Steps:
- Combine flour, baking powder and salt and set aside. Beat eggs in a large bowl until thick and lemon colored. Beat in honey and almond extract.
- Gradually add in dry ingredients blending well. Stir in dates and almonds. Spread evenly in a 13 x 9 inch greased pan.
- Bake at 350 degrees F (175 degrees C) 12-15 minutes until lightly brown on top. Cool 2 minutes in pan. Cut into bars. When cool, sprinkle with confectioners' sugar.

FRUIT, HONEY AND COCONUT ENERGY BARS
Why pay almost $3 or $4 for an overpriced box of trail mix-style bars when you can make your own easily? A 6 ounce bag of puffed brown rice cereal goes for 80 cents at our local supermarket, and 6 ounces is a lot of puffed rice! You can use natural, low-sugar or low-fat peanut butters, use raisins instead of dried cherries or substitute chocolate or carob chips for the coconut (or include everything you can!). In addition to the sunflower seeds, I like to add sesame seeds for extra crunch as well.

Steps:
- Grease an 8x8 pan with a little butter.
- In a large bowl, mix together the peanut butter, honey and vanilla extract until well-combined.
- Add the sunflower seeds, dried fruit, sesame seeds and coconut and combine thoroughly with the peanut butter mixture.
- Gradually add the puffed brown rice cereal to this.
- This is where a child comes in handy-- this step is gooey and messy and best mixed with your hands- and kids love stuff like that.
- Firmly press the mixture into the prepared 8x8 pan; you'll need to wet your hands slightly, otherwise the mixture just sticks to them.
- Cover and refrigerate for a couple of hours, then cut and serve.
- They're very rich!

- Add dry ingredients which have been sifted together.
- Add dates, nuts, and cherries.

- Preheat oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking dish or jelly roll pan with parchment paper.
- Mix oats, walnuts, brown sugar, dried fruit, all-purpose flour, whole wheat flour, wheat germ, cinnamon, and salt together in a bowl.

- Preheat oven to 350°F.
- In a large bowl, mix all dry ingredients. Add dried fruits and walnuts.
- In a medium bowl, combine yogurt, egg, apple juice concentrate, and oil.
- Make a well in the center of the dry ingredients and add the wet ingredients until blended.
- Coat a 9 X 13 inch pan with vegetable spray, spread batter in pan.

- Heat oven to 375 degrees.
- In a medium bowl, combine oranges, banana, apples, raisins, orange juice, and 1 tsp of the ground cinnamon; set aside.
- Beat together margarine, applesauce and brown sugar until creamy. Add flour, oatmeal and remaining 1/2 teaspoon of ground cinnamon, to the sugar mixture; mix well.
- Measure out 1 1/4 cups of the batter and reserve for topping. Lightly press the remaining oat mixture onto bottom of ungreased 9" x 13" baking pan. Bake 15 minutes.
- Remove from oven; spread fruit mixture evenly over crust to within 1/4" of the edges. Sprinkle oat mixture evenly over fruit, patting gently. Bake 16-20 minutes or until golden brown.
- Cool completely; cut into bars.
- Store loosely covered.

BEST FRUIT AND NUT BARS

- 1. Preheat oven to 325.
- 2. Grind whole flaxseed in a coffee or spice grinder. Combine with peanut butter, honey, salt, and water in large bowl and stir to combine.
- 3. Add dried fruits, nuts and seeds in whatever combination you like. Batter will be very stiff.
- 4. Spray 12 cup muffin tin with nonstick spray and divide batter evenly into cups. Use damp fingers to press batter into cups and flatten tops.
- 5. Bake 25 to 30 minutes until tops are dry and edges are a deep, toasty brown (bars will not rise). Cool completely and store in air-tight container for up to two weeks.

- Stir flour, baking powder and salt together. Beat eggs until light; add sugar gradually, beating well after each addition.

APRICOT AND RAISIN FRUIT BARS
Delicious and easy fruit bars that make good use of your food processor. These bars have a very intense not-too-sweet apricoty flavor, so are best if cut into small squares.

Steps:
- Preheat oven to 350°F.
- Cut butter in pieces and place in the food processor bowl (fitted with the steel knife) with flour, powdered sugar and a pinch of salt.
- Process until blended using on/off turns (5-10 seconds).
- Press into a 9 x 9-inch pan.
- Bake for 15-20 minutes.
- While crust is baking, make the topping.
- Place drained apricots, raisins, one tablespoon lemon juice and 1/2 cup sugar in the processor bowl and process until chopped finely (5-10 seconds).
- Pour into a seperate bowl and set aside.
- Add eggs to processor bowl and mix using on/off turns for 5-10 seconds.
- Add 2 tablespoons lemon juice, baking powder, 1/8 teaspoon salt, and apricots/raisin mixture.
- Process using 3 on/off turns.
- Fold in cashews, using one on/off turn.
- Spoon mixture over baked crust, spreading evenly and covering whole crust.
- Return to oven for 30-35 minutes or until done.
- Cool on rack and sprinkle with powdered sugar if desired.
- Cut into squares.
