FAMILY-FAVORITE OATMEAL COOKIES

Family-Favorite Oatmeal Cookies image

My mother got this recipe in about 1910 when she was a housekeeper and cook for the local physician. The doctor's wife was an excellent cook and taught my mother of lot of her cooking techniques. The cookies soon became a favorite in our home and, when I got married and had a family of my own, they were a favorite throughout the years. My five children also enjoy baking these cookies for their own families-it's a real family tradition.

FAMILY FAVORITE CHEWY APRICOT PECAN OATMEAL COOKIES

Family Favorite Chewy Apricot Pecan Oatmeal Cookies image

It was my turn to make the fellowship treat for church. Between Sunday School and the morning service we have a short coffee break where we enjoy coffee, juice and some sort of coffee cake etc... I wanted something some what healthy that everyone could easily grab. I had a big container of oatmeal and dried apricots in the pantry and used them as my jumping point. These even make a fantastic breakfast cookie!

SOFT CHOCOLATE-ALMOND OATMEAL COOKIES

Soft Chocolate-Almond Oatmeal Cookies image

Credit for the recipe goes to The Weekend Baker, by Abigail Johnson Dodge, my currently favorite cookbook. It yields delicious, soft, cakelike cookies, with added crunch from the toasted almonds. If you don't have any toasted almonds on hand, its easy to do before you start, almond slivers just need a stint the same oven temperature as the recipe requires--350 degrees-- for about 8 minutes. Also, I use the spoon-and-sweep method. Dip-and-sweep will result in too much flour.

Provided by Torrig

Categories     Dessert

Time 1h3m

Yield 45 cookies, 45 serving(s)

Number Of Ingredients 12

2 cups quick-cooking rolled oats
1 1/2 cups all-purpose flour
1/2 cup natural unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon table salt
1 1/3 cups firmly packed light brown sugar
16 tablespoons unsalted butter, at room temperature
1 large egg
1 teaspoon pure vanilla extract
1/2 teaspoon almond extract
1/3 cup whole milk
1 cup slivered almonds, toasted

Steps:

  • Preheat oven to 350 degrees, line three cookie sheets with parchment or nonstick baking liners.
  • In a medium bowl, combine the oats, flour, baking soda, and salt. Whisk until well blended.
  • In another large bowl combine the brown sugar and butter, beat with an electric mixer on medium speed until well combined. Add the eggs and vanilla and almond extracts and beat until well combined.
  • Pour in half of the dry ingredients and mix on low speed just until blended. Add the milk and mix until just blended. Pour in the remaining flour mixture and mix until just blended. Add the nuts and mix briefly to combine.
  • Shape the dough unto 1.5 in balls. Arrange the mounds on the cookie sheets, about 2 inches apart. Lightly dampen your fingertips and slightly flatten each mound, so they're about .5 inches thick.
  • Bake one sheet at a time on the middle rack until the cookies are puffed and still moist-looking on top, about 11 minutes.

WHITE CHOCOLATE CRANBERRY OATMEAL COOKIES

WHITE CHOCOLATE CRANBERRY OATMEAL COOKIES image

White Chocolate Cranberry Oatmeal Cookies are a classic favorite - soft, chewy oatmeal cookies packed with dried cranberries and white chocolate chips.

Provided by Jessica & Nellie

Categories     Cookies

Number Of Ingredients 12

2 cups all-purpose flour
1 Tbsp ground cinnamon
1 tsp baking soda
½ tsp salt
1 ½ cups butter (softened to room temperature)
1 cup light brown sugar
½ cup sugar
2 eggs
1 Tbsp vanilla extract
3 cups old-fashioned rolled oats
1 bag (12 oz white chocolate chips)
2 cups dried cranberries (Craisins)

Steps:

  • Preheat the oven to 350°.
  • Mix the flour, cinnamon, baking soda and salt together in a small bowl and set aside.
  • In a larger bowl, cream the butter and sugars together for at least 2-3 minutes, until light and creamy.
  • Add the eggs and vanilla and mix for another 2-3 minutes.
  • Add the dry mixture and mix just until combined.
  • Stir in the oats, mixing just until they are fully incorporated in the dough.
  • Fold in the dried cranberries and the white chocolate chips, mixing just until barely combined. Do not overmix the dough after you have added the flour mixture!
  • Use a cookie scoop to scoop the dough onto prepared cookie sheets. I prefer to use silicone baking mats, but parchment paper or lightly greased cookie sheets work fine as well.
  • Bake the cookies for about 10-12 minutes, or until the edges just barely start to brown. Let the cookies cool for a few minutes on the baking sheets before transferring to a wire rack to cool completely.

  • Preheat oven to 350 degrees. In a large bowl, beat the butter until smooth and almost fluffy, about 2 minutes. Add the sugars and continue beating until the mixture is light and fluffy, about 4-5 minutes. Add the eggs and vanilla and beat until smooth again.
  • In a separate bowl, whisk together all of the dry ingredients except the butterscotch chips. Gradually add this mixture to the wet ingredients, half at a time. Stir until fully combined. Add the butterscotch chips and stir well.
  • I used a medium size cookie scoop (about a tablespoon in size) to drop the dough onto a large baking sheet lined with a silpat mat. Bake for 8-9 minutes. Remove from the oven before the cookies are browned and when they still look soft in the center. Let them cool on the same tray for 5-10 minutes; this will allow them to finish baking without overcooking.
  • When the cookies are firm enough to handle, transfer them to a wire cooling rack and let cool completely. The finished cookies freeze well and the dough also freezes well. When I am baking the cookie dough straight from the freezer, I allow a few extra minutes for the baking.
