2 teaspoons drained sweet pickle relish
1 liter canola, approximately, as needed for deep-frying

SOUTHERN FRIED CATFISH

Southern Fried Catfish image

Fried catfish is a Southern tradition, along with buttermilk hush puppies and buttermilk coleslaw. Try these traditional foods together.

Provided by Mama Smith

Categories     Seafood     Fish     Catfish

Time 30m

Yield 2

Number Of Ingredients 8

½ cup buttermilk
½ cup water
salt and pepper, to taste
1 pound catfish fillets, cut in strips
1 ½ cups fine cornmeal
½ cup all-purpose flour
1 teaspoon seafood seasoning, such as Old Bay™
1 quart vegetable oil for deep frying

Steps:

  • In a small bowl, mix buttermilk, water, salt, and pepper. Pour mixture into a flat pan large enough to hold the fillets. Spread fish in one layer over bottom of pan, turning to coat each side, and set aside to marinate.
  • In a 2 gallon resealable plastic bag, combine the cornmeal, flour, and seafood seasoning. Add fish to mixture, a few fillets at a time, and tumble gently to coat evenly.
  • Heat oil in deep fryer to 365 degrees F (185 degrees C).
  • Deep fry fillets until golden brown, about 3 minutes. Avoid overcrowding so fillets have room to brown properly. Fish should be slightly crisp outside, and moist and flaky inside. Drain on paper towels.

CLASSIC SOUTHERN-FRIED CATFISH

Classic Southern-Fried Catfish image

Catfish is versatile and can be cooked in a number of ways, but for a traditional Southern recipe, it should be fried. Hush puppies are a great side.

Provided by Diana Rattray

Categories     Entree     Dinner

Time 17m

Yield 6

Number Of Ingredients 9

6 catfish fillets, 6-ounces each
1 cup buttermilk
1 cup cornmeal, preferably yellow
1 cup all-purpose flour
2 teaspoons table salt
1 teaspoon ground paprika
1 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1 cup vegetable oil, for frying

Steps:

  • Gather the ingredients.
  • Preheat the oven to 200 F. Line a rimmed baking sheet with foil and place a rack in the pan.
  • Arrange the catfish in a wide, shallow bowl or pie plate. Pour the buttermilk over the fish.
  • Combine the cornmeal, flour, salt, paprika, cayenne, and garlic powder on a pie plate.
  • Take the fish out of the buttermilk and dredge the fish fillets in the flour mixture to coat thoroughly. Shake off excess flour mixture.
  • Heat up 1 inch of oil in a deep, heavy skillet or heavy Dutch oven over high heat.
  • The oil must be 350 F. Use a candy thermometer or drop a pinch of the flour mixture into the oil-if it bubbles and floats, the oil is ready. Just be mindful of maintaining the oil temperature while cooking the fish. Don't overcrowd the pan, as doing so will lower the oil temperature.
  • Carefully place 2 to 3 fillets in the pan.
  • Cook for about 5 to 6 minutes, or until golden brown. If the oil isn't deep enough to cover the fish, turn the fillets carefully after about 3 minutes.
  • Remove the fish to the rack in the baking pan and place in the oven while you cook another batch. Repeat until all of the fish fillets are cooked. Serve hot with your favorite sides.

SOUTHERN AIR FRYER CATFISH

Southern Air Fryer Catfish image

Our Southern Air Fryer Catfish recipe is a healthier twist on traditional Southern deep fried catfish. The air fryer method fries without using oil.

Provided by Brooke

Categories     Main Course

Time 22m

Number Of Ingredients 13

4 fillets catfish (frozen or fresh)
1/2 cup fine yellow cornmeal
1/4 cup flour
1 egg (large)
1/4 cup buttermilk
1 tsp paprika (traditional or smoked)
1/4 tsp cayenne pepper
1/4 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
1/4 cup grated parmesan cheese
1 lemon (in wedges)

Steps:

  • Preheat your air fryer for 2-3 minutes at 400 degrees.
  • In a dish, measure and mix your cornmeal, flour, cheese, garlic and onion powders, cayenne, paprika, salt and pepper.
  • In a different dish, use a fork or a whisk to scramble up your egg and buttermilk.
  • Pat each catfish fillet dry with a paper towel, then dip into the egg mixture, coating both sides letting the excess drip back into the dish. A thin coating is all you need to get the crust to stick.
  • Press the catfish into the cornmeal mixture on both sides of fish, making sure to coat fully and evenly.
  • Using your tongs, carefully set your fillets evenly on the air fryer basket surface. If you wish to give a light spray of olive oil for extra crispiness and to prevent sticking, do this now.
  • Set your timer for 12 minutes, turning with your tongs halfway through the cooking time. At the halfway point, you can also remove from the basket to spray a small amount of lemon juice or oil to prevent it from drying out. Place back in the basket and cook the additional time.
  • Remove from air fryer and check to be sure that your catfish is cooked all the way through.

SOUTHERN FRIED CATFISH

Southern Fried Catfish image

Almost all southern recipes are what is typically called soul food. My dad was a great cook, he often cooked for his soldiers while in the war in Vietnam. He loved cooking for crowds and I remember during the catfish tournaments he would help with frying all the catfish at the fish fry's. They would serve this along with huge pots of creamed corn- which I as a child helped to shuck fresh from the owners farm that day. Lots of watermellon and coleslaw, cucmber salads and all the summer picnic foods- WOW the memories that brings back.

SOUTHERN FRIED CATFISH

Southern Fried Catfish image

Southern Fried Catfish is a staple in every Southern kitchen. You can't beat freshly caught catfish filets, dredged in perfectly seasoned cornmeal breading and fried until the inside is perfectly tender and the outside is a crisp, golden brown.

Provided by Kari

Categories     Main Course

Time 45m

Number Of Ingredients 14

1 - 2 pounds catfish filets (cleaned and deboned)
⅔ cup cornmeal
¼ cup whole wheat flour
1 ½ teaspoons seasoning salt
½ teaspoon lemon pepper seasoning
¼ teaspoon paprika
¼ teaspoon cayenne pepper ((optional))
2 eggs
3 tablespoons buttermilk
2 teaspoons Tabasco Sauce
lemon wedges
tartar sauce
extra Tabasco sauce
2 - 4 cups frying oil

Steps:

  • Combine the wet ingredients in a large bowl - whisk the eggs, buttermilk, and hot sauce together.
  • Now, soak the catfish fillets in the egg mixture. Make sure the fillets are fully coated. Let that sit while you mix up the dry ingredients.
  • In a large bowl combine the dry ingredients - flour, cornmeal, salt, paprika, pepper, and lemon pepper. (And cayenne if you are using it.)
  • Mix well to ensure an even distribution of seasoning.
  • Now, dredge the soaked fillets in the cornmeal mixture and make sure they are fully coated. Shake off any excess breading.
  • Place the fillets on a plate and cover. Let them sit in the refrigerator for 10 - 15 minutes while you heat your oil - this will help the breading stick to the fish.
