1 tablespoon butter
1 medium onion, peeled and diced
1 teaspoon minced garlic
2 tablespoons flour
2-4 ounce cans of chopped green chiles
1.4 teaspoon oregano
1/3 teaspoon coriander powder
1 1/2 cups shredded turkey
2 cups cheddar and Monterey Jack cheeses
1 pack corn tortillas
1 pint sour cream
2 green onions, chopped
Salsa

Steps:

  • 1 Add the butter to a warm sauté pan. 2 Add onions and sauté until translucent. 3 Add garlic and cook until it becomes aromatic. 4 Add flour and cook for 1 minute. 5 Pour both cans of green chiles into pan. 6 Add cumin, oregano, coriander, chicken broth and a little salt and pepper. Simmer for 5 minutes at low heat. 7 Place turkey in a mixing bowl. Add 1/3 cup of the green chile mix, 1/3 cup of sour cream, 1/3 of the cheese mixture and salt and pepper. Mix well. 8 Grease a 13x9 baking dish. Place 1 to 2 tablespoons of filling in each tortilla and roll up. Place the rolled tortillas in the baking dish seam-side down. Continue to add rolled tortillas until the top layer is filled. 9 Pour the rest of the green chile on top of the enchiladas and sprinkle with remaining cheese. 10 Bake at 350ºF for 20 to 30 minutes or until hot and bubbly.Serve with sour cream, green onions and salsa.

This is such an easy enchilada dish to make and a great use for leftover turkey. It's also very easy to adapt to different tastes just by changing an ingredient or two.

3 cups shredded cooked turkey breast
1 ½ cups sour cream, divided
1 (16 ounce) jar chunky, mild green chile salsa, divided
1 (8 ounce) package shredded mild Cheddar cheese, divided
1 (8 ounce) package shredded Monterey Jack cheese, divided
8 (6 inch) flour tortillas

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix shredded turkey with 1/2 cup sour cream, 1/2 cup salsa, 1/2 package Cheddar cheese, and 1/2 package of Monterey Jack cheese in a bowl until well combined. Fill tortillas evenly with turkey mixture, roll up into enchiladas, and place in a 9x13-inch pan.
  • Mix remaining sour cream and salsa together and pour over enchiladas. Top with remaining Cheddar and Monterey Jack.
  • Bake in the preheated oven until cheese is bubbly and enchiladas are heated through, 30 to 40 minutes.

1 cup sour cream ranch dip
2 tablespoons Gold Medal™ all-purpose flour
2 cups diced cooked turkey
2 cups finely shredded Colby-Monterey Jack cheese blend (8 oz)
1 can (4.5 oz) Old El Paso™ chopped green chiles, undrained
1 can (10 oz) Old El Paso™ mild enchilada sauce
1 package (11.5 oz) Old El Paso™ flour tortillas for burritos (8 inch)
Chopped tomatoes, chopped avocado and shredded lettuce, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In large bowl, mix dip and flour. Stir in turkey, 1 cup of the cheese and the chiles.
  • Spread about 2 tablespoons enchilada sauce over bottom of baking dish. Spread 1 to 2 teaspoons enchilada sauce over each tortilla; top each with about 1/3 cup turkey mixture. Roll up each tortilla and place seam side down in baking dish. Top with remaining enchilada sauce.
  • Cover with foil; bake 25 minutes. Sprinkle with remaining 1 cup cheese. Bake uncovered about 15 minutes longer or until thoroughly heated and cheese is melted. Garnish with tomatoes, avocado and lettuce.

