1 pound fresh green beans, trimmed
¼ cup olive oil
1 teaspoon minced garlic
1 teaspoon kosher salt

Steps:

  • Combine green beans, olive oil, garlic, and salt in a bowl; toss to coat. Allow green beans to marinate for 30 minutes.
  • Preheat grill for medium heat and lightly oil the grate. Arrange green beans on a grill pan.
  • Place grill pan on preheated grill; cook and stir green beans until lightly charred, about 10 minutes.

It's tricky to grill green beans without a grill pan as they're determined to slip through the grates. It's worth buying if you don't own one. You'll find many uses for it.

1/4 cup extra-virgin olive oil
3 cloves garlic (minced)
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
pinch cayenne pepper
1 pound fresh green beans (washed and trimmed)
kosher salt and freshly ground black pepper to taste
1/2 lemon (juiced, optional)

Steps:

  • Preheat a grill to medium-high.
  • In the bottom of a large bowl, whisk together olive oil, garlic, cumin, paprika, and cayenne. Add green beans to bowl and toss to coat evenly.
  • Place beans in an even layer directly on on a grill pan or grill basket.
  • Cook, stirring often with tongs, until crisp-tender and unevenly charred and blistered, 10-12 minutes, depending on the amount of char you like.
  • Transfer beans to a serving bowl and season to taste with salt and freshly ground black pepper. Squeeze lemon juice over if desired. Serve.

¼ cup olive oil (extra virgin)
¼ teaspoon pepper (fresh ground, largest flake)
salt (to taste)

Steps:

  • In a large mixing bowl, combine green beans, oil, salt and pepper. Toss. Optional: Allow to marinate 15-30 minutes.
  • Preheat grill to medium heat.
  • Brush grate with oil.
  • Add green beans to grate horizontally or at an angle.
  • Grill 4 minutes until slightly charred and rotate. Grill 3-4 minutes and remove from heat.

1/2 cup diced sweet yellow onion
1/2 cup diced green bell pepper
Oil, for cooking
Two 15.5-ounce cans dark red kidney beans, drained and rinsed
Two 15.5-ounce cans northern white beans, drained and rinsed
One 15-ounce can tomato sauce
1/2 cup ketchup
1/4 cup brown sugar
1 tablespoon yellow mustard
1 tablespoon apple cider vinegar
1 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon smoked paprika
2 cloves garlic, minced
Green onions, for garnish (optional)

Steps:

  • Preheat a grill for cooking at medium-high heat.
  • Place a skillet on the grill. Cook the onions and green peppers with some oil in the skillet for 3 to 4 minutes.
  • Add the beans, tomato sauce, ketchup, brown sugar, mustard, vinegar, cayenne, chili powder, smoked paprika and garlic and stir. Cook with the grill covered, stirring occasionally, for about 15 minutes. Garnish with green onions, if using.

1 15-ounce can garbanzo beans (chickpeas), drained
3 tablespoons fresh lemon juice
5 tablespoons extra-virgin olive oil, divided
2 garlic cloves, peeled
2 teaspoons cumin seeds
1 teaspoon turmeric, divided
1 teaspoon smoked paprika,* divided
2 cups water
1 cup quinoa (about 6 ounces),** rinsed well, drained
1 teaspoon coarse kosher salt
1 1/2 pounds medium zucchini (about 5), trimmed, quartered lengthwise
1 1/2 teaspoons ground cumin
4 green onions, thinly sliced
1/4 cup chopped fresh Italian parsley

Steps:

  • Combine garbanzo beans and lemon juice in large bowl. Add 3 tablespoons oil; press in garlic and stir to combine. Let marinate at least 15 minutes and up to 2 hours.
  • Heat 1 tablespoon oil in medium saucepan over medium-high heat. Add cumin seeds, 1/2 teaspoon turmeric, and 1/2 teaspoon paprika; stir until fragrant, about 1 minute. Add 2 cups water, quinoa, and coarse salt; bring to simmer, stirring occasionally. Reduce heat to medium-low. Cover and simmer until all water is absorbed, about 16 minutes.
  • Meanwhile, prepare barbecue (medium high heat). Place zucchini on rimmed baking sheet. Drizzle with 1 tablespoon oil. Sprinkle with ground cumin, 1/2 teaspoon turmeric, and 1/2 teaspoon paprika. Toss to coat evenly.
  • Place zucchini on grill; sprinkle generously with salt and pepper. Grill until tender and browned on all sides, 10 to 12 minutes. Transfer to work surface. Cut crosswise into 1/2-inch pieces. Add zucchini, green onions, and parsley, then garbanzo bean mixture to quinoa. Toss to blend. Season with salt and pepper. DO AHEAD: Can be made 2 hours ahead. Let stand at room temperature.

200g brown rice
3 tbsp extra virgin rapeseed or olive oil
200g spring greens or chard (trimmed weight), washed and roughly chopped
3 garlic cloves , finely sliced
400g can butter beans , rinsed and drained
½ tsp cumin seed
1 tsp smoked paprika
natural yogurt , to serve (optional)

Steps:

  • Rinse the rice in cold running water until it runs clear. Bring a large pan of water to the boil, cook the rice for 20-25 mins, then drain.
  • Place a wide, lidded pan over a medium heat with 2 tbsp oil. Add the greens, salt and pepper and cook, with the lid on, stirring frequently, until the greens are lightly steamed and wilted, about 4-5 mins. Add the garlic and cook until fragrant, then add the butter beans and cook, stirring, until heated through. Add the remaining oil, then the cumin seeds and smoked paprika. Stir until evenly combined and serve over the cooked rice with a dollop of yogurt, if you like.

1 pound fresh green beans, trimmed
2 tablespoons butter
1 small shallot, minced
1 garlic clove, minced
1/2 cup grated Parmesan cheese

Steps:

  • In a 6-qt. stockpot, bring 4 quarts water to a boil. Add beans; cook, uncovered, just until crisp-tender, 2-3 minutes. Remove beans and immediately drop into ice water., In a small skillet, melt butter over medium-high heat. Add shallot; cook and stir until lightly browned, 2-3 minutes. Add garlic; cook 30 seconds longer. Remove from heat. Drain beans and pat dry., In a large bowl, combine beans, shallot mixture and cheese; toss to coat. Transfer to a piece of heavy-duty foil (about 18 in. square) coated with cooking spray. 3/4 pound tender, unblemished fresh green beans
Salt to taste if desired
1 tablespoon butter
Juice of 1/2 lemon
1/4 teaspoon ground cumin
2 tablespoons finely chopped parsley Freshly ground pepper to taste

Steps:

  • Pull or cut off the ends of the green beans. Rinse the beans and set aside.
  • Place the beans in a saucepan, and add cold water to cover and salt to taste. Bring to a boil, and let simmer 5 to 6 minutes or until tender. Drain.
  • Add the butter and sprinkle with lemon juice, cumin, parsley and pepper. Toss to blend while cooking briefly over high heat - about 10 seconds. Serve.
