Steps:
- In a saute pan over medium heat add oil, heat and add onions and salt. Cook the onions until they are caramelized, about 20 minutes. Remove from heat and set aside to cool. Mix the rest of the ingredients, and then add the cooled onions. Refrigerate and stir again before serving.

- Heat the oil in a large skillet over medium heat; add the onions and 1/4 teaspoon of kosher salt. Cook and stir until the onions are caramelized to a nice golden brown, about 20 minutes. Remove the onions from the heat and cool.
- Mix together the sour cream, mayonnaise, garlic powder, white pepper, and remaining kosher salt. Stir in the onions when they are cool. Cover and refrigerate the dip for at least 2 hours before serving.

- Cook Onions in the microwave a few minutes until they appear clear or translucent.
- Mix all ingredients (except the topping) in a large bowl and add onions.

- Preheat oven to 350 degrees F.
- In a bowl, mix together the onions, garlic, mayonnaise, yogurt or sour cream, cheddar, and Tabasco (and curry powder, if using).
- Spread into a lightly pan sprayed small-ish baking dish.
- Top with Parmesan and sprinkle with paprika to taste. (Ground ancho chile powder can be substituted for the paprika, for a little more kick. I prefer the ancho.).
- Bake in preheated 350 degree F oven for 25 to 30 minutes. Garnish with chopped green onion (scallion).
- Serve hot or warm with crackers, bread, or raw veggie dippers.
- Makes about 6 servings. I usually make a double batch! :).

- Stir cream cheese and sour cream in a medium bowl until blended.
- Heat oil in a medium skillet.

- Preheat oven to 350°.
- Melt 1 1/2 teaspoons butter in a large skillet over medium-high heat. Add onion and 1/8 teaspoon salt to pan; cook 15 minutes or until tender, stirring occasionally. Add garlic; cook 10 minutes or until onion is golden brown and very tender, stirring occasionally. Remove from heat; cool 5 minutes.
- Combine the remaining 1/8 teaspoon salt, mayonnaise, and next 4 ingredients (through Worcestershire sauce) in a medium bowl, stirring until smooth. Stir in onion mixture. Transfer mixture to a 1-quart baking dish coated with cooking spray.

Dip was FANTASTIC. I'd eat that with any type of vegetable. I think next time we would have liked a little heat to the dip buy an overall nice flavor.

- 1) To make the dip: Melt the butter in a medium frying pan over moderate heat, and add the sliced onions. Cook, stirring occasionally, until the onions soften, then caramelize. This should take between 10 and 15 minutes. The lower the heat, the longer it takes, but the less likely you are to burn the onions.
- 2) Once the onions are a medium brown, remove from the heat and add the vinegar.
- 3) Place the onions and vinegar into a small food processor. Add the honey and mustard, and process or blend until smooth.
- 4) Add the mayonnaise and salt and pepper to taste, stirring to combine. Refrigerate, covered, until ready to serve.
- My Note: I added a little garlic and onion powder because we like the flavor. The second time I made it, I decided to add 2 cloves of garlic, and it turned out even tastier than the first time.
- I served the dip along with some raw carrots as well baked zucchini sticks were tasty and the onion dip was a hit, and it was well liked. It took closer to 45 minutes for the onions to be caramelized. At 10-15 minutes the onions weren't even light brown yet. In caramelizing onions patience seems to be is a virtue. Perhaps I missed a secret step along the way.

- Chop onions into fine pieces. Do not shred them, however. Also, be sure not to use Spanish, yellow, white or any other strong tasting onion with this recipe. Even red onions, which have a mild flavor, are not the best choice. Walla walla or vidalia onions are best for this recipe.
- Shred the Swiss cheese into a small bowl with the grater of your choice. Use another cheese if you desire, but the Swiss cheese seems to go best with the flavor of the sweet onions.
- Mix chopped onion, shredded cheese, and mayo together in a glass baking dish. Bake at 350 °F/ 177 °C until bubbly and browned on top (about 30 minutes).
- Serve immediately with almond flour crackers, garlic bread, chips (I buy these), or other dipping food that you would enjoy! Hint: skip celery or carrot sticks with this onion dip as the onion pieces don't scoop and stay very well on them.
