Crisp Buffalo Chicken Wings are irresistible with the best 3-ingredient homemade buffalo sauce. An easy, restaurant-quality appetizer.

3 lb chicken wings (wings and drummettes split, wingtips removed)
1 Tbsp baking powder ((use aluminum free) )
1 tsp fine sea salt
2 tsp garlic powder
1/4 cup unsalted butter (melted)
1/4 cup Franks Original Red Hot Sauce
1 tbsp granulated sugar (or brown sugar)

Steps:

  • Thoroughly pat dry the chicken with a paper towel. Preheat the oven to 450˚F. Line a rimmed baking sheet with foil and place a wire rack over the pan.
  • Combine the baking powder, salt and garlic powder in a bowl, sprinkle over the chicken and toss to combine. Arrange chicken on the prepared wire rack.
  • Bake the chicken for 25 minutes, flip it over and bake for another 25 minutes or until crisp and cooked through.
  • In a medium-size bowl combine sauce ingredients. Remove chicken from the baking sheet to a bowl. Drizzle the sauce over the chicken. Toss to coat the chicken in the sauce. Serve with your favorite dipping sauce.

12 whole chicken wings
3 ounces unsalted butter
1 small clove garlic, minced
1/4 cup hot sauce
1/2 teaspoon kosher salt

Steps:

  • Place a 6-quart saucepan with a steamer basket and 1-inch of water in the bottom, over high heat, cover and bring to a boil.
  • Remove the tips of the wings and discard or save for making stock. Using kitchen shears, or a knife, separate the wings at the joint. Place the wings into the steamer basket, cover, reduce the heat to medium and steam for 10 minutes. Remove the wings from the basket and carefully pat dry. Lay the wings out on a cooling rack set in a half sheet pan lined with paper towels and place in the refrigerator for 1 hour.
  • Preheat the oven to 425 degrees F.
  • Replace the paper towels with parchment paper. Roast on the middle rack of the oven for 20 minutes. Turn the wings over and cook another 20 minutes or until meat is cooked through and the skin is golden brown.
  • While the chicken is roasting, melt the butter in a small bowl along with the garlic. Pour this along with hot sauce and salt into a bowl large enough to hold all of the chicken and stir to combine.
  • Remove the wings from the oven and transfer to the bowl and toss with the sauce. Serve warm.

12 chicken wings (about 2 pounds)
2 tablespoons margarine or 2 tablespoons butter, melted
2 -3 tablespoons bottled hot pepper sauce
1 teaspoon paprika
salt (optional)
pepper (optional)
1/2 cup sour cream
1/2 cup mayonnaise or 1/2 cup salad dressing
1/2 cup crumbled blue cheese
1 clove garlic, minced
1 tablespoon white wine vinegar or 1 tablespoon white vinegar
crumbled blue cheese (optional)

Steps:

  • Preheat broiler.
  • Cut off and discard tips of chicken wings.
  • Cut wings at joints to form 24 pieces.
  • Place chicken pieces in a shallow nonmetal pan.
  • For sauce, in a small mixing bowl stir together melted margarine or butter, hot pepper sauce, and paprika.
  • Pour mixture over chicken wings, stirring to coat.
  • Cover chicken and let stand at room temperature for 30 minutes.
  • Drain chicken, reserving sauce.
  • Place chicken pieces on the unheated rack of a broiler pan.
  • Sprinkle chicken with salt and pepper, if desired.
  • Brush with some of the reserved sauce.
  • Broil chicken 4 to 5 inches from the heat about 10 minutes or until light brown.
  • Turn the chicken pieces; brush again with the reserved sauce.
  • Broil for 10 to 15 minutes more or until the chicken is tender and cooked through.
  • Meanwhile, in a blender container or food processor bowl combine sour cream, mayonnaise or salad dressing, the 1/2 cup crumbled blue cheese, garlic, and vinegar.
  • Cover and blend or process until smooth.
  • If desired, top dip with additional crumbled blue cheese before serving.
  • Serve with wings and celery sticks and dip.
  • Makes 12 appetizer servings.
  • Make-Ahead Tip: Store dip, covered, in the refrigerator up to 2 weeks.

Sticky spiced wings make great finger food or canapés, and this version skips the deep-fried stage so they're healthier

3 garlic cloves, crushed
2 tbsp olive oil
3 tbsp cider vinegar
1 tbsp paprika
1 tbsp Worcestershire sauce
2 tsp celery salt
4 tbsp pepper sauce (we used Frank's hot sauce)
3 tbsp honey
1 ½kg chicken wings, halved at the joint

Steps:

  • In a large bowl, mix together the garlic, olive oil, cider vinegar, paprika, Worcestershire sauce, celery salt, hot sauce, honey and a couple of cracks of black pepper. Add the chicken wings and toss around to make sure they're fully covered in the marinade. If you have time, leave the wings to marinate for a couple of hrs in the fridge or ideally overnight.
  • Heat oven to 180C/160C fan/gas 4. Drain and reserve the marinade, then spread the wings out on a very large baking tray. Bake for 30 mins, then pour off the excess oil, add the reserved marinade and toss well. Increase oven to 200C/180C fan/ gas 6. Return to the oven and cook for a further 30 mins, tossing a few times to coat in the glaze as they cook. They should be sticky and glazed with most of the marinade evaporated. Serve on a large platter alongside other party snacks.
