CUCUMBER-LIME GELATIN

Steps:
- Add boiling water to gelatin mixes in medium bowl; stir 2 min. until completely dissolved. Stir in 1-1/2 cups cold water. Refrigerate 45 min. or until thickened, stirring every 15 min.
- Add remaining cold water to ice in separate medium bowl. Use vegetable peeler to peel 6 thin lengthwise slices from cucumber; add to ice water. Seed and shred remaining cucumber; stir into gelatin.
- Pour gelatin into 9x5-inch loaf pan sprayed with cooking spray. Refrigerate 3 hours or until firm. Unmold onto plate just before serving. Garnish with cucumber slices and pepper.

- Heat oven to 300 degrees. Cut off the ham's tough outer skin and excess fat, and discard. Put ham in a large roasting pan. With a long, sharp knife score it, making crosshatch incisions all over the ham about 1/2 inch deep and 1 inch apart.
- Roast the ham on the lower middle level of the oven for two hours. Remove it from oven, and increase heat to 350 degrees.
- For the glaze, stir together the orange marmalade, mustard and brown sugar in a medium-size bowl. Stud ham with cloves, inserting one at the intersection of each crosshatch. Brush entire surface of ham generously with glaze, and return to the oven. Reserve some of the glaze.
- Cook ham 1 1/2 hours more, brushing with glaze at least three times. Transfer ham to a cutting board or platter, and allow it to rest for about 30 minutes. Carve and serve warm or at room temperature.

- Peel the cucumbers and cut into small cubes.
- Cut the cream cheese into small cubes.
- Put the cucmber and cream cheese cubes in a serving dish (I usually use a 9x13 glass baking dish).
- Dissolve the Jello mix in the boiling water.
- Stir in the cold water.
- Pour the Jello over the cucumber and cream cheese.
- Refrigerate until Jello is set (3-4 hours).

CUCUMBER SOUP
The refreshing cucumber soup is served cold, so it will go down well on a summer's day. Ladle it into bowls for a smaller gathering, or pour into small cups for an amuse-bouche.

- Finely chop a third of one of the cucumbers and set aside for when you're ready to serve later. Roughly chop the remaining cucumbers and tip into a blender or food processor along with the yogurt and the lime juice from one lime. Add the tarragon, most of the mint leaves and most of the chives. Blitz until the mixture is smooth. Taste the soup and add some or all of the lime juice from the second lime if you want more acidity.
- Pour the soup into bowls or small cups, scatter over the finely chopped cucumber, remaining mint leaves and the rest of the chives. Drizzle with a little rapeseed oil just before serving.

SWEDISH YELLOW PEA SOUP

- Rinse the peas in a colander under cool running water. Put them in a large, nonreactive bowl and cover with water by 2 inches. Let soak uncovered in a cool place overnight.
- Put the peas and soaking water into a heavy 6-to-8-quart pot. Add water to cover again by 2 inches. Bring to a boil over medium heat, and let boil two minutes. Skim off and discard any foam and skins that rise to the top.
- Stir in the chopped onion. Cut the piece of bacon crosswise into two pieces, and add to the pot with 3 tablespoons fresh marjoram or thyme leaves, stripped of stems and chopped.
- Let the soup boil gently for 40 to 90 minutes until it becomes very thick and buttery yellow. Whole peas will take longer and will be soft but still whole when cooked. Split peas will take a shorter time to cook and will almost disintegrate. If the soup becomes too thick, add more water.
- Remove the pot from the heat. Remove the two pieces of bacon, and cut off and discard the rind. Cut the bacon crosswise into 1/2-inch slices. Reserve.
- Stir the soup well, and season with 2 to 4 tablespoons mustard. Add salt, if necessary, and black pepper. Add more fresh thyme or marjoram if desired.
- Serve with soup in shallow bowls with slices of bacon on the side. Pass additional mustard to stir into the soup. In Sweden, this soup, called artsoppa, is served with crisp rye bread covered with grated vasterbottem, a sharp, hard cheese. Aged cheddar and Parmigiano Reggiano are good substitutes.

- In a cup, soften the gelatin in the water for five minutes. Pour it and the stock into a small saucepan, and stir over low heat until dissolved.
- Put the mixture into a food processor, along with the cucumber, scallions and lime juice. Process until mixture is smooth, with a little texture (not a fine puree).
- Season with dill, chives, salt and pepper. Add more lime juice if desired. Pour into a bowl, cover and refrigerate three hours or overnight.
- When ready to serve, use a large spoon to stir the solids throughout the jellied soup. Scoop it into cups or stemmed glasses, and garnish each with a thin slice of lime.
