12 to 15 blades of fresh chives, finely chopped

Steps:

  • Reserve 2 slices of salmon for garnish. Chop the remaining salmon into very small pieces.
  • Whisk your eggs and cream together. Add 1/2 of your chopped chives and season eggs with salt and pepper. Preheat a large nonstick skillet over medium heat. Melt butter in the pan and add eggs. Scramble eggs with a wooden spoon. Do not cook eggs until dry. When eggs have come together but remain wet, stir in chopped salmon. Remove pan from the stove and place on a trivet. Garnish the eggs with remaining salmon and chives and serve right out of the warm pan.
  • Note: If you are serving these eggs with the other recipes provided as a brunch, a platter of store bought fruit filled dainties will complete your elegant brunch. Allow 1 dainty per person but halve dainties so that guests may mix and match varieties.

3/4 cup unsalted butter, room temperature (12 tablespoons)
8 ounces smoked wild salmon, flaked
2 large green onions, halved lengthwise and finely sliced
5 ounces creamy Pacific Northwest soft goat cheese
2 tablespoons honey
1 loaf 12-grain bread, sliced 1/2-inch thick slices, toasted

Steps:

  • Whisk the eggs together until smooth and season with salt and pepper. Melt 1/4 cup butter in a large nonstick saute pan over medium heat until it begins to shimmer. Add the eggs and slowly cook over low heat until soft mounds have just formed. Stir in about three-quarters of the salmon and all of the green onions. Give the mixture one last fold and then remove from the heat. Spoon the mixture onto a serving platter and garnish with the remaining salmon.
  • Stir together the goat cheese, remaining butter and the honey, and season with salt and pepper. Spread over the warm toast and serve with the eggs, or spoon the eggs on top of the toast.

4 ounces cream cheese, at room temperature
2 tablespoons chopped fresh dill

Steps:

  • Break up salmon into bite-sized pieces.
  • In a medium bowl whisk eggs until light and frothy.
  • In a small bowl mash cream cheese and dill together with a wooden spoon.
  • In a large, nonstick sauté pan melt butter over medium heat.
  • Add eggs.
  • While eggs are still soft and wet, stir in smoked salmon, cream cheese, and a grating of white pepper.
  • Using a rubber spatula, pull eggs that are cooked on the edges to the center of the pan and gently shake the pan to redistribute the scrambled eggs evenly over the cooking surface.

I had some smoked salmon flavoured cream cheese in the fridge (great for dipping chips btw) which I tried mixing into scramblies and it was just SO GOOD! the measurement of butter and chives/green onion is just an approximation, add as you like!

1 tablespoon butter (approx. use just a knob of butter)
3 eggs
1 tablespoon water
2 tablespoons smoked salmon flavour cream cheese
2 tablespoons chopped chives (I usually use green onion)
1 slice toasted bread (your choice, i like baguettes or any other crusty loaf)

Steps:

  • Roughly beat together eggs and water. (Do not add salt and pepper at this point).
  • Melt butter over low-med heat until it begins to foam.
  • Add eggs to pan and using wooden spoon or spatula gently pull eggs towards middle of the pan, stir constantly.
  • As the eggs begin to look creamy, mix in the cream cheese, distributing evenly.
  • Mix the chives into the eggs or sprinkle over the eggs.

1 tablespoon butter, divided
2 medium green onions, sliced
1/2 roasted red pepper, diced
1/4 cup marinated artichoke hearts, rough chopped
3 ounces smoked salmon, crumbled
5 eggs or 1 1/4 cups egg substitute
3 tablespoons plain yogurt
1 teaspoon dried basil
salt
pepper
2 ounces feta cheese

Steps:

  • Melt half the butter in a non-stick skillet; add the green onions, red bell pepper and artichoke hearts, stirring until onions are wilted.
  • Add the smoked salmon and continue to stir until heated through.
  • Remove salmon mixture to a small dish and keep warm while preparing the eggs.
  • In a medium bowl beat the eggs or egg substitute with the yogurt and basil adding salt and pepper to taste.
  • Wipe the skillet with a paper towel and over medium heat, melt the remaining butter and pour the beaten eggs into skillet.
