8 ounces young spinach
2 large eggs
8 pieces thick-sliced bacon, chopped
3 tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon Dijon mustard
Kosher salt and freshly ground black pepper
4 large white mushrooms, sliced
3 ounces red onion (1 small), very thinly sliced

Steps:

  • Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
  • Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside.
  • While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
  • Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
  • Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.

1 egg
6 slices bacon
½ cup sliced onion
¼ cup white wine vinegar
¼ cup water
4 teaspoons white sugar
½ teaspoon salt
8 cups leaf lettuce - rinsed, dried and torn into bite-size pieces
8 radishes, thinly sliced

Steps:

  • Place egg in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let egg stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Reserve excess grease.
  • Add onions to skillet with reserved grease and cook until tender. Add bacon, vinegar, water, sugar and salt. Stir and bring to boil.
  • Place lettuce in a large bowl. Pour hot dressing over and toss well. Garnish with egg and radishes.

Hot bacon dressing is made from rendered bacon fat, sugar, and vinegar. It's a little sweet, a little salty, and totally addictive over a bed of hearty greens.

16 ounces bacon (finely chopped)
Olive oil (as needed (see note 1))
1/2 medium red onion (minced (1 cup, see note 2))
1/2 cup granulated sugar (or less to taste (see note 3))
1/2 cup white vinegar ((see note 4))
Salt and freshly ground black pepper

Steps:

  • In a large skillet over medium heat, fry bacon until crisp, about 5 minutes. Transfer to a bowl.
  • Pour rendered bacon fat into a measuring cup. Pour off all but 1/4 cup, or add olive oil to reach 1/4 cup. Return fat to skillet over medium-high heat until shimmering.
  • Add onion, sugar, and vinegar. Cook until onion is softened, about 3 minutes. Remove from heat and season to taste with salt and pepper (I like 1/4 teaspoon salt and a pinch of pepper).
  • To serve, either toss the vinaigrette with greens and sprinkle with bacon, or stir the bacon into the dressing and toss with the salad. Both ways are tasty!

½ pound sliced bacon, cut crosswise into 1/2-inch strips
¼ cup vegetable oil
½ cup minced onion
1 pinch salt
2 cloves garlic, minced
⅓ cup apple cider vinegar
¼ cup rice vinegar

½ cup white sugar
1 ½ tablespoons Dijon mustard
⅓ cup bacon drippings
2 teaspoons water
1 teaspoon cornstarch
1 pinch cayenne pepper

1 pound baby spinach leaves
1 (15 ounce) can black-eyed peas, rinsed and drained
12 white button mushrooms, thinly sliced

Steps:

  • Cook and stir bacon with 1/4 cup vegetable in a skillet over medium heat until bacon is browned and crisp, 5 to 7 minutes. Pour bacon into a strainer set over a bowl, reserving 1/3 cup of bacon drippings.
  • Return skillet to medium heat. Stir onions and salt into the skillet; cook and stir until onions are golden brown, about 5 minutes. Stir in garlic; cook, stirring constantly, until the garlic is fragrant and golden, 1 minute.
  • Stir cider vinegar, rice vinegar, 1/2 cup water, sugar, and Dijon mustard into onion mixture. Increase heat to medium-high and simmer.
  • Whisk 2 teaspoons water and cornstarch in a bowl. Gradually pour cornstarch mixture into onion mixture and whisk until thickened. 3 to 4 minutes. Reduce heat to low.
  • Drizzle reserved 1/3 cup bacon drippings into onion mixture, whisking constantly. Add cooked bacon and stir to combine. Season with cayenne pepper, salt, and black pepper to taste.
  • Combine spinach, black-eyed peas, mushrooms, and cherry tomatoes in a large bowl; toss to combine. Drizzle hot bacon dressing over spinach mixture; toss quickly and serve immediately.

1 lb bacon, diced
1/4 cup flour
1 1/4 cups sugar
1/4 teaspoon salt
2 cups water
1 cup balsamic vinegar

Steps:

  • Fry bacon until crispy.
  • Remove bacon to paper towel covered dish to drain and cool.
  • Reserve 1 1/2 teaspoons of the bacon fat.
  • Combine flour, sugar, salt.
  • Mix well with 1/2 cup water, let stand in mixing container.
  • Heat vinegar and remainder of water to hot (do not boil).
  • Add the hot liquid to dry ingredients, stirring well.
  • Add the mixture to the bacon fat still in skillet, and cook to desired consistency. (If gravy like texture is desired, you can bring to a brief boil. Overcooking with cause it to congeal into a thick ball).
  • If desired, you can crumble the bacon you fried and add to salad.
  • Pour over your salad of choice and devour immediately.

Steps:

  • Cook the bacon in a medium skillet over medium heat, stirring occasionally, until crisp, 9 to 11 minutes. Remove to paper towels; reserve the drippings in the skillet.
  • Whisk the vinegar, sugar, mustard and 1/4 teaspoon each salt and pepper into the drippings. Slowly whisk in the olive oil until emulsified.
  • Place the spinach in a large bowl and pour the warm dressing on top; add the grapes, blue cheese and the reserved bacon and toss. Season with salt and pepper. Top with croutons.

4 strips thick cut bacon (diced into 1/8-inch cubes)
3 cloves garlic (peeled and minced)
3 tablespoons maple syrup or honey
3 tablespoons Dijon mustard (smooth or grainy)
1/4 cup apple cider vinegar
1 teaspoon coarse ground black pepper
1 teaspoon kosher salt

Steps:

  • Place the bacon in a medium saucepan over low heat and stir until some of the fat begins to render from the bacon. Raise the heat to medium and cook the bacon, stirring frequently, until it is crispy. Use a slotted spoon to transfer the crisp bacon to a paper towel lined plate, keeping all of the fat drippings in the pan.
  • Return the pan to the burner. Add the garlic, swirl, and immediately add the remaining dressing ingredients. Bring the mixture to a boil and let it cook for 1 minute, or until the dressing coats the back of a spoon. It should leave a trail when your finger is drawn through the dressing on the back of the spoon. Stir in the bacon.
  • Use immediately or transfer to a heat proof jar with a tight fitting lid and store in the refrigerator for up to 5 days, gently reheating and stirring before serving.

1 small baguette (about 6 inches), very thinly sliced
2 tablespoons olive oil
1 head escarole or frisée lettuce, torn into bite-size pieces
1 head radicchio, halved and thinly sliced crosswise
4 slices thick-cut bacon
1 anchovy fillet or 1/2 teaspoon anchovy paste
1 small shallot, minced
2 tablespoons whole-grain Dijon mustard
2 tablespoons white wine vinegar
1 tablespoon honey
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F.
  • Arrange the bread slices on a large rimmed baking sheet lined with parchment paper. Brush evenly with the olive oil. Bake until toasted, turning halfway through, about 3 minutes. Remove from the oven and let cool.
  • Combine the escarole and radicchio in a serving bowl. Set aside.

3 slice bacon
1/2 c red onion, chopped
2 Tbsp brown sugar
2 Tbsp cider vinegar
1/4 tsp salt
1/4 tsp ground mustard
1/8 tsp celery seed
1/8 tsp pepper
1 tsp cornstarch
1/3 c cold water

Steps:

  • 1. Cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain.
  • 2. In the drippings, saute onion until tender. Stir in the brown sugar, vinegar, salt, mustard, celery seed and pepper
  • 3. Combine cornstarch and water until smooth; stir into skillet.
  • 4. Bring to a boil; cook and stir for 1-2 minutes or until thickened.
  • 5. Remove from the heat; pour over spinach and toss to coat. Sprinkle with bacon. Serve immediately.
