HAMBURGERS (TAVERN STYLE)

Hamburgers (Tavern Style) image

Here is the hamburger you get in better taverns and bars, plump and juicy, with a thick char that gives way to tender, medium-rare meat. It is best cooked in a heavy, cast-iron skillet slicked with oil or fat. Ask a butcher for coarse-ground chuck steak, with at least a 20 percent fat content, or grind your own. Keep it in the refrigerator until you are ready to cook, and then when you do, form your patties gently. Season after the meat is in the pan.

Categories     burgers, main course

Time 20m

Yield 4 servings

Number Of Ingredients 6

1/2 teaspoon neutral oil, like canola, or a pat of unsalted butter
2 pounds ground chuck, at least 20 percent fat
Kosher salt and black pepper to taste
4 slices cheese (optional)
4 soft hamburger buns
Lettuce leaves, sliced tomatoes and condiments, as desired

Steps:

  • Add oil or butter to a large cast-iron or stainless-steel skillet and place over medium heat. Gently divide ground beef into 4 small piles of around 8 ounces each, and then lightly form these into thick patties of around 3 1/2 inches in diameter, like flattened meatballs. Season aggressively with salt and pepper.
  • Increase heat under skillet to high. Put hamburgers into the skillet with plenty of distance between them and allow them to cook, without moving, for approximately 3 minutes. Use a spatula to turn hamburgers over. If using cheese, lay slices on meat.
  • Continue to cook until meat is cooked through, approximately another 3 to 4 minutes for medium-rare. Remove hamburgers from skillet and allow to rest for approximately 5 minutes; meanwhile, toast the buns. Place hamburgers on buns and top as desired.

HAMBURGERS (DINER STYLE)

Hamburgers (Diner Style) image

This is the traditional, griddled hamburger of diners and takeaway spots, smashed thin and cooked crisp on its edges. It is best to cook in a heavy, cast-iron skillet slicked with oil or fat, and not on a grill. For meat, ask a butcher for coarse-ground chuck steak, with at least a 20 percent fat content, or grind your own. Keep it in the refrigerator until you are ready to cook, and try not to handle it with your fingers - use an ice-cream scoop or spoon instead. Plop down a few ounces in the pan, smash it with a spatula, salt it, let it go crisp and flip. Add cheese and get your bun toasted. The process moves quickly.

Time 20m

Yield 4 to 8 servings

Number Of Ingredients 6

1/2 teaspoon neutral oil, like canola, or a pat of unsalted butter
2 pounds ground chuck, at least 20 percent fat
Kosher salt and black pepper to taste
8 slices cheese (optional)
8 soft hamburger buns, lightly toasted
Lettuce leaves, sliced tomatoes and condiments, as desired

Steps:

  • Add oil or butter to a large cast-iron or stainless-steel skillet and place over medium heat. Gently divide ground beef into 8 small piles of around 4 ounces each, and even more gently gather them together into orbs that are about 2 inches in height. Do not form patties.
  • Increase heat under skillet to high. Put half the orbs into the skillet with plenty of distance between them and, using a stiff metal spatula, press down on each one to form a burger that is around 4 inches in diameter and about 1/2 inch thick. Season with salt and pepper.
  • Cook without moving until patties have achieved a deep, burnished crust, a little less than 2 minutes. Use the spatula to scrape free and carefully turn burgers over. If using cheese, lay slices on meat.
  • Continue to cook until meat is cooked through, approximately a minute or so longer. Remove burgers from skillet, place on buns and top as desired. Repeat process with remaining burgers. Serving two hamburgers on a single bun is not an outrageous option.

QUARTER POUNDER DINER BURGER RECIPE

Quarter Pounder Diner Burger Recipe image

Diner Burgers are small disks, 4 ounces or less, as opposed to big thick Steakhouse Steakburgers. I have named my version of the Diner Burger after J. Wellington Wimpy, a character in the Popeye cartoon series, who was addicted to burgers. This style of pressed burger has also become known as a smash burger.

