10.5 ounces bittersweet chocolate chips
9 ounces milk
1.75 ounces heavy cream
1.75 ounces butter

Steps:

  • Combine the milk with the heavy cream and bring them to simmer. Put the chocolate chips into a bowl and pour it in the boiling milk/cream mixture. Stir with a rubber spatula until the chocolate has melted and the mixture is perfectly smooth. Take off the flame and swirl in the butter. Keep it warm for service.

1 tbsp caster sugar

6 ounces semisweet chocolate, broken into squares
2 tablespoons unsalted butter
2 tablespoons brandy or 2 tablespoons orange juice

Steps:

  • Place the sugar and 1/4 cup water in saucepan and heat gently, stirring occasionally, until the sugar is dissolved.

Traditional Christmas pud is not universally popular, especially with children - this wonderfully moist chocolate version could be the answer

200g ready-to-eat dried apricots
4 tbsp brandy
100g ground almonds
25g cocoa powder
100g self-raising flour
1 tsp baking powder
100g softened butter
140g light muscovado sugar
2 large eggs , beaten
4 tbsp milk
100g dark chocolate
2 tbsp clear honey
100g dark chocolate
284ml carton double cream
1-2 tbsp brandy (optional)

Steps:

  • Butter a 1.2 litre/2 pint pudding basin and put a circle of greaseproof paper in the base. Put the apricots in a small pan and add the brandy. Bring slowly to the boil, then simmer, turning the apricots occasionally until all the brandy has soaked in. Leave until cool enough to handle.
  • Tip the ground almonds into a bowl, then sift over the cocoa, flour and baking powder and mix everything together.
  • In another bowl, beat the butter and sugar together for 2-3 minutes until light and fluffy.Gradually beat in the eggs and milk.
  • Chop half the apricots into small pieces. Chop the chocolate into large chunks. Lightly stir the flour mixture into the cake mix, followed by the apricots and chocolate.
  • Put the remaining whole apricots into the bowl and spoon over the honey. Add the pudding mixture and smooth the top. Cover with double thickness buttered greaseproof paper and tie down. Trim off the excess paper, then overwrap in foil, tucking the ends under the edges of the paper.
  • Put the basin into a large pan and pour boiling water into the pan, to come halfway up the sides of the basin. Cover and steam for 21⁄2 hours, until it feels firm. (The pudding can be made to this stage up to 2 days ahead. Reheat by steaming for 1 hour, or microwave on medium for 6-8 minutes.)
  • Towards the end of the cooking time, make the sauce. Break up the chocolate and put in a small pan with the cream and brandy if using. Warm gently, stirring lightly until smooth and glossy.
  • Cool the pudding in the bowl for 10 minutes, then turn out and serve with the chocolate sauce and cream or good vanilla ice cream.

This is another lovely dessert from my Chocolate cookbook by Christine McFadden & Christine France. These girls never fail me! This 1 is steam-cooked in a 4-cup bowl. My steamer is oblong-shaped & will not accept a 4-cup rd bowl, so I have made it in 4 individual dessert bowls & 8 ramekins. Adjusted cooking time for these sizes is noted below. The taste of banana & choc is pleasingly subtle here & combines w/an almost gingerbread flavor that reminds me of my mom. Serve it warm w/the choc sauce as suggested below. You are going to love this!

1 1/4 cups self-rising flour
6 tablespoons unsalted butter (or margarine)
2 ripe bananas
6 tablespoons sugar
1/4 cup milk
1 egg (beaten)
1/4 cup chocolate chips (or chopped unsweetened chocolate)
1/2 cup sugar
1/4 cup water
6 ounces chocolate (chopped into sml pieces)
2 tablespoons unsalted butter
2 tablespoons brandy (or orange juice)

Steps:

  • Prepare a steamer or half fill a saucepan w/water & bring to a boil. Grease a 4-cup deep bowl.
  • Sift flour into a bowl & rub in the unsalted butter or margarine till the mixture resembles coarse breadcrumbs.
  • Mash bananas in a bowl. Stir them into the flour & butter mixture. Then add the sugar & mix well.
  • Whisk milk w/the egg in a measuring cup or sml bowl & beat into the pudding mixture. Stir in the choc chips or chopped chocolate.
  • Spoon the mixture into the prepared bowl & cover lightly w/a double thickness of foil. Steam for 2 hrs & add water as needed.
  • While the pudding steam cooks, prepare the glossy choc sauce as follows:.
  • Place sugar & water in heavy saucepan & heat gently. Stir occ w/a wooden spoon till all sugar has dissolved.
  • Stir in the choc till melted & add butter the same way. DO NOT LET THE SAUCE BOIL. Stir in brandy or orange juice & set aside, but do not chill.
  • When pudding has finished cooking, allow it to cool slightly, run a knife around the top of the pudding to loosen it & turn it over onto a serving dish.
  • Serve warm w/the sauce ladled over ea individual serving.
  • NOTE: For 4 individual servings in dessert bowls or 8 ramekins, divide batter equally in the 4 (or 8) containers, cook in steamer for 1 hr & test w/toothpick. If not done, cook an add'l 10 min & remove from steamer to cool slightly b4 serving. Enjoy!

Taken from "The Simple Art of Perfect Baking" cookbook....This glaze will keep for up to 2 weeks in the refrigerator, to rewarm just warm the mixture in the microwave until desired texture, it can be rewarmed over and over again...remember, this glaze will thicken as it cools.

1 cup whipping cream
1 tablespoon corn syrup
1 cup sugar
1 cup cocoa (try to use Dutch processed cocoa powder for this for flavor and colour!)
1 ounce butter
1 tablespoon vanilla

Steps:

  • In a heavy-bottomed saucepan mix together the whipping cream and corn syrup.
  • In a bowl sift together the sugar and cocoa powder then add to the cream mixture in the saucepan; stir to combine.
  • Add in the butter then warm over very low heat; stirring occasioanlly until the butter is melted and mixed in with the other ingredients.
  • Remove from heat and stir in vanilla.
  • The glaze with thicken as it cools.
