6 large Vidalia onions
6 tablespoons butter
4 tablespoons all-purpose flour
2 cups chicken broth
1 cup heavy cream
½ cup milk
1 bunch chopped fresh parsley for garnish

Steps:

  • Slice onions thinly. Place half of the onions in a skillet with half of the butter; cook, covered, over medium-high heat until soft, about 10 minutes. Remove to a platter, and cook remaining onions with butter. Return two-thirds of the reserved onions to the skillet. (Reserve the rest for garnish.)
  • Stir in flour until well combined with onions. Slowly stir in chicken broth. Remove from heat, and let cool about 10 minutes. Stir in cream and milk.
  • Pour into a blender, and blend until smooth and creamy. Return to stovetop, and heat through over medium-low heat. Pour into bowls, and garnish with reserved onions and chopped parsley.

4 to 5 large Vidalia or sweet onions, chopped
3 tablespoons butter
1/4 teaspoon pepper
1 tablespoon all-purpose flour
4 cups beef broth
1-1/2 cups water
1 bay leaf
8 slices French bread, toasted
1/2 cup shredded Swiss cheese

Steps:

  • In a Dutch oven or soup kettle, saute the onions in butter until lightly browned. Sprinkle with pepper and flour. Cook and stir for 1 minute. Add the broth, water and bay leaf; simmer for 30-40 minutes, stirring occasionally. , Discard bay leaf. Ladle into ovenproof soup bowls; top with bread and cheese. Bake at 400° for 10 minutes or until cheese is golden brown.

1 onion, chopped
2 slices thick cut bacon, chopped
1/4 cup water
5 garlic cloves, pressed
5 large mushrooms, chopped
2 stalks celery, chopped
1 carrot, grated
5 potatoes, grated
1 1/2 cups wild leeks, chopped
1 teaspoon thyme
1/4 whole nutmeg, grated
10 cups beef stock
500 g kielbasa, chopped
1 cup half-and-half cream
1/3 cup sour cream

Steps:

  • Put bacon onions and water into a dutch oven cook till water evaporates an onion is translucent.
  • Add mushrooms and garlic sauté 2 minutes.
  • add celery and sauté 1 minute more.
  • Add stock to cover. Grate in potato and carrot add more stock if necessary. bring to a gentle boil and boil ten minutes.
  • Add leeks and kielbasa. And spices. Cook for 5 minutes more.
  • Take off burner add cream and sour cream. Salt and pepper to taste.

1 tablespoon butter
4 shallots, sliced thick
6 garlic cloves, peeled
3 branches fresh thyme
6 Vidahlia onions, peeled
1 1/2 quarts chicken stock, or canned chicken broth
3 tablespoons cold unsalted butter, cut into bits
Salt and pepper to taste
Black Truffle Oil for flavoring

Steps:

  • In a Dutch oven or casserole set over moderate heat melt the butter. Add the shallots and cook, stirring, for 3 minutes. Add the garlic cloves, thyme, onions, chicken stock and salt and pepper, bring to a boil on top of the stove and cover with foil and lid. Transfer Dutch oven to a preheated 325 degree oven and cook for 4 hours. Discard thyme.
  • In a blender puree soup, in batches, adding butter, a little at a time, until incorporated. Return to pan and heat until hot. Correct seasoning. Ladle soup into soup bowls and drizzle with truffle oil.

The smoked gouda cheese is optional (I've already skipped it totally because I had none, or used sharp cheddar or Swiss instead), but the smokey flavor of the cheese goes well with the sweetness of the leeks.

3 large leeks, diced (white and light green parts)
1 cup chopped vidalia onion (or other white onion)
6 green onions, chopped (white and light green parts)
1/3 cup flour
3 cups vegetable broth (or chicken broth)
1/4 cup white wine
1/8 teaspoon thyme
1/8 teaspoon ground mustard
1/4 teaspoon white pepper
salt, to taste
1 cup half-and-half (or heavy cream or light cream)
1/2 cup shredded smoked gouda cheese

Steps:

  • In a large soup pot over medium heat, melt butter. Add in leeks, and onions and saute for about 10 minutes or until they are tender, but not browned.
  • Stir in flour; mix well.
  • Add broth, wine, thyme, ground mustard, white pepper, and bring to a boil; reduce heat and simmer for 8-10 minutes.
  • Stir in half and half and optional cheese, if using it. Heat through.
  • Puree with immersion hand blender/blender/food processor to a semi-smooth texture (or make smooth, if desired).
  • Return to hot pot. Serve.