Provided by Kris Coppieters

Categories     Dinner     Lunch     Main Course

Number Of Ingredients 12

1 pound finely ground chuck steak or short rib meat, at least 20% fat
Morton Coarse Kosher Salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon onion powder
1/4 teaspoon garlic powder ((not garlic salt))
1 tablespoon beef fat, bacon fat, or vegetable oil
4 hamburger buns
2 tablespoons butter
4 slices of American cheese
4 thin slices of sweet onion
4 leaves of crunchy lettuce
Meathead's burger glop

Steps:

  • Prep. Place the meat in a large mixing bowl. If you are grinding the meat yourself, use the smaller holes on your grinder, or grind the meat twice so that the burgers are compact and hold together well.
  • Mix in the mix-ins in a bowl using a fork or your hands. Pack the meat into a ball about 2-inches across. A #8 ice cream scoop is 2.75-inches and, when leveled, holds just about four ounces, a perfect quarter pounder. Use a scoop or a kitchen scale or a ruler until you can make the right size balls blindfolded. Then put them in the fridge for about 20 minutes before cooking so the center does not cook as quickly.
  • Fire up. Preheat a cast iron griddle or heavy frying pan to about at least 350°F, as hot as you can get it. We want it well above 300 to 310°F, the temp at which Maillard browning happens.
  • Cook. Add 1 teaspoon of butter per bun to the griddle. It will foam quickly, so spread it out evenly over the surface, place the buns, cut-side down into the butter, press them down with the spatula and put a dinner plate on top of them so they make good contact with the surface, and cook until the bread turns golden. Yes, the tops will be smushed, but the butter will brown and get a nutty taste, and the edges of the buns should be extra crispy. Then remove the buns and wipe the griddle with a paper towel.
  • Melt some beef fat, bacon fat, or pour some vegetable oil on the griddle. You want just a thin coat. Do not use butter. It has too much water in it. When it begins to smoke, add the burger balls, and press down with a solid spatula so there is good contact between the meat and the surface and so the edges are jagged. A slotted spatula will not do the job. You need to smash the burger soon after the patty goes on, and not again until you flip. We don't want to squeeze out hot juices. After smashing, quickly work the spatula or a spoon along the edges, pressing down so they are ragged, thin, and make good contact with the surface. We're going for brown edges here. Sprinkle the top side with salt. Leave the lid open and back away. Don't touch the burgers for about 3 minutes. Maybe 5 minutes, depending on how hot your pan gets. You want them in intimate contact with the surface. Also, you need two spatulas, one to smash the raw meat, and a clean one to flip and serve.
  • Now it will take you a couple of tries to know exactly when to flip, so at first you may have to peek. The bottoms should be dark brown. If they are, gently work a clean spatula under the burgers, pressing on the griddle to make sure you don't leave brown bits behind and that they don't break apart. I sharpen my spatula on a grinder to make sure the egdes don't leave brown bits behind. Flip the burgers and press them into into max contact with the surface but not so hard that you squeeze out vital fluids. Leave the juices in the meat. No need to salt if you salted the other side. If you are making a cheeseburger, place the cheese on now and close the lid on the grill. If you are working indoors, place a mixing bowl, pie pan, pot, or disposable aluminum pan over the burgers to speed the melting of the cheese. Check the color of the bottom after 2 minutes. Don't take them off until the surface is right, even if you fear the interior is overcooking. If you got 20 to 30% fat meat and you didn't cook too hot, they'll be juicy.
  • Serve. Once they are fully cooked, place each patty on a bun along with onion and lettuce, then dress with Meathead's burger glop before serving.

PERFECT BURGER RECIPE

Perfect Burger Recipe image

The Best Burger Recipe! Sharing our secrets for making restaurant quality burgers, from the juiciest burger patties to the best buns and burger sauces.

Provided by Natasha of NatashasKitchen.com

Categories     Easy

Time 30m

Number Of Ingredients 9

1 lb ground chuck beef ((80/20))
salt (to taste)
black pepper (to taste)
4 burger buns
4 slices medium cheddar cheese ((thick sliced))
1 large tomato (sliced into 8 rings)
1/2 bunch green leaf lettuce
1/2 medium red onion (thinly sliced into rings)
1/2 cup dill pickle slices

Steps:

  • Slice, and prepare all of your burger toppings and sauces.
  • Spread the cut-side of the bun with softened or melted butter and toast the cut side on a skillet or on the grill until golden brown. You can toast the bun ahead or in the last couple of minutes with the burgers on the grill. Toasting the bun adds great flavor and prevents a soggy bun.
  • Preheat grill to medium heat. Divide beef into 4 portions and form patties that are about 1/2" thick and 1" wider than the burger buns. Season patties generously with salt and pepper.
  • Grill burger patties (indent-side-up) covered for 3-5 min each side on the grill. Flip burgers when juices are accumulating on top of burger and you have a good sear. Apply cheese in the last 1-2 minutes of grilling then cover with lid and cook until internal temperature of beef reaches 160˚F.

