- Combine flour, baking powder, salt and sugar in a large bowl. Mix well.
- Add butter or margarine. Mix well.
- Add remaining ingredients. Mix well.
- Drop by teaspoonfuls on cookie sheet.
- Bake in preheated oven 12 minutes.
BANANA BISCUITS
These quick biscuits are a perfect way to use up overripe bananas. Easy to put together, they make a great snack during treatment when you may want something that's a little sweet but not too much so. Depending on the ripeness of the banana, you may not even need to add the sugar, so I've left it to taste. They freeze well too, so one batch can be a treat that goes a long way.

- Preheat oven to 425°F. Line a baking sheet with parchment paper.
- Put the banana into a 2-cup measuring cup with the buttermilk. Blend together with an immersion blender until smooth. (You can also use a regular blender to do this). Beat in the butter and the lemon zest. Set aside.
- In a large bowl, sift together the pastry flour, brown sugar, baking soda, cream of tartar, nutmeg, and salt. Make a well in the center and pour in the banana mix. Using a spatula, gradually stir the flour from the side of the bowl into the liquid until you have a soft, sticky dough.
- Dust a board with flour. Using the spatula, transfer the dough onto it. Flour your hands and gently form the dough into a ball. Gently roll it out with a rolling pin into a rough rectangle ½-inch thick. Using a 2-inch round cookie cutter cut the dough into discs and transfer them to the prepared baking sheet, leaving room in between for the biscuits to spread as they cook. Work the trimmings together into a ball and roll them out again. Cut what you can out of the remaining dough and place on the baking sheet. Discard any leftover dough. Bake on a middle rack for 12 to 15 minutes, or until well risen and golden. Serve immediately with cream cheese or butter.

- Combine egg, ripe banana, sugar, softened butter or margarine, banana extract in a mixing bowl; mix well. Stir in enough flour to make a soft dough. Turn out onto a floured surface; knead lightly a few times. Gently pat dough out and cut out with a biscuit cutter. Place on an ungreased baking sheet and bake at 350 degrees about 15 min-18 minutes.
EASY KIDS' RECIPE FOR FLUFFY BANANA COOKIES
I should rename these to the Houdini cookies, with how fast they vanish from my kitchen. Very fluffy and delicious. My daughter just turned one and loves to help make these. She pulls the paper from the butter, peels the bananas, mashes and mixes. It's so fast and easy. Any time we have a couple bananas going brown we mix up these. The recipe originated as my grandmother's banana bread, but one day I was in a rush and didn't want to wait an hour for the bread to bake so I tossed them in as cookies and we all agreed it came out better this way.

- Melt butter and brown sugar over medium-high heat and set aside.
- Slice the banana into 10-20 slices (round).
- Split a biscuit in two, place 1 or 2 banana slices on a biscuit half, top with the other biscuit half, and press edges together to seal. Repeat for remaining biscuits.
- Place into a 9x9 inch baking pan with sides touching.
- Drizzle brown sugar/butter mixture over biscuits.
- Bake at 350 degrees for 10-14 minutes, until lightly browned.

- Heat your oven up to 190° and line a baking tray with parchment paper
- In a bowl, melt the butter and then add the coconut sugar. Mix together until you have something that resembles a breadcrumb mix
- Add the mashed banana, vanilla and cinnamon and combine
- Stir in the flour and bicarbonate of soda until you have a mixture you can spoon out of the bowl
- Using 2 teaspoons, scoop a little out with one spoon and use the other to scrape the biscuit mix off the spoon until you have a tray full of biscuit dough mounds. The mix will flatten out in the oven
- Bake for 6 minutes and then check them, if still very soft give them another 2 minutes. These burn very fast so keep an eye on them!
- Transfer them to a wire cooling rack and allow to cool. They firm up as they cool down

- Heat the oven to 190C/170C fan/gas 5 and line two baking sheets with baking parchment.
- Heat the butter in a small pan on the hob, or in a heatproof bowl in a microwave on high in 30-second bursts, until melted. Tip the butter into a mixing bowl if melted on the hob.
- Stir the sugar into the melted butter with a wooden spoon, then beat in the egg until smooth. Stir in the mashed banana. Sift the flour, bicarbonate of soda, cinnamon and a pinch of salt into the bowl and mix until it forms a soft dough. Add the raisins, chocolate chips or nuts, if using, and stir well until evenly distributed.
- Use a teaspoon to drop small scoops of the mixture onto the prepared trays, spacing them well apart as they'll spread. It should make about 24 cookies. Bake for 10-12 mins until they are light brown on the edges and feel dry to the touch.
- Leave on the tray for a couple of minutes to set, then lift onto a cooling rack to cool completely. Will keep in an airtight container for up to three days.
