This copycat Olive Garden Smoked Mozzarella Fonduta recipe has Italian cheeses and sour cream to make a creamy, cheesy appetizer that you won't be able to say no to. Serve this savory dish with a side of Italian bread.

1 cup sour cream
1 teaspoon dried thyme leaves ((if you have ground thyme, only use 1/2 teaspoon))
1/4 teaspoon dried red pepper flakes
dash cayenne pepper
6 cups shredded Italian cheese blend
6 tablespoons Parmesan and Roman cheese blend*
1/2 cup diced Roma tomatoes
1 sprig parsley (optional)

Steps:

  • In a medium bowl, combine the first 6 ingredients. Mix well.
  • Transfer to a 10" round skillet or 11x7" baking dish. Bake at 450 degrees for 10 minutes, or until the cheese is lightly browned and bubbly.
  • Top with diced tomatoes and parsley, if desired.
  • Serve while warm with sliced Italian bread.

One 28-ounce jar tomato-basil sauce, such as Giada DeLaurentiis for Target
1/2 teaspoon crushed red pepper flakes
1/4 cup chopped fresh basil
4 ounces thinly-sliced prosciutto, chopped into 1/2-inch pieces
One 7 to 8-ounce ball fresh mozzarella, sliced into six 1/4 to 1/3-inch-thick slices
Kosher salt and freshly ground black pepper
3/4 cup (2 ounces) shredded Gruyere
Serving suggestion: grilled bread

Steps:

  • In a small saucepan, bring the tomato-basil sauce and red pepper flakes to a simmer over medium heat. Cook uncovered until thick, 20 to 25 minutes. Remove the pan from the heat and stir in the basil.
  • Preheat the broiler.
  • Place six 5-ounce ramekins on a baking sheet. Divide the sauce equally among the ramekins. Divide the prosciutto among the ramekins. Place the slices of mozzarella between 3 paper towels to absorb any excess moisture. Place the slices of mozzarella on top of the prosciutto. Season with salt and pepper. Sprinkle the Gruyere on top.
  • Broil until the cheese is melted and golden brown, 5 to 8 minutes. Serve with grilled bread.

1 pkg Italian bread, sliced into 1/4 inch slices
1 c sour cream
1 tsp thyme
1/2 tsp crushed red pepper
1/4 tsp cayenne pepper
3 c shredded mozzarella or smoked mozzerella*
3 c shredded provolone or smoked provolone*
3 Tbsp grated Parmesan
3 Tbsp grated Romano
8 tsp fresh diced tomatoes
fresh chopped parsley
NOTE:
*this recipe calls for one of these two cheeses to be smoked and one to be regular

Steps:

  • 1. Preheat oven to 450 F. Arrange sliced Italian bread flat on a baking sheet.
  • 2. Cover with foil. Set aside until ready to use.
  • 3. Combine sour cream, thyme, red pepper, cayenne pepper, and four kinds of cheese in a large bowl. Blend thoroughly.
  • 4. If serving family style, spray an 8" x 10" casserole dish with pan spray.
  • 5. Then use a spatula to transfer the mixture. For individual servings, spray eight individual heat-resistant serving bowls, such as souffle cups, with pan spray and fill each with 1/2 cup of mixture. Place individual bowls on a baking sheet. Using a large spoon, spread cheese mixture to create an even surface.
  • 6. Bake on center rack in oven.
  • 7. After five minutes, place the baking sheet with bread, still covered, in the oven. Bake for an additional five minutes.
  • 8. Remove bread and fonduta from the oven. Garnish with diced tomatoes and parsley. Arrange bread slices around the bowl(s) and serve immediately.

1 1/2 cups shredded provolone cheese
2 tablespoons grated parmesan cheese
2 tablespoons grated romano cheese
1 plum tomato, diced
parsley flakes
30 small sliced French baguettes

Steps:

  • *Preheat oven to 450 degrees.
  • *Spray small casserole dish or pie plate with cooking spray.
  • *Combine sour cream,thyme, red pepper, cayenne and all 4 cheeses in large bowl, mix well.
  • *Place in oven on center rack for about 10 minutes(will start to bubble).
  • *Place baguettes on cooking sheet and place on top rack for 5 minutes along with fonduta, watch bread carefully.
  • *Remove form oven, fonduta will be bubbly and slightly browned on top, garnish with tomatoes and parsley in center of dish, place baguettes around -- and enjoy -- it is truly heavenly.
  • (If you like spicy, increase cayenne to 1/2 tsp).

On our recent trip to Italy, dh and I enjoyed gelato, rice balls, wine, and baked smoked mozzarella. When we were served this in Rome at La Bruschetta's (on Via Sardegna), it was served straight out of the dish and gooey delicisio. Is best when it is kept hot otherwise the mozzarella starts to harden, so try to find a dish that can keep the heat. Mangiare! Recently made inside a foil packet for appetizer while RVIng and it worked great!

1 teaspoon extra virgin olive oil, divided
8 ounces smoked mozzarella cheese, cubed
10 cherry tomatoes, cut in half
1/2 teaspoon dried basil (optional)
1 garlic clove, minced
1/4 teaspoon kosher salt (to taste)
1/4 teaspoon pepper (to taste)

Steps:

  • Preheat your oven broiler.
  • Grease a small ovenproof dish with 1/2 teaspoon olive oil.
  • Layer half of the mozzarella, all the tomatoes, season with basil, garlic, salt, & pepper, top with rest of mozzarella.
  • Drizzle with 1/2 teaspoon virgin olive oil.
  • Place on the middle rack under your broiler for 5-7 minutes or until the mozzarella is melted and bubbly around the edges.