SMASHBURGER-STYLE BURGERS

Smashburger-Style Burgers image

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 15

1/4 cup mayonnaise
4 teaspoons yellow mustard
12 dill pickle chips, plus 1 teaspoon brine
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
Pinch of smoked paprika
Kosher salt and freshly ground pepper
1 1/4 pounds ground beef (80 percent lean)
Unsalted butter, softened, for brushing
4 bakery hamburger buns, split
4 slices American cheese
Ketchup, for serving
8 thin slices tomato
4 thin slices red onion
4 lettuce leaves

Steps:

  • Heat a griddle or large cast-iron skillet over medium heat for at least 10 minutes. Meanwhile, combine the mayonnaise, mustard and pickle brine in a small bowl. Combine the onion powder, garlic powder, paprika, 1/2 teaspoon salt and 1/4 teaspoon pepper in a separate small bowl. Set aside.
  • Loosely form the beef into 4 balls; set aside. Working in batches, lightly brush the griddle with butter and toast the buns cut-side down until lightly browned, 1 to 2 minutes. Transfer to a plate.
  • Brush the griddle with more butter and add 1 ball of beef. Press firmly with 2 large crisscrossed metal spatulas for exactly 10 seconds, then gently remove the spatulas. Sprinkle the patties with some of the seasoning mixture and continue cooking, undisturbed, until well browned, 1 1/2to 2 minutes. (Start cooking another burger at this point.) Flip the patty, sprinkle with more of the seasoning mixture and top with 1 cheese slice. Continue cooking until the cheese is melted around the edges and the bottom of the burger is browned, about 1 more minute. Repeat with the remaining beef.
  • Spread the mayonnaise mixture on the bun tops and add some ketchup. Serve the patties on the buns with the pickles, tomato, red onion and lettuce.

STEAKHOUSE BURGERS

Steakhouse Burgers image

This is the ultimate burger recipe. The burgers are packed with flavor and reliably juicy, even when cooked to well-done.

Provided by Jennifer Segal

Categories     Dinner

Time 25m

Yield 8

Number Of Ingredients 10

2 pieces white sandwich bread, crusts removed and cut into ¼-inch pieces
⅓ cup milk
2½ teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 garlic cloves, minced
1½ tablespoons Worcestershire sauce
2 tablespoons ketchup
3 pounds 80 to 85% lean ground beef
3 scallions, very finely sliced (optional)
8 hamburger buns

Steps:

  • Preheat the grill to high heat.
  • In a large bowl, mash the bread and milk together with a fork until it forms a chunky paste. Add the salt, pepper, garlic, Worcestershire sauce and ketchup and mix well.
  • Add the ground beef and scallions and break the meat up with your hands. Mix everything together until evenly combined. Divide the mixture into 8 equal portions and form compact balls. Flatten the balls into ¾-inch patties about 4½ inches across. Form a slight depression in the center of each patty to prevent the burgers from puffing up on the grill.
  • Oil the grilling grates. Grill the burgers, covered, until nicely browned on the first side, 2 to 4 minutes. Flip burgers and continue cooking for a few minutes more until desired doneness is reached. Before serving, toast the buns on the cooler side of the grill if desired.
  • Freezer-Friendly Instructions: The uncooked burgers can be frozen for up to three months. (Freeze the burgers on a baking sheet or plate so their shape sets, then transfer them to a sealable plastic bag for easy storage.) Defrost the burgers overnight in the refrigerator prior to serving and then cook as directed.

BEST HAMBURGER PATTY RECIPE (GRILLED OR STOVETOP)

Best Hamburger Patty Recipe (Grilled or Stovetop) image

Best Hamburger Patty Recipe - Thick or thin, made on the grill or stovetop, this is the best and easiest all-purpose recipe for perfect hamburger patties every time!