1 cup Progresso™ chicken broth (from 32-oz carton)

1 tablespoon ground ancho chiles
1 teaspoon ground cumin
1/2 teaspoon salt
1 can (28 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained
2 cups shredded cooked turkey
1 cup sour cream
1 1/2 cups shredded Cheddar cheese (6 oz)
2 cans (4.5 oz each) Old El Paso™ chopped green chiles, undrained
1 package (11.5 oz) Old El Paso™ flour tortillas (8-inch; 8 tortillas)
1 cup shredded pepper Jack cheese (4 oz)

Steps:

  • Heat oven to 350°F. Lightly spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 12-inch skillet, heat oil over medium-high heat. Add onion and garlic; cook about 1 minute, stirring frequently, until onion is tender. Stir in remaining sauce ingredients. Heat to boiling. Reduce heat to low; cook uncovered 15 minutes, stirring occasionally.
  • In medium bowl, mix all enchilada ingredients except tortillas and pepper Jack cheese. Spread about 1/2 cup turkey mixture over each tortilla; top with 2 tablespoons sauce. Roll up tortillas; arrange seam sides down in baking dish. Pour remaining sauce over tortillas. Top with pepper Jack cheese.
  • Spray sheet of foil with cooking spray; place sprayed side down over baking dish. Bake 30 to 45 minutes or until thoroughly heated.

2 poblano chile peppers
2 tablespoons butter
1 tablespoon olive oil
1 pound ground turkey (80/20 blend)
2 cups panko breadcrumbs
3/4 cup finely grated Parmigiano-Reggiano
1/4 cup olive oil
1/2 cup diced onion
2 teaspoons minced fresh garlic
3 tablespoons all-purpose flour
1 tablespoon cumin
1 tablespoon onion powder
1 teaspoon paprika
Kosher salt and fresh cracked black pepper

1 cup low-sodium chicken stock
1 1/2 cups heavy cream
1 cup frozen corn, thawed
12 ounces penne rigate
1 tablespoon minced garlic
1 lime, zested
2 cups creme fraiche
4 ripe Roma tomatoes
1/4 bunch fresh flat-leaf parsley

Steps:

  • Begin by charring the poblano chile peppers. Using tongs, place the peppers directly over an open flame on the stove top. Char all over, about 2 minutes per side, and then place in a bowl covered tightly with plastic wrap so they sweat. Leave to sit for 5 minutes, and then use a paper towel to remove the charred outer layer. Discard the stem and seeds, and then dice the peppers.
  • Set a large Dutch oven over high heat and add the butter and olive oil. Add the turkey, onions and garlic and cook, breaking up into small pieces, until lightly browned, 6 to 7 minutes. Add the flour and season with the cumin, onion powder, paprika and some salt and pepper. The flour will form a roux with the fat in the pan. Cook for 2 minutes while stirring, and then add the chicken stock and bring to a simmer. Add the heavy cream and bring back to a boil. Reduce the heat to medium and fold in diced chile peppers and corn. Simmer until the sauce is thick enough to coat the back of a spoon, stirring occasionally, 15 to 20 minutes.
  • Preheat the oven to 350 degrees F. Cook the pasta in a pot of boiling, salted water until al dente, about 12 minutes.
  • Fold the pasta into the turkey sauce and season with salt and pepper, stirring until thoroughly combined. Transfer to a 9-by-13-inch baking dish.
  • In a large mixing bowl, prepare the topping by combining the panko, Parmigiano-Reggiano, olive oil and garlic. Season with salt and pepper and stir to combine everything well. Sprinkle the breadcrumbs evenly on top of the pasta. Place the whole dish on a sheet tray (to catch any spill over) and place in the oven to bake until the breadcrumbs are golden and the sauce is bubbly around the edges, about 35 minutes.
  • For garnishes, stir the lime zest together with creme fraiche. Dice the tomatoes and roughly chop the parsley.

2 cups shredded Mexican cheese blend, divided

Steps:

  • In a large saucepan, combine the first 10 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes. Remove from the heat. , Place 1/2 cup turkey mixture down the center of each tortilla; top each with 1 teaspoon enchilada sauce and 1 tablespoon cheese. Roll up and place seam side down in a greased 13x9-in. baking dish. Pour remaining enchilada sauce over top; sprinkle with remaining cheese. , Cover and bake at 350° for 30 minutes. Uncover; bake 8-10 minutes longer or until bubbly.
