ASIAN BARBECUE SAUCE

Asian Barbecue Sauce image

An easy Asian Barbecue Sauce recipe.

Categories     Condiment/Spread     Sauce     Ginger     No-Cook     Quick & Easy     Summer     Grill/Barbecue     Honey     Shallot     Gourmet

Yield Makes about 1 cup

Number Of Ingredients 10

6 tablespoons hoisin sauce*
2 tablespoons rice vinegar (not seasoned)
1 tablespoon Asian fish sauce
1 tablespoon soy sauce
1 tablespoon honey
1/3 cup minced shallot
2 garlic cloves, minced
1 tablespoon minced peeled fresh ginger
1/8 teaspoon Chinese five-spice powder
1/3 cup sugar

Steps:

  • Stir together all ingredients except sugar in a bowl.
  • Cook sugar in a dry heavy saucepan over moderate heat, undisturbed, until it begins to melt. Continue to cook, stirring occasionally with a fork, until sugar is melted into a deep golden caramel. Tilt pan and carefully pour in hoisin mixture (caramel will harden and steam vigorously). Cook over moderately low heat, stirring, until caramel is dissolved and sauce is thickened, 6 to 8 minutes. Cool to room temperature. Serve with shrimp, swordfish, pork, or chicken.
  • Our two favorite brands are Koon Chun and Lee Kum Kee, both from Hong Kong. We found them in New York's Chinatown, but they're also available by mail order from Uwajimaya (800-889-1928).

EASY CHAR SIU (CHINESE BBQ PORK)

Easy Char Siu (Chinese BBQ Pork) image

The secret to this char siu recipe lies in the marinade and basting the BBQ pork while it's roasting. A classic Cantonese dish that's simple to make at home.

Provided by Tony Tan

Yield Serves 3-4

Number Of Ingredients 12

1 lb 2 oz (500 g) pork shoulder
2 garlic cloves, finely chopped
Thinly sliced scallions, to serve
1 Tbsp. light soy sauce
1 tsp. dark soy sauce
½ tsp. white pepper
1 Tbsp. hoisin sauce
2 cubes red fermented bean curd, mashed
½ tsp. Chinese five-spice
1 Tbsp. honey
1 Tbsp. Mei Kuei Lu Chiew liquor
A few drops red food coloring (optional)

Steps:

  • Cut the pork lengthways into strips 2 inches wide and 1-inch thick and put into a nonreactive container. Combine the marinade ingredients in a saucepan over low heat and stir together. Leave to cool, then stir in the garlic and massage the marinade into the pork. Cover with plastic wrap and marinate in the refrigerator for 5-6 hours or overnight.
  • Preheat the oven to 425°F. Bring the pork back to room temperature and drain off the excess marinade into a small bowl. Place the pork on a rack in the middle of the oven and put a roasting pan containing a cupful of hot water underneath on the bottom rack. Roast the meat for 20 minutes, basting with the marinade occasionally. Reduce the oven to 350°F and roast for a further 15 minutes or until the internal temperature of the meat reaches 165°F.
  • Cool the pork briefly, then cut it into bite-size pieces. Garnish with spring onions and serve as an appetizer or with steamed rice as a light meal.

TEN THINGS TO LOVE ABOUT HONG KONG STYLE BARBECUE

From guide.michelin.com
  • Individual Barbecue Forks. In most countries, outdoor barbecue means grilling meat, seafood and other ingredients on a large grill. The backdrop of the feast can be held in either a backyard or somewhere in the wild.
  • Charcoal Grilled Meat. Charcoal is a common fuel for barbecues in Hong Kong, with the exception of some private housing estates which have electricity or gas-powered grills.
  • The Technique of Starting A Fire. It might sound easy enough to stack the charcoal pieces on the grill and burn them to get the fire going. But how to do it could be a contentious topic, especially when the process takes longer than anticipated, and people’s hunger and impatience get in the way.
  • Variety of Food. Theoretically, any food can put grilled. And in Hong Kong, there’s no end to the variety of food items for barbecues. In addition to the most popular meat and seafood, vegetables, fruits, bread and marshmallow are some mainstream choices.
  • Food Preparation. As pervasive as barbecue is to Hong Kong diners, not many people have the time to prep their food in advance. Thankfully, there are butcher shops and companies specialising in barbecue food.
  • Getting the Food on the Fork. Tip for becoming the Mr. or Ms. Popular among your group of friends: have good food-skewering skills. Hong Kong style barbecue forks are U-shaped.
  • Is It Cooked? This is as hard as any existential question in the world. Other than taking the piece of food out from the fork and put it in the mouth, there’s no other way to tell whether it’s cooked.
  • Drinks to Match. After spending a long time in front of a flaming grill, anyone could use some chilled drinks. Portable fridge is your best bet in the alfresco setting to carry your favourite the beer and soft drinks.
  • Keep the Music Going. Back in the days, a barbecue would always be accompanied by a cassette player. The group agreed on the playlist (sometimes dictated by the cassette player owner), and picked songs by the likes of Alan Tam, Leslie Cheung, Michael Jackson, Madonna, Akina Nakamori and Masahiko Kondo.
