CHOCOLATE SNOWBALL COOKIES
Chocolate Snowball Cookies are a buttery melt in your mouth chocolate cookie featuring ground walnuts and sprinkled with powdered sugar. This is a delicious holiday classic cookie that you need to put on your baking list!

Steps:
- In a large bowl or stand mixer, add the brown sugar and butter and cream until light and fluffy. Add the egg, milk and vanilla. Mix until combined.
- In a medium sized bowl add the flour, cocoa, baking soda, baking powder, and salt. Slowly add the mixture to the creamed mixture until incorporated.
- Add walnuts to a food processor and pulse until finely ground. Add the walnuts to the dough and stir until incorporated. Cover the dough and chill overnight.
- Preheat oven to 350 degrees. Shape the dough into 1 inch balls and place on ungreased cookie sheets. Bake for 8-9 minutes or until the tops start to crack. Let cool completely on wire racks. Roll in the powdered sugar.

- Melt chocolate in double boiler; cool. Thoroughly cream butter or margarine, sugar and vanilla together. Beat in eggs, then chocolate. Sift together dry ingredients; blend into egg and butter or margarine mixture alternately with milk. Add nuts. Chill 2 hours or longer. Form into 1-inch balls. Roll in confectioners' sugar. Place on greased baking sheets 2 to 3 inches apart. Bake in a preheated 350 degrees F oven about 15 minutes or until done. Cool slightly, remove from pan to paper towels until cold. Should be stored in airtight tin.

Our local newspaper had a cookie contest a while back. This was one of the recipes featured, and it caught my eye because I love mint flavor. My family likes these cookies as much as I do.

- In a microwave, melt 1 cup chocolate chips; stir until smooth and set aside to cool. , In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in the melted chocolate chips and vanilla. Combine flour, baking powder and salt; gradually add to the creamed mixture and mix well. Stir in the remaining chocolate chips. Cover and refrigerate for 2 hours or until easy to handle. , Roll into 1-in. balls, then roll in confectioners' sugar. Steps:
- Combine flour, baking powder, and 1/4 tsp salt, set aside.
- In a saucepan heat 1 cup of chocolate pieces over low heat until melted, stirring constantly.
- Beat butter with a mixer on medium speed for 30 seconds. Beat in granulated sugar until combined. Add in melted chocolate, eggs, vanilla, and mint flavoring. Mix until combined.
- Stir in flour mixture and remaining chocolate pieces.
- Wrap dough in plastic wrap.
- Freeze 30 minutes or until firm enough to shape.
- Preheat oven to 350°F
- Shape dough into 1" balls; roll balls in powdered sugar. Place balls about 2" apart on ungreased cookie sheet. Bake in preheated oven for 10 to 12 minutes or until tops are crackled.
- Cool 2 minutes on cookie sheet.
- Transfer to wire racks; cool.

My mom has made these cookes for Christmas since I was a kid. They are chocalate cookies rolled in powdered sugar. They are excellent Christmas cookies.

- Empty 1 bag white candy melts into a microwave-safe bowl. Microwave at 50% power for 1 minute. Stir and continue to microwave in 15- to 30-second intervals until candy is almost completely melted. Let sit for about 1 minute and stir until smooth. Set the second bag of white candy melts aside.
- Dunk a cookie in the white melted candy. Use a fork to turn it over to ensure it's completely coated on all sides. Transfer to a parchment-lined baking sheet. Place 2 sprinkles in the middle for eyes. Place 1 half of a Tic Tac® under the eyes for a nose. Place 4 more sprinkles in a semi circle on the bottom for the mouth. Repeat for remaining cookies, melting the second bag of white candy melt as needed.
- Place the baking sheet in a cool, dry area for about 25 minutes so candy coating can harden. Do not place in the freezer or the snowmen will sweat.
- Melt the red candy melts as in step 2.
- Cut any excess chocolate off around each cookie. Dip the top part of each cookie in the red melted candy to make a hat and add an M&M® for a design. Place on a new parchment-lined baking sheet and allow to harden, about 25 minutes. Cut off any excess chocolate before serving.
