- For the macaroni: Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
- Bring 4 quarts of water to a boil in a large saucepan. Add the salt and macaroni. Bring the water back to a boil and cook the macaroni until tender, about 12 minutes. Drain well.
- For the cheese sauce: Meanwhile, melt the butter in a 1-quart saucepan. Using a wire whisk, stir in the flour and salt, stirring and cooking over medium heat until the roux bubbles and the flour turns pale brown, about 3 minutes. Slowly whisk in 1 cup of the milk and then whisk in the remaining 1 cup milk. Continue to cook, stirring constantly, until the sauce thickens. Add the cheese and stir until it melts. Add the drained macaroni to the cheese sauce and mix thoroughly.
- For the topping: In a small bowl, stir the breadcrumbs with the butter until the crumbs are moistened.
- Transfer the macaroni and cheese to the prepared baking dish and top with the buttered breadcrumbs. Bake until the dish bubbles around the edges, about 15 minutes.

- Preheat the oven to 400 degrees F. Bring a large pot of salted water to a boil. Using a paring knife, score a 1/4-inch border around the edges of the top of the Brie about 1/4-inch deep. Carefully slice off the top rind in one piece using a chef's knife and staying within the border to make a lid; set the top aside.
- Place the Brie in an 8-inch cast-iron skillet and top the center with the sun-dried tomatoes, wine, red pepper, garlic and 1/2 teaspoon salt. Cover with the reserved top rind. Bake just until the cheese is melted and bubbling, 18 to 20 minutes.
- Meanwhile, during the last 10 minutes of baking, cook the pasta according to the package directions. Reserve 1/2 cup of the pasta water. Drain.
- Remove the top rind from the Brie. Sprinkle the basil over the melted cheese and gently stir to combine. Using tongs, gently toss a quarter of the pasta in the center of the melted cheese until coated and transfer to a plate. Repeat with the remaining 3 portions of pasta. If the cheese sauce thickens, stir in some pasta water, a tablespoon at a time.
BAKED BRIE WITH MAPLE CARAMELIZED APPLES AND SPICED PRALINE BACON

- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
- Lay bacon on the prepared baking sheet. Mix pecans, brown sugar, chili powder, and sea salt together in a bowl. Sprinkle evenly over the bacon.
- Bake in the preheated oven until crisp, and browned, 18 to 20 minutes. Transfer to a rack to cool. Chop bacon into rough pieces.
- Melt butter in a nonstick skillet over medium-high heat. Add apples and 1 tablespoon maple syrup. Saute, stirring only every 60 to 90 seconds, until apples are tender and brown, about 8 minutes. Mix in remaining 2 tablespoons maple syrup and cinnamon. Transfer to a bowl.
- Cut a round of parchment paper slightly larger than the round of Brie cheese. Place the Brie cheese on the parchment paper; place onto a baking sheet. Top with the cooked apples to make a big mound.
- Bake in the hot oven for 5 minutes. Add bacon-praline mixture on top of the Brie. Continue baking until top is bubbly, 2 to 3 minutes more. Transfer to a serving platter using a large spatula. Sprinkle with sea salt and rosemary.

- Preheat oven to 350.
- Butter a medium casserole dish and set aside.
- Boil pasta until al dente.
- Drain.
- While pasta cooks, melt 2 tablespoons butter in a large saucepan over medium-low heat.
- Sprinkle in flour and cook, stirring continuously for 2 minutes, to form a golden brown roux.
- Stir in milk and cream.
- Bring to a boil, stirring continuously, then reduce heat to low.
- Add cheese and continue to stir until melted and smooth.
- Salt and pepper to taste.
- Toss in drained pasta, combine very well, making sure the sauce soaks the pasta thoroughly.
- Pour into the prepared casserole dish.
- Stir together bread or cracker crumbs with 3 tablespoons melted butter.
- Sprinkle evenly over pasta.
- Bake for 15 minutes.
SPICY MACARONI AND BRIE WITH CRAB
Trying new mac and cheese recipes is always fun! This one fits the bill perfectly. :yummy: You'll love the flavor of the caramelized onion combined with creamy Brie cheese and the succulent crabmeat.:) The Brie cheese melts seamlessly into the sauce and the crisp bread crumb topping creates a beautiful contrast. This swanky mac and cheese was served to me by my friend Kerline and she added her personal Haitian touch to the dish! She served steaks done on the grill, this nice dish with a wonderful green salad - greens of all kind - with a champagne vinaigrette. The Haitian touch consisted of adding a Scotch Bonnet pepper (but it was taken out right at the exact moment),some hot sauce and a few things I wasn't able to figure out. - Preheat oven to 350º F.
- Lightly coat eight 14-to 16-ounce individual baking dishes with cooking spray; set aside.
- In large skillet cook onion in butter over medium-low heat about 15 to 20 minutes or until tender and golden brown, stirring occasionally.
- Meanwhile, cook pasta in 4-quart Dutch oven according to package directions and add a whole Scotch Bonnet pepper pierced once or twice; drain and return to pan.
- Add flour, salt, pepper & hot sauce (a couple of drops) to onion in skillet; stir until combined, about 1 minute. Add milk all at once. Cook and stir until slightly thickened and bubbly.
- Gradually add chopped cheese; cook over medium-low heat until cheese melts. Stir into pasta. Fold in crab. Transfer to baking dishes.
- Place bread pieces in food processor; cover and process to coarse crumbs. Sprinkle crumbs over pasta mixture.
- Bake, uncovered, 20 to 25 minutes or until heated through and crumbs are golden brown. If desired, add a wedge of Brie to each dish the last 5 minutes of baking time.
