  • Keeping the parsley in a bunch, chop the leaves roughly. Don't worry about the inclusion of some of the stalks; this all adds to the flavour. Now do the same with the mint. Put the chopped herbs in a large bowl and add the tomato and spring onion.
  • Thoroughly drain the bulgur, then add to herb mix, along with lemon juice and olive oil. Mix thoroughly, season and serve.

TABOULEH

Tabouleh image

Grandma's tabouleh recipe has it all -- crunch, seasoning, freshness, and a whole lotta family love! Eat it as a side or a main or an afternoon snack!

Provided by Lindsey Hyland

Categories     Side Dish

Time 30m

Number Of Ingredients 9

3 Bunches Fresh Parsley (I prefer curly)
2/3 Cup Lemon Juice
1/3 Cup Olive Oil
1 Teaspoon Kosher Salt
1 Teaspoon Pepper
1/2 Cup Cracked Bulgur (dry (can substitute for 1 1/2 cup cooked/cooled Quinoa, or 1 1/2 cup minced cauliflower))
2 Cloves Garlic (minced)
1/2 Sweet Onion (minced)
3 Tomatoes (deseeded, minced)

Steps:

  • If you have time, thoroughly rinse the parsley (3 bunches) the night before. Wrap it in paper towels and place it in the fridge. This will make the tabouleh EXTRA crisp! If you don't have time to rinse the night before, be sure to get the parsley as dry as possible.
  • In a small bowl, combine olive oil (1/3 cup), lemon juice (2/3 cup), salt (1 teaspoon) and pepper (1 teaspoon).
  • Add cracked bulgur (1/2 cup) to the lemon juice/olive oil and let it sit for 30 minutes - 1 hour, depending on how soft you want the bulgur to be. (I usually do this for 30 minutes while I'm chopping everything else)
  • Pick the leaves from the stems of the parsley. I do this by grabbing the bunch of parsley and sliding a sharp knife over the top, then picking out any large stems.
  • Place leaves into the food processor. Pulse the parsley until it is finely chopped using 1 second intervals. Make sure not to pulse too much! Alternatively you can use a knife to chop the parsley.
  • Add minced sweet onion (1/2), minced tomatoes (3 deseeded), minced garlic (2 cloves) and parsley to the bulgur and stir to combine.
  • Add more salt/pepper to taste. Tabouleh is best served after resting in the fridge overnight. Enjoy!

LEBANESE TABBOULEH SALAD

Lebanese Tabbouleh Salad image

This traditional Lebanese Tabbouleh Salad recipe is a healthy vegan Mediterranean appetizer made with bulgur, parsley, mint and chopped vegetables.

Provided by Yumna Jawad

Categories     Appetizer

Time 40m

Number Of Ingredients 8

⅓ cup extra virgin olive oil
3 tablespoons lemon juice
¼ cup extra fine bulgur wheat
2 bunches parsley (about 2 cups chopped)
1-2 vine-ripe firm tomatoes
2 green onions (both green and white part)
¼ cup fresh mint leaves (optional)
Salt and pepper

Steps:

  • In a small bowl, whisk together olive oil and lemon juice until well combined. Then add the bulgur to the dressing and let it soak until it is soft and plumped, about 15 minutes.
  • Meanwhile, prepare the vegetables by washing, drying thoroughly and finely chopping them. When preparing the tomatoes, it helps to use a colander to drain the excess juice, which you can use in another recipe at a later time.
  • Place the chopped vegetables in a large bowl. Add the optional mint. Season with salt and pepper. Then pour the bulgur and dressing mixture over. Gently toss to combine.
  • Serve at room temperature or cold, with lettuce if desired.

BEST TABBOULEH

Best Tabbouleh image

Learn how to make delicious, authentic tabbouleh at home! This tabbouleh (also spelled tabouli) is even better than your favorite Lebanese restaurant's. Recipe yields 6 servings (a little over 1 cup each).

Provided by Cookie and Kate

Categories     Salad

Time 35m

Number Of Ingredients 10

1/2 cup bulgur
1 cup diced cucumber (1 small-to-medium)
1 cup diced tomato* (1 large)
1 teaspoon fine sea salt, divided
3 medium bunches curly parsley
1/3 cup (2/3 ounce) chopped fresh mint (optional but recommended-you can chop it in the food processor with the parsley)
1/3 cup thinly sliced green onion
1/3 cup extra-virgin olive oil
3 to 4 tablespoons lemon juice, to taste
1 medium clove garlic, pressed or minced

Steps:

  • Cook or soak the bulgur until tender according to package directions. Drain off any excess water, and set aside to cool.
  • Meanwhile, combine the diced cucumber and tomato in a medium bowl with 1/2 teaspoon of the salt. Stir, and let the mixture rest for at least 10 minutes, or until you're ready to mix the salad.
  • To prepare the parsley, cut off the thick stems. Then, finely chop the parsley and remaining stems-you can do this by hand, but it's much easier in a food processor with the standard "S" blade. Process 1 bunch at a time (it should yield about 1 cup chopped), transferring the chopped parsley to a large serving bowl before proceeding with the next.
  • Add the cooled bulgur, chopped fresh mint (if using) and green onion to the bowl of parsley. Strain off and discard the cucumber and tomato juice that has accumulated in the bottom of the bowl (this ensures that your tabbouleh isn't too watery). Add the strained cucumber and tomato to the bowl.
  • In a small measuring cup or bowl, whisk together the olive oil, 3 tablespoons lemon juice, garlic, and remaining 1/2 teaspoon salt. Pour it into the salad and stir to combine. Taste, and adjust if necessary-add another tablespoon of lemon juice for zing, or salt for more overall flavor.
  • If you have the time, let the salad rest for 15 minutes before serving to let the flavors mingle. Otherwise, you can serve it immediately or chill it for later. Tabbouleh will keep well in the refrigerator, covered, for up to 4 days.

LEBANESE TABBOULEH

Lebanese Tabbouleh image

We think of tabbouleh as a bulgur salad with lots of parsley and mint. But real Lebanese tabbouleh is a lemony herb salad with a little bit of fine bulgur, an edible garden that you can scoop up with romaine lettuce heart leaves or simply eat with a fork.

Provided by Martha Rose Shulman

Categories     easy, quick, salads and dressings, appetizer

Time 30m

Yield 6 appetizer spread servings, 4 salad servings

Number Of Ingredients 10

1/4 cup fine bulgur wheat
1 small garlic clove, minced (optional)
Juice of 2 large lemons, to taste
3 cups chopped fresh flat-leaf parsley (from 3 large bunches)
1/4 cup chopped fresh mint
1/2 pound ripe tomatoes, very finely chopped
1 bunch scallions, finely chopped
Salt, preferably kosher salt, to taste
1/4 cup extra virgin olive oil
1 romaine lettuce heart, leaves separated, washed and dried

Steps:

  • Place the bulgur in a bowl, and cover with water by 1/2 inch. Soak for 20 minutes, until slightly softened. Drain through a cheesecloth-lined strainer, and press the bulgur against the strainer to squeeze out excess water. Transfer to a large bowl, and toss with the garlic, lemon juice, parsley, mint, tomatoes, scallions and salt. Leave at room temperature or in the refrigerator for two to three hours, so that the bulgur can continue to absorb liquid and swell.
  • Add the olive oil, toss together, taste and adjust seasonings. Serve with lettuce leaves.
