Picked this up some years back at the state fair from the California Sweet Potato Council. This dish is very rich and filling and was the only way DS would eat sweet potatoes when he was young.

1 1/2 lbs fresh sweet potatoes (yam variety)
1/4 cup butter or 1/4 cup margarine
1/2 cup onion, chopped
1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon basil, crushed
1/4 teaspoon dry mustard
1/8 teaspoon pepper
1 1/2 cups milk
1 1/2 cups swiss cheese, grated
3/4 lb ham, cooked, cubed

Steps:

  • Wash sweet potatoes. Cook unpeeled sweet potatoes, covered, in small amount of boiling salt water untill tender, about 20 to 30 minutes. Cool. Peel and slice 1/4 inch thick; set aside.
  • Melt butter in medium saucepan. Add onion, cook until tender. Remove from heat; stir in flour, salt, basil, mustard and pepper. Cook over low heat until bubbly, 2 to 3 minutes. Remove from heat; stir in milk all at once. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil and stir one minute. Remove from heat. Stir in 3/4 cup of cheese and the ham.
  • Pour half of mixture into greased 2 quart casserole. Arrange half of sweet potaotoes on top. Repeat layers. Bake at 350*F, 25 minutes. Sprinkle with remaining cheese and bake 3 to 4 minutes longer, or until cheese has melted.

6 small potatoes, peeled and cubed
3 tablespoons butter
2 cups cubed fully cooked ham
1 small onion, finely chopped
¼ cup butter
3 tablespoons all-purpose flour
1 ½ cups milk
salt and ground black pepper to taste
1 (8 ounce) package shredded Cheddar cheese
¼ cup bread crumbs

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 1 1/2-quart baking dish.
  • Melt 3 tablespoons butter in a skillet over medium heat. Stir in the ham and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Stir potatoes into ham mixture; transfer to the prepared baking dish.
  • Melt 1/4 cup butter in a saucepan over medium heat. Stir flour into melted butter until smooth.
  • Gradually whisk milk into flour mixture; season with salt and black pepper. Continue cooking and stirring until thickened, about 2 minutes.
  • Reduce heat to medium-low and stir Cheddar cheese into the white sauce until melted.
  • Pour sauce over ham and potatoes.

2 tablespoons vegetable oil
1 cup chopped onions
1 (6 ounce) can mushrooms, drained
1 cup diced cooked ham
1 cup diced Swiss cheese
1 teaspoon salt
½ teaspoon ground black pepper
2 eggs
¼ cup milk
¼ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add egg noodles and cook for 8 to 10 minutes or until al dente; drain.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Toss drained noodles with 2 teaspoons of the oil. Heat remaining oil in a skillet and saute onion over medium heat until soft. Combine noodles, onion, mushrooms, ham, Swiss cheese, salt and pepper. Transfer to a greased 3 quart casserole dish. In a bowl mix together egg and milk; pour over noodle mixture. Steps:

  • Heat oven to 350°F. Lightly spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In medium saucepan, heat water, whipping cream, butter, salt and pepper to boiling. Gradually stir in grits; reduce heat. Cover; simmer 5 to 7 minutes, stirring occasionally. Add 1/2 cup of the cheese and the garlic, stirring until cheese is melted. Cool 10 to 15 minutes. Stir in 2 of the eggs; pour into baking dish. Bake 20 minutes; remove from oven. 1 teaspoon dried basil

3 tablespoons butter
3 ½ tablespoons flour
1 small onion
¾ cup milk
1 cup low sodium chicken broth
salt to taste
½ teaspoon pepper
1 cup sharp cheddar (shredded)
3 pounds potatoes (peeled and diced)
2 cups ham (diced)
2 cups frozen peas (defrosted)
1 cup sharp cheddar cheese (or to taste)

Steps:

  • Preheat oven to 400°F.
  • Over medium heat, melt butter in a saucepan. Add onion and stir until softened, about 4 minutes. Add flour and cook an additional 2 while stirring.
  • Pour in pour in chicken broth and milk all at once. Whisk over medium heat until thick and bubbly. Remove from heat and stir in cheese.
  • Place ½ of the potatoes in a 9×13 pan. Sprinkle with ham and peas. Top with remaining potatoes. Pour sauce over top.
  • Cover with foil and bake 45-50 minutes or until potatoes are fork tender. Remove foil (carefully, it will steam), top with remaining cheese and bake an additional 15-20 minutes or until potatoes are soft and cheese is lightly browned.

2 Cups milk
2 Tablespoons Cornstarch
1 1/2 Tablespoons Dijon mustard
1/4 Teaspoon Pepper
1/2 Cup Swiss Cheese shredded
1/2 Pound Ham sliced

Steps:

  • Heat Oven to 375?. Poke potatoes with knife. Bake for aprox. 1 hour or until done. Mix milk and cornstarch in nonstick saucepan. Cook on medium, stirring until mixture thickens. Stir in mustard, pepper and cheese until cheese is melted. Mix in ham. Heat mixture. Cut the potatoes in half lengthwise, fluff potatoes in shell and put sauce over potatoes. You could also use this sauce over mashed potatoes to try something different and faster!
