Rich and full of raspberry and chocolate flavors, combined perfectly in this gluten free flourless cake!

10 oz dark chocolate ((65% cacao or better))
3/4 cup butter ((cubed))
6 large eggs
1/4 cup sugar ((or honey - add 1 Tbsp more cacao if substituting honey))
2 cups raspberries ((mash 1 c of the berries slightly - reserve 1 c for topping baked cake))
2 Tbsp cacao powder ((or cocoa, for coating the mashed raspberries))
2 Tbsp confectioners sugar ((for dusting the baked cake when serving))

Steps:

  • Preheat your oven to 325 degrees F (162 degrees C) and line the bottom of an 8 inch springform pan with parchment paper. Butter the sides of the pan, or coat with non-stick cooking spray, and dust with cacao powder (or cocoa).
  • Break the chocolate pieces into small pieces, as uniform in size as possible. Place in a large bowl, add the butter, and microwave in 30 second increments. Stir after each 30 second heating, until all of the chocolate is melted, mixed with the butter, and smooth.
  • Beat the eggs and sugar (or honey + cacao powder) using a stand mixer or hand mixer until light and bubbly. The egg mixture will nearly double in volume when beaten. Gently fold the beaten egg mixture into the chocolate a little bit at a time, carefully trying not to burst all of the bubbles. Add in portions of the egg mixture until fully incorporated to the chocolate.
  • Mash the fresh raspberries with the back of a spoon, only partially breaking them up. Stir cacao powder in just enough to coat the mashed raspberries, then gently add into the cake mixture. Only stir the raspberries enough that they are distributed throughout the cake batter.
  • Transfer to the springform pan and bake at 325 degrees F (162 degrees C) for 40-45 minutes or until the center of the cake is only slightly jiggly but firm to the touch. Allow to cool to room temperature, then refrigerate for at least two hours before serving. Top with more raspberries and confectioners sugar, if desired.

9 ounces semisweet baking chocolate chips (about 1 1/2 cups)
3/4 cup unsalted butter
3/4 cup maple syrup
1 teaspoon vanilla extract
2/3 cup Dutch process cocoa powder
1/4 teaspoon kosher salt
4 large eggs, plus 1 egg yolk
To serve: Powdered sugar for dusting, Easy Raspberry Compote (or Strawberry Sauce)

Steps:

  • Preheat the oven to 350°F.
  • Cut a sheet of parchment paper into a circle to fit the bottom of an 8 or 9-inch springform pan. Place the parchment circle on the bottom and butter the entire pan, including the parchment paper.
  • Fill a large saucepan halfway with water and bring to a simmer. Once the water is simmering, turn off the heat and place a large heat proof bowl over the saucepan. Add the chocolate and butter to the bowl, and stir until the chocolate is fully melted. (You can also melt the chocolate in the microwave in a liquid measuring cup, heating for a minute and then stirring, several times until the chocolate and butter are melted.)
  • Once the chocolate is melted, remove the bowl to the counter and slowly whisk in the maple syrup, vanilla extract, cocoa powder, and kosher salt. Whisk in the eggs and egg yolk until fully incorporated. Pour the batter into the prepared pan and smooth into an even layer with a spatula.
  • Wrap aluminum foil tightly around the pan. Place it in a large pan (like a 9 x 13″ baking dish) and pour boiling water around it. The step ensures that the middle of the cake won't sink in slightly. If you don't feel like messing with it, you can skip this step: it looks just as good without.
  • Bake 30 to 35 minutes until a thin crust forms on the cake and the middle is still slightly wobbly. The internal temperature should be 150F.
  • Cool in the pan on a cooling rack until it is room temperature, about 1 hour. You can serve immediately or chill for 1 hour to get a more fudgy texture (that's our favorite way to serve it). Store in fridge up to 3 days. (You can also make it ahead and freeze it; it freezes well)
  • Invert the cake onto a plate, then gently remove the parchment from the bottom. Revert the cake onto a serving platter and dust with cocoa powder. Dust with powdered sugar and serve with Raspberry Compote.

Chocolate chips save you the messy step of chopping chocolate bars and deliver deep flavor along with cocoa powder. If you don't have a springform pan, a regular cake pan lined with foil all around makes it easy to lift out the delicate cake, which melts in your mouth when served warm or at room temperature. Refrigerated or frozen leftovers take on a candylike chewiness, but a quick zap in the microwave will return it to just-baked softness. Slices are delicious on their own or with any creamy toppings.

