EVELYN'S ROLLED SUGAR COOKIES
I have been making these since the 70's. The recipe was passed on to me by my mother-in-law and I have yet to find a better tasting sugar cookie! I sprinkle them with colored sugar for the holidays.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Cream together the shortening and sugar. Mix in eggs and beat well.
- In a separate bowl, sift together the flour, baking powder, baking soda and salt. Add flour mixture to shortening mixture in thirds. After each third, add 1/4 cup of the milk and mix well. Dough will be soft.
- Put dough on well-floured surface and knead in just enough additional flour so it can be rolled. Cut with your favorite cookie cutter.
- Transfer to parchment-lined baking sheet and bake for 10 minutes. I rotate my sheets, baking each sheet 5 minutes on middle, then 5 minutes on top rack.

Steps:
- In large bowl, mix 1 cup sugar, the butter, 3 tablespoons milk, vanilla and egg until well-blended.
- Stir in flour, baking powder and salt until mixed.
- Cover with plastic wrap; refrigerate 1 hour for easier handling.
- Heat oven to 400*.
- On lightly floured surface, roll out 1/3 of the dough at a time to 1/8-inch thickness. Keep remaining dough refrigerated.
- Cut with floured 2-inch cookie cutter.
- Place 1 inch apart on ungreased cookie sheets.
- If not using glaze, sprinkle with sugar.
- Bake 5 to 9 minutes or until edges are light golden brown.
- Immediately remove from cookie sheets to cooling racks.
- Cool completely about 15 minutes.
- To prepare glaze: In small bowl, mix powdered sugar and enough milk with spoon until smooth and spreadable.
- Spread glaze over cookies.
- Sprinkle with colored sugar.

- Preheat oven to 350 degrees.
- Cream together the shortening, sugar and brown sugar. Beat until light and fluffy and add the milk, eggs and vanilla. Beat until creamy.
- Add the baking soda, cream of tartar and salt.
- Slowly add the flour until you have a soft dough (it should take about 4 1/2 cups flour, but might take more depending on humidity).
- Wrap with plastic wrap and chill for 1 hour.
- On a lightly floured surface (this is why the dough should be soft because it will absorb a lot of flour when rolled) roll dough out to 1/4 inch thick.
- Cut and bake on ungreased cookie sheet for 5-6 minutes (cookies will not look done).
- Ice with "Versatile Icing" and let harden.

- Preheat the oven to 400 degrees.
- Combine the sugar, flour, baking powder, salt, and cinnamon.
- Add in the egg, vanilla, and butter and mix until it forms dough.
- Roll out dough on a floured surface.

MY FAVORITE ROLLED SUGAR COOKIES
I found this recipe on a bag of Wal-mart sugar some time ago, and it was so simple, I had to try it. I have tried a zillion sugar cookie recipes, trying to get the soft cookie I like best. I think I have found the perfect sugar cookie. Please note that your cookie yield will vary, depending on what size cookie cutter you used. When I use a variety of sized Christmas cookie cutters, I normally get about 2-1/2 dozen.

Steps:
- In a large bowl, cream together sugar, butter, milk, vanilla and egg.
- Lightly spoon flour into a measuring cup, level off. Add the flour, baking powder and salt to creamed mix, mix well.
- Cover and refrigerate for 1 hour for easier handling.
- Preheat oven to 400 degrees.
- On lightly floured surface, roll out 1/3 of the dough at a time to approximately 1/8 inch thickness (I don't whip out a measuring tape at this point--just an estimation--eyeball to the thickness that you prefer.).
- Cut with desired cookie cutters.
- Place 1 inch apart on ungreased cookie sheets. Decorate as desired.
- Bake at 400 degrees 5-9 minutes until edges are very light golden. (In my oven, this takes about 6 minutes.) Be careful not to overbake (if you like soft cookies, as I do.).
- Immediately remove from cookie sheets to cooling racks.