Provided by Sommer Collier

Categories     dinner     Main     Main Course

Time 23m

Number Of Ingredients 9

2 pounds ground chuck
½ cup crushed saltine crackers (or Panko breadcrumbs)
1 large egg
2 tablespoons Worcestershire sauce
2 tablespoons milk
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon black pepper

Steps:

  • Set out a large mixing bowl. Add in the ground beef, crushed crackers, egg, Worcestershire sauce, milk, salt, garlic powder, onion powder, and pepper. Mix by hand until the meat mixture is smooth, but stop once the mixture looks even. (Overmixing can create a dense heavy texture.)
  • Press the meat down in the bowl, into an even disk. Use a knife to cut and divide the hamburger patty mixture into 6 - 1/3 pound grill or skillet patties, or 12 thin griddle patties.
  • Set out a baking sheet, lined with wax paper or foil, to hold the patties. One at a time, gather the patty mix and press firmly into patties. Shape them just slightly larger than the buns you plan to use, to account for shrinkage during cooking. Set the patties on the baking sheet. Use a spoon to press a dent in the center of each patty so they don't puff up as they cook. If you need to stack the patties separate them with a sheet of wax paper.
  • Preheat the grill or a skillet to medium heat. (Approximately 350-400 degrees F.)
  • For thick patties: Grill or fry the patties for 3-4 minutes per side.
  • For thin patties: Cook on the griddle for 2 minutes per side.
  • Stack the hot patties on hamburgers buns, and top with your favorite hamburgers toppings. Serve warm.

GOURMET DINER BURGERS

Gourmet Diner Burgers image

Provided by Giada De Laurentiis

Categories     main-dish

Time P1DT5h

Yield Six 5-ounce burgers

Number Of Ingredients 34

1 pound zucchini, sliced into 1/4-inch-thick rounds
3 sprigs fresh oregano
2 cups apple cider vinegar
1/3 cup sugar
2 teaspoons black peppercorns
1 teaspoon kosher salt
1 teaspoon fennel seed
1/2 teaspoon red pepper flakes
1 bay leaf
1 cup coarsely grated Parmesan
1 tablespoon all-purpose flour
1/4 teaspoon freshly ground black pepper
1 garlic bulb
1 teaspoon olive oil
1 teaspoon kosher salt
1 cup mayo
6 cloves roasted garlic (see Cook's Note)
2 tablespoons lemon juice
2 teaspoons freshly chopped parsley
1 teaspoon freshly chopped oregano
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 1/2 pounds lean ground beef
1/2 pound ground lamb
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons olive oil
6 ciabatta rolls, halved
Extra-virgin olive oil, for drizzling
Roasted Garlic Mayo
6 Burger Patties
4 medium tomatoes, sliced into 1/4-inch rounds to yield 12 slices
12 Zucchini Pickle slices
6 Parmesan Frico rounds

Steps:

  • For the pickles: Place the zucchini slices and oregano in a large jar or heat-safe container. Heat the apple cider vinegar, sugar, peppercorns, salt, fennel seed, red pepper flakes and bay leaf in a medium saucepan, stirring until the sugar and salt have dissolved, about 2 minutes. Pour the pickling liquid and spices into the jar. Let cool completely, uncovered. Place in the refrigerator for at least 24 hours and store for up to 6 weeks.
  • For the frico: Place an oven rack in the center of the oven and preheat the oven to 375 degrees F. Line a baking sheet with parchment paper or a silicone mat. Toss the Parmesan, flour and pepper together in a large bowl, making sure the flour is evenly distributed throughout the cheese. Arrange mounds of 2 tablespoons of cheese 4 inches apart on the baking sheet and flatten each mound slightly with a spatula to form a 3-inch round. Bake the frico in the oven until golden brown, about 10 minutes, rotating the sheet halfway through baking. Cool the frico on the baking sheet for 2 minutes, and then gently transfer to a wire rack to cool completely.
  • For the mayo: In a small bowl, stir together the mayo, garlic, lemon juice, parsley, oregano, salt and pepper.
  • For the patties: In a large bowl, combine the beef, lamb, salt and pepper. Form the mixture into six 4-inch-diameter patties, each about 1/2-inch thick. Drizzle the patties with olive oil. Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Grill the patties until they are grill marked and cooked through, about 4 to 5 minutes per side. Allow the patties to rest for 5 minutes.
  • For the burgers: Drizzle the cut side of the ciabatta rolls with olive oil and grill lightly until toasted, about 1 to 2 minutes. Spread the garlic mayo over the bottom halves of the grilled bread. Place the burger patties on the bread and top each patty with 2 tomato slices, 4 pickle slices and 1 frico round.

BISTRO BURGERS WITH MUSHROOMS

Bistro Burgers with Mushrooms image

Inspired by a simple bistro steak, this weeknight burger recipe is slathered with a flavorful parsley-shallot butter, topped with rich sauteed mushrooms and served with an assertively mustardy side salad.