4 large onions, cut into 3/4-inch chunks (about 4 cups)
1 cup sliced leek (3 medium)
1 teaspoon Splenda brown sugar blend (or 2 tsps brown sugar)
3 cups sliced fresh mushrooms, such as shiitake, button or 3 cups brown button mushrooms
1 cup finely chopped carrot (2 medium)
1 (14 ounce) can reduced-sodium chicken broth
1 3/4 cups de-fatted beef broth (also reduced-sodium and should not be too strong)
1 1/2 cups cooked wild rice or 1 1/2 cups brown rice
2 tablespoons dry sherry (optional)

Steps:

  • In a large saucepan heat olive oil over medium-low heat. Cook onion and leeks in hot oil, covered, for 13 to 15 minutes or until onions and leeks are tender, stirring occasionally.   • Stir mushrooms and carrots into onion mixture. Cook and stir over medium heat about 3 minutes or until mushrooms are tender. Stir in chicken broth, the 1-3/4 cups beef broth, cooked rice, sherry (if desired), and pepper.
  • In a screw-top jar combine the 1/2 cup cold water and flour. Cover and shake until smooth; stir into the soup mixture. Cook and stir until slightly thickened and bubbly. Cook and stir for 1 minute more. Makes four 1-3/4-cup servings.

1/4 teaspoon white pepper
2 tablespoons vegetable oil
1/3 cup dry white wine
3 1/2 cups reduced-sodium chicken broth
1/4 cup grated Parmigiano-Reggiano
2 tablespoons unsalted butter
Garnish: almond oil or extra-virgin olive oil

Steps:

  • Trim roots from ramps and slip off outer skin on bupounds if loose. Cut green tops from ramps and coarsely chop enough greens to measure 3 cups (reserve remainder for another use). Thinly slice ramp bulbs, including pink stems.
  • Cook ramp bulbs, onion, white pepper, and 1/2 teaspoon salt in oil in a large heavy saucepan over medium heat, stirring occasionally, until softened, about 10 minutes. Add wine, then boil over high heat, stirring occasionally, until evaporated completely. Add broth and simmer, partially covered, stirring occasionally, until onions and ramps are very soft, about 20 minutes. Stir in ramp greens and boil 1 minute.

6 medium vidalia onions, outer layers removed
1/4 cup canola oil or 1/4 cup grapeseed oil
2 leeks, white part only, chopped
2 celery ribs, chopped
2 quarts low sodium chicken broth or 2 quarts canned chicken broth
1 cup sweet sherry
1 cup heavy cream
2 tablespoons finely chopped fresh thyme
kosher salt
white pepper, to taste
1 bunch fresh chives (to garnish)

Steps:

  • Wrap each onion separately in aluminum foil and place in a 300 degree oven (or in the coals of a fireplace or grill pit) until onions feel tender all the way through, about 1 1/2 to 2 hours.
  • Heat oil in a large pot.
  • Add leek and celery cooking until softened but not browned.
  • Remove onions from foil, quarter and add to pot.
  • Add chicken stock and sherry.
  • Simmer about 45 minutes.
  • Stir in cream and thyme and remove from heat.
  • In batches, puree mixture in a blender until smooth.
  • Add salt and pepper to taste.
  • Garnish each serving with chives.

2 tablespoons unsalted butter
3 slices bacon, diced
3 cups sliced onions
1 cup sliced shallot
1/4 teaspoon chili flakes
2 cups sliced leeks, well washed
2 teaspoons chopped garlic
1 cup dry white wine
2 teaspoons chopped thyme
4 cups chicken stock (homemade or low-sodium is best)
salt & freshly ground black pepper
4 slices multi-grain baguette
2 tablespoons olive oil
1/4 cup grated gruyere cheese
4 teaspoons brandy (optional)

Steps:

  • Heat butter in a soup pot with a wide bottom over medium heat. Add bacon and sauté for 3 minutes or until bacon is cooked but not crisp. Add sliced onion, shallots and chili flakes and sauté for 25 minutes, stirring occasionally, or until onions are golden.
  • Add leeks and garlic and sauté for 10 minutes or until leeks are very soft. Add wine, bring to a boil and simmer, scraping the bottom of the pan to incorporate any browned bits, until onions are just saucy, about 3 minutes.
  • Add chicken stock, bring to a boil, then turn heat to medium-low and simmer until flavours have come together, about 8 minutes more. Season with salt and pepper to taste.
  • While soup is simmering, make large croutons. Heat broiler or grill to high. Brush both sides of baguette slices with olive oil and broil or grill for 1 minute per side or until golden.
  • When you are ready to serve the soup, preheat broiler to high, and top each crouton with 1 tablespoon (25 mL) of grated cheese. Place baguette slices on a baking sheet, and broil for 1 minute, watching carefully, or until cheese is melted and bubbling.
  • Place soup in bowls, stir 1 tsp (5 mL) of brandy into each serving if desired, and top with a Gruyère baguette slice.