3/4 cup/168 grams unsalted butter, cut up, plus more for greasing the pan
1 cup/173 grams bittersweet or semisweet chocolate chips
1/2 cup/50 grams unsweetened natural cocoa powder
3/4 cup/150 grams granulated sugar
4 large eggs
1 teaspoon pure vanilla extract

Steps:

  • Heat oven to 350 degrees. Generously butter the bottom and sides of an 8-inch springform pan, or press a large sheet of foil into the bottom and up the sides of an 8-inch round cake pan, smoothing the sides, and generously butter the foil.
  • Bring a few inches of water in a large saucepan to a simmer over medium heat. Set a large heatproof bowl over the saucepan and add the chocolate. When the chips look soft and melty, stir gently until smooth. Turn off the heat, and add the butter to the bowl. Stir gently until melted and smooth. Add the cocoa powder and stir until smooth, then take the bowl off the saucepan.
  • Stir in the granulated sugar until incorporated, then add the eggs, one at a time, and beat well after each addition. Stir in the vanilla, then scrape the batter into the prepared pan and smooth the top.
  • Bake until crackly and dry on top, and a toothpick inserted 2 inches from the edge comes out clean, 40 to 50 minutes. A toothpick inserted in the center should come out with some crumbs attached.
  • Cool in the pan on a rack, then remove the sides of the springform pan or lift the cake out of the cake pan using the foil overhang. You can slice and serve warm or at room temperature. Or, to cut very neat slices, freeze the cooled cake until firm. Slice and warm up in the microwave or oven, if preferred. Serve the cake with whipped cream or ice cream, if you'd like. The cake can be wrapped and kept at room temperature for up to 3 days, in the refrigerator for up to 1 week or in the freezer for up to 1 month.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 10-inch cake pan.

1 (6 ounce) package semi-sweet chocolate chips (1 cup)
1/2 cup butter or 1/2 cup margarine
1/2 cup all-purpose flour
4 eggs, separated
1/2 cup sugar
1/2 cup semi-sweet chocolate chips
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons light corn syrup
1/2 cup whipped cream
fresh raspberry, if desired
1 (10 ounce) package frozen raspberries, thawed, drained and juice reserved
1/4 cup sugar
2 tablespoons cornstarch
1 tablespoon orange liqueur (to taste) or 1 tablespoon raspberry liqueur, if desired (to taste)

Steps:

  • Heat oven to 325ºF.
  • Grease bottom and side of springform pan, 8x2 1/2 inches, or round pan 9x1 1/2 inches.
  • Melt 1 package chocolate chips and 1/2 cup butter in 2-quart heavy saucepan over medium heat; cool 5 minutes.
  • Stir in flour until smooth.
  • Stir in egg yolks until well blended.
  • Beat egg whites in large bowl with electric mixer on high speed until foamy.
  • Beat in sugar, 1 tablespoon at a time, until soft peaks form.
  • Gently stir chocolate mixture into egg whites.
  • Spread in pan.
  • Bake springform pan 35 to 40 minutes, round pan 30 to 35 minutes (top will appear dry and cracked) or until toothpick inserted in center comes out clean; cool 10 minutes.
  • Run knife along side of cake to loosen; remove side of springform pan.
  • Turn cake upside down onto wire rack; remove bottom of springform pan and cool completely, about 1 hour.
  • Place on serving plate.
  • Heat 1/2 cup chocolate chips, 2 tablespoons butter and the corn syrup over medium heat until chocolate chips are melted.
  • Spread over top of cake, allowing some to drizzle down side.
  • Place whipped cream in decorating bag fitted with tip.
  • Pipe a rosette on each serving. Serve with Raspberry Sauce.
  • Garnish with fresh raspberries.
  • Raspberry Sauce:.
  • Add enough water to reserved juice to measure 1 cup.
  • Stir together sugar and cornstarch in 1-quart saucepan.
  • Stir in juice and raspberries.
  • Heat to boiling over medium heat.
  • Boil and stir 1 minute; strain.
  • Stir in liqueur.
  • Refrigerate any remaining sauce.

You will have to double the cake ingredients to make the upper and lower levels.

1 cup unsalted butter
6 ounces semisweet chocolate, chopped
1 1/4 cups sugar
4 extra large eggs

  • Reduce heat to low and add chocolate, cream and butter.
  • Stir until chocolate and mix is smooth.
  • Cool until mix thickens but is still pourable about 45 minutes.
  • Serve with fresh raspberries on the side and on top.