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 12

6 tablespoons unsalted butter, at room temperature
1/4 cup finely chopped fresh parsley
1 small shallot, minced
Kosher salt and freshly ground pepper
1 1/2 pounds ground beef
2 tablespoons vegetable oil
8 ounces cremini mushrooms, trimmed and thinly sliced
4 slices gruyère or white cheddar cheese
2 tablespoons dijonnaise, plus more for serving
1 tablespoon red or white wine vinegar
4 cups mixed salad greens
4 brioche buns, split and toasted

Steps:

  • Combine the butter, parsley and shallot in a small bowl and mash together to mix well (alternatively, pulse together in a small food processor). Season with a pinch each of salt and pepper; set aside.
  • Form the beef into 4 patties, about 3 1/2 inches wide and 1 inch thick. Season generously on both sides with salt and pepper.
  • Heat 1 tablespoon vegetable oil in a large nonstick skillet over high heat until shimmering. Add the mushrooms and cook, undisturbed, until starting to brown, about 3 minutes. Toss and continue cooking, stirring occasionally, until lightly browned and tender, 3 to 5 more minutes; season with salt and pepper. Add 2 tablespoons of the herb butter and cook, tossing, until the mushrooms are well coated, about 30 seconds. Remove to a plate and wipe out the skillet.
  • Heat the remaining 1 tablespoon vegetable oil in the same skillet over medium-high heat. Add the burgers and cook until browned, 4 to 5 minutes per side for medium rare. In the last minute of cooking, top each patty with a slice of cheese and the mushrooms and cover to melt.
  • Whisk the dijonnaise and vinegar in a bowl. Add the greens and toss; season with salt and pepper. Spread the remaining herb butter on the toasted buns; serve the burgers on the buns with the salad and more dijonnaise.

  • Johnny Rocket’s Burger. I have the fondest memories of going to Johnny Rocket’s as a child. The fun retro atmosphere, with the jukebox and the dancing waiters, plus a menu filled with hamburgers and french fries – it doesn’t get better than that (which is why I highly recommend watching Grease or putting on the Jersey Boys soundtrack while eating this burger at home).
  • Shake Shack’s Shackburger. I know Shake Shack isn’t technically a fast food restaurant, but it does rank as one of America’s favourite burgers so I thought it ought to be included.
  • A&W Teen Burger. With a whole family of burgers (literally) offered by A&W, the Teen Burger has best stood the test of time. With the Teen burger, it’s the sauce that really stands out.
  • Carl’s Jr. Western Bacon Cheeseburger. Carl’s Jr.’ s Western Bacon Cheeseburger (WBCB) is by far its most popular. Even celebrities such as Zac Efron have admitted to loving them.
  • Copycat Five Guys Burger. Ok so I know Five Guys is already known for it’s “fast-casual” approach to dining. Similar to any old fast food restaurant, except the burger is prepared right there in front of you.
  • Sonic Drive-In No. 1 Burger. Another classic. For this Sonic burger, you fry up a patty, load it with veggies (iceberg lettuce, tomato, pickles... tons of pickles, and some white onions, spread some mayo on your bun and there you have it!
  • Wendy’s Junior Bacon Cheeseburger. A classic, this burger’s simplicity is perfect. Letting the smoky bacon and creamy cheese speak for itself, the Wendy’s Junior Bacon Cheeseburger, is not only easy to make, it’s ridiculously tasty.
  • Homemade McDonald’s Big Mac. Arguably the most famous burger in the world, and guess what? You don’t even have to go to McDonald’s to enjoy it! The signatures of the Big Mac are the sauce, the double patty and the triple bun (so be sure to buy enough meat and bread).
  • In-N-Out Burger Copycat. For those of you that don’t live in California, Nevada, Utah, or Texas, you may have never tried an In-N-Out burger, though my guess is, you’ve definitely heard about them.
  • Burger King Style Whopper. The Whopper is a classic. A 4-ounce patty topped with lettuce, tomato, onion, pickles, mayo, and ketchup sandwiched between two toasted sesame buns.

THIS ALL AMERICAN BURGER IS A CLASSIC RECIPE
It is also very important that you cook burgers to 165 F, or well done, for food safety reasons. Don't groan—burgers cooked to that safe temperature can still be delicious. The breadcrumbs in this recipe, along with the Worcestershire sauce, water, and milk, called a "panade", holds moisture as the meat cooks so it stays juicy.
