HOT AND TASTY ONION RINGS
Here is how to make a terrific appetizer of Hot and Tasty Onion Rings. These are served with Betty's Surfin' Seafood Cocktail Sauce or ketchup.

Steps:
- In a large mixing bowl, combine 1 cup self-rising flour, 1 well-beaten egg, 1 cup milk, and 1/4 cup vegetable oil. Stir completely, or blend with an electric mixer. Have your raw onion rings prepared for cooking. Heat 2 inches of oil in an electric deep fryer or a pot on the stove to somewhere between 345 degrees and 375 degrees. With tongs, dip onion rings in batter, allowing excess batter to drip into bowl, and then transfer to hot oil. You may fry several onion rings at the same time. Fry until golden brown on both sides, and then remove with tongs or other utensil and place on paper toweling to drain. When all onion rings are fried and removed, pat the upper side to remove any further excess oil. Now, place the Onion Rings on a nice serving dish, and serve with Surfin' Seafood Cocktail Sauce. BAKED ONION RINGS
Steps:
- Preheat oven to 425 degrees F. Line two baking sheets with parchment paper. Lightly spray the parchment paper with olive oil cooking spray.
- Stir together the buttermilk and cornstarch in a shallow bowl.
- Stir together the flour, cornmeal, Parmesan cheese and House seasoning in a baking dish.
- Coat the onion slices by placing each slice into the buttermilk mixture allow excess to drip before coating in the seasoned cornmeal. Then place the coated rings in a single layer on the baking sheets. Repeat until all onion rings are coated. Give the onion rings a light spray with non-stick baking spray. Bake until golden brown, about 20-25 minutes flipping once halfway through and serve hot.
- Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.

- Preheat the oven to 425˚F (220˚C). Grease a baking sheet with nonstick spray or line with parchment paper.
- Cut the onion crosswise into ½-inch (1 cm) slices and gently push apart each layer to get individual rings. Set aside.
- In a large bowl, combine the bread crumbs, Parmesan, garlic powder, paprika, oregano, basil, salt, and pepper. Add the eggs to a separate large bowl. Add the flour to a third large bowl.
- Dredge the onion rings in the flour, then the eggs, then finally in the bread crumb mixture, making sure to coat all sides.
- Arrange the onion rings on the baking sheet.
- Bake for 10-15 minutes, flipping halfway through, until golden brown on both sides.
- Serve with your favorite dipping sauce.

BLACK AND TAN ONION RINGS
Despite the title, this recipe contains no alcohol. I created this recipe one day and pretty much improvised. In any case, the reason for the title is the texture. This recipe yields onion rings that are crispy and tasty on the outside and tender on the inside. According to me the best results of this recipe are the texture of the product and the fact that these rings don't taste as fatty as most other varieties. Honestly, these are the best onion rings I have ever had. If you've seen other recipes for onion rings, you'll probably notice the absence of buttermilk and the presense of chicken or vegetable stock here. I did this because I simply had no buttermilk at the time and instead of using a bland ingredient or another ingredient that would yield more fat content, I opted for the stock.

Steps:
- Cut onions into 1/4-inch slices and separate concentric rings. Set aside.
- Mix flour, salt (optionally), paprika, cayenne pepper, and the pepper flakes.
- Add stock until mixture takes on a batter consistency -- see note below.
- Pour oil into heavy saucepan, wok, or deep fryer to a depth of 2 to 3 inches. Heat to 350F.
- Preferably with tongs, coat each ring individually until completely covered with batter.
- In batches, place rings into the oil until batter takes on various shades of medium and dark brown.
- Remove rings from oil and place on dioxin-free paper towel to absorb the excess oil.
- * I'm not sure exactly how much stock to use here but start with the recommended 1 1/2 cups and add flour and stock intermittently until a batter texture is achieved.

- In a bowl, mix together the flour, beer, eggs, pepper, salt and Worcestershire sauce. In a deep-fryer or in a large heavy pot, heat the oil. It should be at least 3 inches deep, but more is better. When the oil is hot, drop in a teaspoon of batter to be sure it sizzles.

DELICIOUS ONION RINGS
Here is an easy and different onion ring recipe. I've heard people talk before about ice cream being used for onion rings, but had never seen a recipe for it, so I came up with this. Cooking time depends on how many rings you fry at once, and how hot the oil is, so the 20 minutes is just a guess.

- Pour liquid ice cream into a medium sized mixing bowl and add onion slices. Toss to coat thoroughly. Let set for about 2 hours, tossing to coat about every 20-30 minutes.
- Put flour in a medium or large mixing bowl. Drain onion rings and add to flour. Toss to coat completely.
- Heat oil in large pot or deep fryer. When hot add onion rings and fry until golden brown, turning once.
- When done, place on paper towel to drain, then salt to taste.

These onion rings are sweet and spicy, they are delicious!.... the batter crust really puffs up when frying. If you prefer the rings more spicy, just add in more ground red pepper, warning... that stuff is very hot, so a little goes a long way LOL!

- In a large saucepan, heat 2-inches of oil over medium heat until hot but not smoking.

- Fry a few rings a a time for 5-6 minutes, or until golden brown (turning the rings to fry on both sides).
