SHRIMP ALFREDO PASTA
A wonderful shrimp pasta dish! I came up with this on my own one night. You can change the amount of ingredients to your taste.

- In a saucepan over low-temperature, heat the Alfredo sauce. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 minutes or until al dente; drain.
- Boil shrimp in a large pot of water until they turn orange. Then place in bowl with melted butter. Let shrimp marinate for 15 to 30 minutes; remove. In a large skillet over medium heat, saute the green pepper and onion in a small amount of oil.
- Mix together the cooked pasta, shrimp, pepper-onion mixture and Alfredo sauce. Season with garlic powder and cumin.

CREAMY SHRIMP ALFREDO WITH TOMATO AND BASIL
Steps:
- Heat olive oil in deep 12-inch skillet over medium-high heat and cook onion, celery, red pepper and garlic 5 minutes or until vegetables are tender. Stir in broth and bring to a boil over high heat. Reduce heat to low and simmer 5 minutes. Stir in sauces. Simmer, stirring occasionally, 15 minutes. Stir in shrimp and cook, stirring occasionally, 3 minutes or until shrimp turn pink. Stir in hot pepper sauce. Serve shrimp mixture over hot fettuccine.
EMERIL'S SHRIMP AND PASTA IN A SPICY TOMATO-CHILI CREAM SAUCE
I got this recipe through a recipe exchange with a friend and it is very good! It does have quiet a few steps and ingredients but it is definitely worth it.

- Set a large 1-gallon stock pot of water to a boil and add the kosher salt. Place the linguine in the pot and stir the pot until the water returns to a boil. Cook the pasta until tender, but with a bit of resistance (al dente), about 12 minutes. Drain and reserve 1/2 cup pasta water.
- While the pasta cooks, prepare the sauce. Set a 12-inch saute pan over medium-high heat. Add the butter and olive oil to the pan. Once the butter has melted, season the shrimp with 1 tablespoon of the creole seasoning and 1/4 teaspoon of the salt and add the shrimp to the pan. Sear the shrimp until well browned on both sides, about 2 minutes. Remove from the pan and set aside.
- Add the onions and jalapenos to the pan and saute until the onions are softened and lightly caramelized, about 4 to 5 minutes. Add the garlic to the pan and saute until fragrant, about 30 seconds. Add the cream, remaining 1 tablespoon of creole seasoning, remaining 1 1/4 teaspoons of the salt and the pepper to the pan and bring to a boil. Cook the sauce until the cream is reduced by half, about 2 minutes.
- Return the shrimp to the pan, and add the tomatoes, linguine and the reserved cooking water to the pan and cook, tossing to incorporate for 3 to 5 minutes. Remove pan from the heat and add the Pepper Jack, Parmesan and basil and toss to blend. Serve immediately.

- Boil pasta as directed on package(not al dente).
- While pasta cooks, prepare the sauce.
- Place a 12 inches saute or sauce pan on medium-low heat. Add the olive oil, and melt the butter.
- While that happens, but the shrimp in a bowl and season with half of the Essence(or spice blend), mix well, add a pinch of salt, and put in the pan.
- Turn the heat to Medium-High, and saute each side of the shrimp until fully cooked. Once cooked, put the shrimp in a bowl and set aside.
- Add a dash more of olive oil, and put in the green chillis and garlic. Once garlic is fragrant, add the carrots, zuchinni, and shallots. Once all the vegitables START to caramlize, add in all the heavy cream. Reduce heat to medium-low.
- Let the cream reduce, until thick.
- Drain the pasta if done.
- Put the shrimp back in the pan followed by the crushed/diced tomatoes. Start mildly braking apart the tomatoes. Add more salt and pepper(taste it to usure perfection :D).
- Then put the spaggetti in the pan. Mix well and let it simmer for 5 minutes. Add in the Basil and Oregano and Chilli Powder. Mix Well. Remove from heat, and add cilantro and parmesan. Serve Hot and Watch Your Family ATTACK!

PASTA ALFREDO WITH SUN-DRIED TOMATOES
My version of a fattening yet easy Alfredo Pasta. Prep time and cooking time fall hand in hand, so this really is about a 30 - 45 minute meal. Serve with a salad, and Rosemary Bread, if desired.

- Begin by boiling water to prepare pasta, while sauteing chicken breasts. (two birds with one stone) Cook pasta according to package directions.
- Wash and pat dry chicken breast, slice into bite sized pieces and in a large pan, saute in olive oil, seasoning with garlic powder, salt and pepper until just starting to brown nicely. Remove from pan and set aside.
- In same pan melt butter and saute the sun dried tomatoes for about 5 minutes.
- Return chicken to pan.
- For the sauce: puree the garlic, salt and pepper, and grated Parmesan in a food processor. In seperate pan, bring the qt of heavy cream with the garlic, salt and pepper and Parmesan to a low boil, stirring constantly, then turn down heat and let simmer for approx 5 minutes.
- Once pasta is cooked, drain and rinse and add to chicken mixture.
- Pour the cream mixture over the chicken, tomatoes and pasta and mix well.

I make this spicy shrimp pasta a lot because it's a something my family never seems to get tired of. The sauce is so fast to make I can get it done while the fettuccine is cooking. - Thaw and shell shrimp.
- Heat pot of water for the pasta.
- Heat olive oil over med high heat in large fry or saute pan.
- Cut tomatoes into four slices each.
- Julienne the basil.
- Add garlic to oil and saute for 30 secs to 1 min.
- Add shrimp.
- Cook pasta.
- When shrimp are almost opaque (3-4 min), add alfredo sauce.
- Add tomatoes and basil.
- Drain pasta and add to pan.
- Serve at once.
SHRIMP PASTA WITH LEMON ALFREDO SAUCE
I love pasta and am constantly creating a new dish from ideas I get from other dishes. Here is a quick and easy lemony version of alfredo sauce. Note: I like to add fresh diced tomatoes to this (I'll omit the sun dried) and steamed broccoli crowns for a really complete meal.

- Peel & de-vein shrimp.
- Sauté shrimp in 2T oil from sun dried tomatoes (don't over cook), and set aside.
- Bring 2 Qt water to a boil, add pasta and cook according to package directions.
- Add 1/2 jar sun dried tomatoes (oil & all) to the boiling water.
- Warm the alfredo sauce adding 4T lemon juice concentrate.
- Place a colander in the sink and put artichokes into it.
- Drain pasta over the artichoke hearts. (This gets them warm.
- Divide pasta onto four large plates.
- Place equal amounts pasta, artichoke hearts and sundried tomatoes on each plate.
- Pour sauce over pasta.
- Top each plate with equal amounts of shrimp and serve hot.

- While the pasta is cooking, season the shrimp with the cajun seasoning. In a large skillet heat 1 tbsp of the olive oil over medium high heat. Add the shrimp and cook on both sides until pink, it shouldn't take more than a couple minutes. Remove the shrimp from the skillet and set aside.
- Add the remaining 1 tbsp of olive oil and the butter to the skillet and heat until butter melts over medium heat. Add the chopped onion and garlic, then cook for about 3 minutes until the onion becomes soft and translucent.
- While the onion is cooking pour the tomatoes in a food processor or blender and pulse until smooth. Add the tomatoes to the skillet, bring to a boil then turn down the heat and simmer for about 15 minutes, stirring occasionally.
